This Cajun boiled peanuts recipe brings just the right amount of spice and lets you adjust it to your preference. It's a wonderful spicy southern snack or appetizer.

2 pounds green raw peanuts (in the shell)
4 ounces concentrated shrimp and crab boil
½ cup Cajun or Creole Seasoning Blend
2 tablespoons salt
4 habanero peppers (sliced in half (optional - use can omit or use other peppers to your own heat level preference))
Hot sauce of choice (a few tablespoons will do, but add as much as you'd like! - Tabasco or Crystal are PERFECT for this recipe)
Water to cover

Steps:

  • Add the peanuts to a large pot. Pour in enough water to cover the peanuts. It's usually a couple gallons of water.
  • Stir in the shrimp and crab boil and Cajun seasonings (or Creole seasonings) with salt.
  • Add the habanero peppers, if using them. They add a very good level of heat to the whole batch.
  • Dash in your hot sauce and give it a good stir.
  • Bring the pot to a boil, then reduce heat. Partially cover the pot with a lid and simmer for 5 hours. Check it periodically to push the peanuts under the seasoned water.
  • Cool. You can eat the peanuts now if you'd like, but to develop more flavor, cover and set the pot into the refrigerator.
  • Refrigerate overnight to let the flavors develop. The peanuts will become much more infused with the seasonings as they steep in the liquid.
  • Reheat on the stove top and enjoy.

  • Taste the peanuts, if they are not salty enough for your taste add more salt. If you would like the peanuts to be softer, return the water to boil and cook until they reach the consistency you desire.

Fresh shell-on peanuts are available only at harvest time and are hard to find, but unroasted shell-on peanuts work just as well and can be found in many supermarkets and online.

4 cups fresh (green) or raw (unroasted) shell-on peanuts (about 11.5 oz.)
4 tsp. kosher salt
2 Tbsp. coriander seeds, divided
1 Tbsp. flaky sea salt
1½ tsp. red chile powder, preferably Kashmiri

Steps:

  • Combine peanuts, kosher salt, and 1 Tbsp. coriander seeds in a medium saucepan. Pour in water to cover and stir to combine. Let peanuts sit in brine, stirring here and there, 3 hours.
  • Bring peanut mixture to a boil over medium-high heat. Reduce heat, partially cover pan, and simmer, adding more water as needed to keep peanuts covered, until peanuts are tender with no crunch left at all, 2 hours if fresh, 4-4½ hours if raw. Drain; let cool.
  • Meanwhile, lightly crush remaining 1 Tbsp. coriander seeds with a mortar and pestle (or gather on a cutting board and crush with a skillet). Mix in a small bowl with sea salt and chile powder.
  • Transfer peanuts to a bowl and toss with about three-fourths of spice mixture. Serve peanuts with remaining spice mixture alongside for sprinkling over.

Steps:

  • Whisk vinegar, water, and salt in a large bowl. Add peanuts and stir to coat. Transfer mixture to a gallon-sized plastic zip-top bag and let sit for 8 hours or overnight.
  • Pour bag of peanuts and liquid into a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 120 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 20 minutes. Unlock and remove the lid.

1/4 cup Hawaiian sea salt
6 whole pieces of star anise
4 inch piece of ginger, thinly sliced
1 tablespoon black peppercorns
10 cups water

Steps:

  • Rinse the raw peanuts and pick out any debris. Place the raw peanuts in a large pot.
  • Top with the sea salt, star anise, ginger, and black peppercorns. Cover with water.
  • If cooking with the Instant Pot/pressure cooker, use the manual setting, and cook on high pressure for 45 minutes.

4 lbs raw peanuts, still inside the shell
10 ounces salt

Steps:

  • Rinse all dirt off of peanuts inside of sink and drain.
  • Place peanuts inside a large pot that leaves about 4 to 6 inches of room at the top of the pot.
  • Cover peanuts with water leaving until the peanuts float to within 2 inches from the top of the pot.
  • Add salt. A good hint is that all the salt you add will not be directly absorbed by the peanuts. So you can be generous.
  • Bring to a rigorous boil and continue until soft. The time to boil depends on the peanuts and I think it is best done outside.
  • Allow peanuts to absorb brine untill desired salty taste. About 1 hour +or -.

2 lbs. of Raw Peanuts, in the shell.
1/4 cup of Morton Table Salt, or similar.

Steps:

  • Place the raw peanuts in a sink of water and swirl them around to remove any dust and dirt.
  • Place in a colander, rinse again and let drain.
  • Fill a large stockpot about 3/4's full of water.
  • Add the washed raw peanuts.
  • Place stockpot on stove and turn the heat to Medium-High, let come to a rolling boil.
  • Cover the pot, reduce the heat to Medium and let boil for about 3 hours.
  • Add the salt, stir. You can also add hot water if needed at this point.
  • Taste the peanuts about every 30 minutes from here on until cooked to desired doneness.
  • Remove from heat and let cool.
  • Serve warm and enjoy.
