Sts. Peter and John are two big parties we have in Brazil on July, especially in the country side. We commemorate by gathering by large bonfires, eating popcorn, cakes, sweet potatoes (quite different from Americans'), among other things, singing and dancing. One tradition is that girls of marrying age will learn who they will marry by following certain procedures the night before St. Peter's Feast (who is a matchmaker Saint in Brazil). Some frustrated girls go so far as to hang the saint's image upside-down inside a well, punishment for faling to find them a husband; he stays there until he performs his duty... Another tradition is to pack a small token and put it in the cake batter before baking; the girl who gets it is the next one to marry. Folclore apart, I love this cake and tried it in the US successfully.

4 tablespoons butter, melted
1 tablespoon fresh lime juice
1 tablespoon grated lime, skin
4 eggs
1 (14 ounce) can sweetened condensed milk
cinnamon
2 cups fine cornmeal
1 cup parmesan cheese, grated
1 cup all-purpose flour
1 cup sugar
2 tablespoons scant baking powder
1 cup guava paste, cut in small cubes (optional)

Steps:

  • Siftt flours and baking powder. MIx in all the other ingredients.
  • Put in 13" x 9" well greased pan and bake in 350 F oven for 25-30 minutes.
  • Cut in squares and serve it.

3 pkg dry active yeast
1/2 c lukewarm water
2 c milk
2 c sugar
1/2 c butter
1/2 c shortening
3/4 tsp salt
10 c flour
8 eggs
EGG WASH
1 egg
1 tsp water

Steps:

  • 1. Dissolve yeast in water and let rise to double in size.
  • 2. Mix together flour and salt in a large mixing bowl. In a small saucepan, melt butter and shortening in milk over medium heat and cool to lukewarm. Beat eggs and sugar together.
  • 3. Mix all ingredients together and knead until dough lifts neatly from bowl. Let rise, usually six to eight hours.
  • 4. Punch down, deflating the dough. Form individual breads and put in buttered and floured pans (most any shape or size will do). The dough should fill only half the pan. Let rise again until dough doubles in size, filling the pan.
  • 5. Brush top of dough with beaten egg.
  • 6. Bake at 325 degrees for 30 to 40 minutes (adjust longer cook time for larger loaves). The bread should be golden brown.

1 (.25 ounce) envelope active dry yeast
¼ cup warm water
6 cups all-purpose flour
1 cup white sugar
3 eggs
¼ cup melted butter, cooled
½ teaspoon salt
1 ¼ cups milk

Steps:

  • In a small bowl, dissolve yeast in warm water with a pinch of the sugar. Set aside to ferment, about 10 minutes.
  • Transfer the yeast mixture to a large bowl, and stir in the sugar, eggs, salt, flour, and milk until the dough comes together. Stir in the melted butter, then turn the dough out onto a floured surface, and knead for about 10 minutes, or until smooth and elastic. Cover dough with a cloth and set aside to rise until doubled in bulk, about 45 minutes.
  • Divide dough into about 15 to 20 pieces, and shape them into flat round cakes about 1/2 inch thick. Place a cloth on the table and dust it with flour. Arrange the cakes on the cloth, allowing space for rising. Allow them to set for 1 1/2 hours.
  • Place the cakes in a heavy ungreased skillet, and cook over low heat. Fry the cakes on each side until golden.

  • Prepare the Brigadeiro Filling and Frosting: Whisk the sweetened condensed milk, cocoa powder, and the corn starch in a medium bowl until combined. Pour into a no-stick wide saucepan. Then, mix in the half-and-half/heavy cream and butter. It is crucial that your pan has at least 2 inches of free space on top, allowing the mixture to expand as it cooks.
  • Cook the mixture over medium-low heat, stirring constantly with a wooden spoon while scraping the sides of the pan down. The mixture has to reach a thick, pudding-like consistency, or 195-200 degrees F. It takes about 20-25 minutes. Pour the hot brigadeiro mixture into a heat-proof bowl, cover with plastic wrap (plastic has to touch the top of the mixture, helping to avoid creating a “crust”), and let it cool at room temp for about 1-2 hours or until cool to the touch. Place in the fridge to chill for at least 1-2 hours.
  • Meanwhile, make the cake. Preheat oven to 350 degrees F. Spray or grease 3 (8-inch) round cake pans, line the bottom of each with parchment paper, spray/grease again and reserve. Mix in the dry ingredients: sifted flour, the cocoa powder, the baking powder, and the baking soda in a bowl. Set aside. In the bowl of an electric mixer (with a paddle attachment), whisk in the oil, butter, and sugar just until creamy, about 2 minutes.
  • Add the vanilla extract and the eggs, one at a time, beating on medium speed just until combined. Do not overmix! Scrape the sides of the bowl when needed. Next, using low speed, add the dry ingredient mixture to the egg-oil mixture in three parts, alternating with the milk. You must begin and end with flour (it will be 3 additions of flour and 2 of milk) until the cake batter is fully combined.
