Steps:
- Add the peanuts to a large pot. Pour in enough water to cover the peanuts. It's usually a couple gallons of water.
- Stir in the shrimp and crab boil and Cajun seasonings (or Creole seasonings) with salt.
- Add the habanero peppers, if using them. They add a very good level of heat to the whole batch.
- Dash in your hot sauce and give it a good stir.
- Bring the pot to a boil, then reduce heat. Partially cover the pot with a lid and simmer for 5 hours. Check it periodically to push the peanuts under the seasoned water.
- Cool. You can eat the peanuts now if you'd like, but to develop more flavor, cover and set the pot into the refrigerator.
- Refrigerate overnight to let the flavors develop. The peanuts will become much more infused with the seasonings as they steep in the liquid.
- Reheat on the stove top and enjoy.

BOILED PEANUTS WITH CHILE SALT
Fresh shell-on peanuts are available only at harvest time and are hard to find, but unroasted shell-on peanuts work just as well and can be found in many supermarkets and online.

INSTANT POT® SALT AND VINEGAR BOILED PEANUTS
I've made Cajun boiled peanuts many times over the years but was wanting to do something different this time. While trying to come up with something, I looked over and saw a bag of salt and vinegar potato chips and thought... why not? Making boiled peanuts in the Instant Pot® is as easy as 1-2-3. Pour them in and walk away. No more babysitting the pot of boiling water on the stove.

SALTED BOILED PEANUTS
This is a southern delicacy. Try them hot or cold. After they are done break off the shell they are soooo juicy and better than dry roasted. IMHO They also freeze well and can be heated up in the microwave.

Steps:
- Rinse all dirt off of peanuts inside of sink and drain.
- Place peanuts inside a large pot that leaves about 4 to 6 inches of room at the top of the pot.
- Cover peanuts with water leaving until the peanuts float to within 2 inches from the top of the pot.
- Add salt. A good hint is that all the salt you add will not be directly absorbed by the peanuts. So you can be generous.
- Bring to a rigorous boil and continue until soft. The time to boil depends on the peanuts and I think it is best done outside.
- Allow peanuts to absorb brine untill desired salty taste. About 1 hour +or -.

- Dissolve 1/2 cup salt in 2 gallons water in a 3-gallon stockpot; add peanuts. (Weigh down peanuts, if desired, with a large plate or lid to ensure they're fully submerged.) Soak 8 hours or overnight.*
- Drain water; refill pot with 2 gallons water and remaining 1 cup salt. Bring to a boil, reduce heat to medium-low, and simmer, covered, 5 to 8 hours or until peanuts are tender, adding water as needed to keep peanuts covered; stir occasionally. (South Carolina-style peanuts are very soft, but some cooks prefer them al dente.) When the peanuts have boiled 3 hours, check for texture and saltiness. If the peanuts are not salty enough, add salt in 1/4-cup increments, turn off heat, and let soak 1 hour. Check peanuts for seasoning every hour.
- Drain and eat immediately or store (in the shell) in a sealed container in the refrigerator or freezer. Boiled peanuts will keep 7 days in the refrigerator, several months in the freezer.

- Soak the peanuts in water for 30 minutes to loosen any dirt still clinging to the shells. Wash them thoroughly and drain. Repeat as necessary until the soaking water is clear.
- Using your thumb and index finger, crack open one end of each peanut (the pointier side is easier to crack open) by lightly pressing it. This is so the brine can get inside the peanut shell.
- Put the peanuts in a medium pot along with 6 cups water so the peanuts are totally submerged. Add 1 tablespoon sea salt (or to taste), 1 tablespoon Sichuan peppercorns, 1 small cinnamon stick, 3 bay leaves, and 1-2 star anise pods (use 1 for a lighter flavor or 2 for stronger flavor).
- Bring the peanuts to a boil, cover, lower the heat, and simmer for 45 minutes to 1 hour. This will produce a slightly al dente peanut, which is the way we like it. Increase the time if you like your peanuts softer and periodically taste test test to check the consistency.
