This vegetable and fruit smoothie recipe proves that snacking nutritiously can be delicious, too! In addition to the fruit that gets naming rights in this healthy smoothie, yogurt, spinach, and cherries are also in the mix.

2 cup fresh baby spinach
1 cup frozen blueberries
1 banana
0.5 cup vanilla yogurt
0.25 cup chopped fresh pineapple
0.25 cup frozen dark sweet cherries
0.25 cup orange juice
Chopped pineapple and/or fresh blueberries (optional)

Steps:

  • In a blender combine all ingredients except the optional pineapple and/or blueberry topper. Cover and blend until nearly smooth, stopping to scrape down sides of container as necessary. Divide between two glasses. Top with pineapple and/or blueberries. Makes 2 (1-cup) servings.

I whipped this up on the spur of the moment, having no idea it would taste this good! I used fresh blueberries and canned pineapple. I am sure it would taste just as good using frozen blueberries and fresh pineapple. The first time I made this smoothie, the intense color about knocked my socks off! My husband and I love this smoothie and I hope you will enjoy it too!
