Steps:

  • Pre-heat the oven to gas 3. Line 2 20cm sandwich tins.
  • Cream margarine and sugar together. Then add an egg at a time and beat in between in order to get as much air into the mixture. Add the vanilla essence and fold in the flour. Add milk to slacken the mixture so that it is a good dropping consistency. Divide between the two tins and bake for 35 minutes
  • While cakes are baking, make the blueberry compote by putting the blueberries and the granulated sugar in a small pan on a low heat. Stir until the sugar has melted and then boil until the sauce is thickened. Take off the heat and cool.
  • To make the frosting, soften the butter with the lime peel. Slowly add the icing sugar and lime juice and beat constantly until smooth.
  • Take out the cake and cool on wire racks. When cold, assemble by putting the compote on the bottom layer, adding the top and then covering the top with the frosting.

⅓ cup white sugar
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon baking soda
½ cup unsalted butter, chilled
½ cup sour cream
1 large egg
1 tablespoon lime zest
3 ounces dried blueberries
1 tablespoon white sugar

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Whisk flour, 1/3 cup sugar, baking powder, salt, and baking soda together in a large bowl. Grate butter into flour mixture; toss and mix until mixture looks like coarse meal.
  • Whisk sour cream, egg, and lime zest together in a small bowl; add to flour mixture along with blueberries. Mix with a fork to form a dough. Turn dough out onto the prepared baking sheet. Pat into a 7-inch round. Cut into 8 wedge-shaped pieces and separate scones. Sprinkle with 1 tablespoon sugar.

200g caster sugar
200g softened butter
4 eggs, beaten
200g self-raising flour
1 tsp baking powder
2 tbsp milk
100g butter, softened
140g icing sugar, sifted
drop vanilla extract (optional)
half a 340g jar good-quality strawberry jam
icing sugar, to decorate

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Butter two 20cm sandwich tins and line with non-stick baking paper.
  • In a large bowl, beat 200g caster sugar, 200g softened butter, 4 beaten eggs, 200g self-raising flour, 1 tsp baking powder and 2 tbsp milk together until you have a smooth, soft batter.
  • Divide the mixture between the tins, smooth the surface with a spatula or the back of a spoon.
  • Bake for about 20 mins until golden and the cake springs back when pressed.
  • Turn onto a cooling rack and leave to cool completely.
  • To make the filling, beat the 100g softened butter until smooth and creamy, then gradually beat in 140g sifted icing sugar and a drop of vanilla extract (if you're using it).
  • Spread the buttercream over the bottom of one of the sponges. Top it with 170g strawberry jam and sandwich the second sponge on top.
  • Dust with a little icing sugar before serving. Keep in an airtight container and eat within 2 days.

  • In a large mixing bowl with a wooden spoon or electric hand mixer or using your stand mixer cream the butter and sugar together until they are very light and fluffy.
  • Add in the lime zest and juice and cream everything together. Then add the eggs one at a time mixing well between each addition.
  • If the mixture splits don't worry, just take a teaspoon of your flour and add it in and it should come back together. Sometimes this happens but don't panic your cake is not ruined. A little flour will sort it out.

  • To prevent the cake from sticking you can use non stick pans, then use a paper towel to wipe sides and bottom of pans with soft butter. Dust each pan lightly with flour, OR fold a large piece of parchment paper in half twice. Use bottom of cake pan and pencil to trace a circle on parchment, then cut folded paper so you end up with two circles. Place parchment circles into the bottom of pans and spray with organic non stick spray. This is my favorite method. Set aside
  • Place softened butter, lime juice, zest, sea salt and 4 cups powdered sugar into a bowl and mix. If frosting is not quite thick enough add more sugar (up to a cup, I usually end up using almost 5 cups). If it's too thick add just a little more lime juice. When frosting is desired consistency, frost cooled cake.

  • Preheat the oven to 350F. Grease and line two 8in sandwich tins: use a piece of baking or silicone paper to rub a little baking spread or butter around the inside of the tins until the sides and base are lightly coated.
  • Break the eggs into a large mixing bowl, add the sugar, flour, baking powder and soft butter. Mix everything together until well combined. Be careful not to over-mix – as soon as everything is blended you should stop.
  • Divide the mixture evenly between the tins. Use a spatula to remove all of the mixture from the bowl and gently smooth the surface of the cakes.
  • Place the tins on the middle shelf of the oven and bake for 25 minutes. Don’t be tempted to open the door while they’re cooking, but after 20 minutes do look through the door to check them.
  • While the cakes are cooking, make the jam. Put the raspberries in a small deep-sided saucepan and crush them with a masher. Add the sugar and bring to the boil over a low heat until the sugar has melted.
  • The cakes are done when they’re golden-brown and coming away from the edge of the tins. Press them gently to check – they should be springy to the touch.
  • To take your cakes out of the tins without leaving a wire rack mark on the top, put the clean tea towel over the tin, put your hand onto the tea towel and turn the tin upside-down.
  • For the buttercream, beat the butter in a large bowl until soft. Add half of the icing sugar and beat until smooth. Add the remaining icing sugar and one tablespoon of the milk and beat the mixture until creamy and smooth.
  • To assemble, choose the sponge with the best top, then put the other cake top-down on to a serving plate. Spread with the jam then pipe the buttercream on top of the jam.

For a neater, more uniform look, you could pipe the buttercream using a large disposable piping bag and a set of nozzles. A 10oz/280g mixture makes a lovely deep cake in two 8″/20cm cake tins. Using two 9″/23cm cake tins for this amount of mixture still makes a decent depth cake but it will cut into more slices.
