1 package (8 ounces) cream cheese, softened
1/4 cup maple syrup, divided
2 tablespoons blueberry preserves
16 slices French bread (1/2 inch thick)
2 large eggs
1 cup 2% milk
2 tablespoons all-purpose flour
2 teaspoons vanilla extract
1/4 teaspoon salt
SAUCE:
1 cup sugar
1 cup cold water
2 tablespoons cornstarch
1 cup fresh or frozen blueberries
1 tablespoon butter

Steps:

  • Beat the cream cheese, 2 tablespoons syrup and preserves in a small bowl. Spread over 8 slices of bread; top with remaining bread., Whisk the eggs, milk, flour, vanilla, salt and remaining syrup in a shallow bowl. Dip both sides of sandwiches into egg mixture. Cook on a greased hot griddle until golden brown on both sides., Combine the sugar, water and cornstarch until smooth in a small saucepan. Bring to a boil over medium heat; cook and stir for 3 minutes or until thickened. Stir in blueberries; bring to a boil. Reduce heat and simmer for 8-10 minutes or until berries burst. Remove from heat; stir in butter. Serve with French toast.

12 slices day-old bread, cut into 1-inch cubes
2 (8 ounce) packages cream cheese, cut into 1 inch cubes
1 cup fresh blueberries
12 eggs, beaten
2 cups milk
1 teaspoon vanilla extract
⅓ cup maple syrup
1 cup white sugar
2 tablespoons cornstarch
1 cup water
1 cup fresh blueberries
1 tablespoon butter

Steps:

  • Lightly grease a 9x13 inch baking dish. Arrange half the bread cubes in the dish, and top with cream cheese cubes. Sprinkle 1 cup blueberries over the cream cheese, and top with remaining bread cubes.
  • In a large bowl, mix the eggs, milk, vanilla extract, and syrup. Pour over the bread cubes. Cover, and refrigerate overnight.
  • Remove the bread cube mixture from the refrigerator about 30 minutes before baking. Preheat the oven to 350 degrees F (175 degrees C).
  • Cover, and bake 30 minutes. Uncover, and continue baking 25 to 30 minutes, until center is firm and surface is lightly browned.
  • In a medium saucepan, mix the sugar, cornstarch, and water. Bring to a boil. Stirring constantly, cook 3 to 4 minutes. Mix in the remaining 1 cup blueberries. Reduce heat, and simmer 10 minutes, until the blueberries burst. Stir in the butter, and pour over the baked French toast

1 (8 ounce) package cream cheese, diced
1 cup blueberries

⅓ cup maple syrup

1 cup blueberries
1 tablespoon butter

Steps:

Simmer 8 to 10 minutes, or until the berries have burst. Stir in butter until melted. Serve the sauce over squares of french toast.

1 lemon, zested
3 (1-inch thick) slices (8 ounces) day-old challah or sourdough bread, cut into 1-inch cubes
2 cups (12 ounces) fresh or frozen, thawed, and drained blueberries
3 tablespoons granulated sugar

Steps:

  • Place an oven rack in the middle of the oven. Preheat the oven to 350 degrees F. Butter a 9 by 13-inch baking dish. Set aside.
  • In a large bowl, beat the eggs until frothy. Add the milk, maple syrup, cinnamon, salt, and lemon zest. Add the bread cubes and mix until coated. Stir in the blueberries. Pour the mixture into the prepared baking dish.

4 oz cream cheese, softened
¼ cup sugar
1 teaspoon cinnamon
4 eggs
½ cup heavy cream
14 oz french bread, 1 loaf
1 cup blueberry
maple syrup, to dip

Steps:

  • In a bowl, combine softened cream cheese, sugar, and cinnamon.
  • Add eggs and heavy cream and whisk until well combined. Set aside.
  • Preheat oven to 400˚F (200˚C).
  • Cut a rectangle along the top of the loaf of french bread and pull out the part you cut along with the soft inside of the loaf. Set the "bread boat" aside.
  • Tear apart the rectangle and soft inside of the bread that you removed into little bite-size pieces.
  • Gently, fold the bread pieces and blueberries into the egg mixture until all of the liquid is absorbed.
  • Place the "bread boat" on a baking sheet lined with parchment paper and pour in the bread and egg mixture.
  • Bake for 30-40 minutes or until the top is golden brown. If the top is browning too quickly, cover the top of the boat in foil for the remaining time.
  • Let cool before cutting into slices and serve with maple syrup.

6 large eggs
3 cups whole milk
1/3 cup sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon coarse salt
10 1/2-inch-thick slices brioche (from one 10-ounce loaf)
1 cup blueberries
Confectioners' sugar, for serving

Steps:

  • Butter a shallow 2-quart baking dish. In a large bowl, whisk together eggs milk, sugar, cinnamon, and salt. Dip brioche in egg mixture, then arrange in dish, overlapping slightly. Pour remaining egg mixture over brioche, cover with plastic wrap, and let stand 30 minutes or refrigerate up to overnight.

1 loaf French bread, sliced 1-inch thick (probably wont need the whole loaf)
6 large eggs
2 cups milk
1/2 teaspoon ground nutmeg
1 teaspoon vanilla
1 cup brown sugar, divided
1/4 cup butter (or stick margarine)
1 cup chopped pecans (optional)
2 cups blueberries (fresh or frozen)

Steps:

  • Grease a 13 x 9 inch baking dish.
  • Arrange the bread in a single layer in the dish.
  • In a large bowl, beat the eggs. Add in the milk, nutmeg, vanilla, and 3/4 cup of the brown sugar. Stir well to mix.
  • Pour egg mixture evenly over the bread. Cover and let sit 8 hours or overnight.
  • When ready to bake, preheat the oven to 400 degrees.
