THE BEST BUTTERMILK PANCAKES
We're transporting you to the old-fashioned diner for a plate of fluffy buttermilk pancakes. Our recipe has both baking powder for an airy and light interior and baking soda for that even golden-brown exterior. We love the tang of buttermilk and the richness of butter for an even cakier stack. This recipe is easy enough for a fast breakfast with the kids or doubled for a weekend brunch with friends.

Steps:
- Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl. Whisk the eggs, buttermilk, vanilla and melted butter in a medium bowl until incorporated. Whisk the egg mixture into the flour mixture until just combined (it's OK if there are a few lumps).
- Heat a griddle or large nonstick skillet over medium heat; lightly brush with butter. Pour 1/2 cup batter onto the griddle for each pancake and cook until bubbles form on top and the bottom is lightly browned, about 3 minutes. (If the pancakes are browning too quickly, reduce the heat to medium-low.) Flip and continue cooking until golden on the other side, about 1 more minute. Transfer to a plate. Repeat with the remaining batter, brushing the pan with more butter as necessary. Serve with butter and syrup.
BOILED FRUIT CAKE
This is an Northern Ireland recipe given to me by my Mum many years ago!! This cake is always much tastier the following day! Enjoy!

Steps:
- Preheat the oven to 300 degrees F (150 degrees C). Grease a 9x5 inch loaf pan, and line with parchment paper or aluminum foil.
- Combine the water, mixed fruit, sugar and butter in a saucepan over medium heat. Bring to a boil, stirring occasionally, and boil gently for about 10 minutes. Sift the flour, baking soda and mixed spice into a large bowl. Pour in the boiled mixture, and stir until well blended. Mix in the eggs. Pour into the greased loaf pan.
- Bake for 90 minutes in the preheated oven, until a skewer or knife inserted into the top comes out clean. Cool cake in the pan for at least 10 minutes before removing.

CAKEY BUTTERMILK PANCAKES

- In a medium bowl, whisk together all ingredients except 2 tablespoons butter until evenly combined and moistened thoroughly (some small lumps will remain). Set mixture aside to rest while griddle heats or cover and store in the refrigerator to rest up to 12 hours before using. (If batter rests, stir briefly before using.)
- Heat a large seasoned cast iron skillet, frying pan, or griddle over medium heat. To check that the pan's properly heated, sprinkle a few drops of water on pan or griddle and water will "dance" around before evaporating.
- Melt 1 tablespoon butter in pan. When it foams, ladle 1/4 cup batter for each pancake and cook until bubbles cover the top, about 3 minutes. Flip and cook until golden brown, another 1 minute. Repeat with remaining batter. Serve immediately topped with Blueberry Maple Syrup.
- Blueberry Maple Syrup:
- Combine 1 1/2 cups berries and syrup in a small saucepan over medium heat. Cook until berries are slightly softened, about 2 minutes, then mash using the back of a spoon. Simmer until mixture foams up a bit, about 1 to 2 minutes more.
- Remove from heat, strain to remove blueberry solids, stir in remaining 1 1/2 cups berries, and use to top pancakes, waffles, or French toast.

3-INGREDIENT COOKIE BUTTER CAKES RECIPE BY TASTY

- Preheat oven to 350˚F (175˚C)
- Empty half of Cookie Butter into a microwave safe bowl. Microwave for 50 seconds, stirring halfway. Set aside to cool while you prepare the egg mixture.
- In a large mixing bowl add sugar and 5 eggs. Beat with an electric mixer on high for 6 to 8 minutes, until tripled in size.
- With a rubber spoon, fold some of the egg mixture into the slightly cooled cookie butter. Gradually fold the cookie butter mixture back into the remaining egg mixture (this will help prevent the eggs from deflating) until fully incorporated.
- Pour batter into a greased 12-cup muffin tin.
- Bake in preheated oven for 15 minutes.
- Remove from oven, loosen the edges of each cake with a knife - invert the pan onto a wire rack. Melt additional cookie butter to drizzle on top.

BOILED FRUIT CAKE

- Grease and line a 2lb bread tin.
- In a saucepan add the fruit, sugar, milk and butter. Bring to a gentle boil stirring all the time.
- Allow mix to cool properly (can take upwards of an hour).
- Once cool, add flour and eggs to the mix and stir thoroughly.
- Transfer mix to the tin and place in the centre of a pre-heated oven (Gas 5 / 190 C) for 1hr

- Combine butter, milk, sugar, dates and spices in a pan, stir over heat until butter is melted, bring to boil, remove from heat, stir in soda, stand 5 minutes.
- Stir in lightly beaten eggs and sifted flour in two lots, mix well.

- Turn the oven to 180'C. Divide 24 cupcake cases between 2 deep 12-hole cupcake trays.
- Put the butter, vanilla essence and sugar in the small bowl of an electric mixer and beat on high speed until the mixture is pale and creamy.
- Break 1 egg into a small jug and add it to the butter mixture. Beat on high speed until the butter is mixed in. Do the same thing with the other egg.
- Then, sift half the flour through a sieve into the butter mixture. Add half the milk and stir until both the flour and the milk are mixed in. The, do the same thing with the rest of the flour and the milk.
- Using a tablespoon, put the cake mixture into the cupcake cases. Put the trays into the oven and bake for about 15 minutes or until the cases are lightly browned. Then, once cooked, take the trays out of the oven and put them on a wire rack and cool for 15 minutes. When they are cold, take the cakes out of the trays.
- Vanilla Butter Frosting.
- Put the butter in a medium bowl and then sift half of the icing sugar through a sieve over it. Add half of the milk and all of the vanilla essence, then stir until the mixture is smooth. Do the same thing with the rest of the icing sugar and the milk. Divide the icing sugar among some small bowls and colour each with a few drops of the food colouring of your choice.
- Then, the best bit........ Cover the cakes with the vanilla frosting and decorate however you want!

- Boil sugar, shortening, raisins, salt, and water (do not boil dates). Add dry ingredients, dates and walnuts to the boiled mixture. Bake at 325* in (2) 8"x8"x2" pans or in (1) 13"x9"x2" pan for 60-75 minutes. Allow to cool and divide into 4 "loaves". Wrap well and store. Serve sliced and plain or with hard sauce. This cake will stay moist for many months, but keeps best when moistened with rum or brandy.
