- Ribs are done when the meat is tender and pulls apart easily.
- Remove the BBQ ribs from the sauce to serve. The sauce can be put in a small bowl to serve on the side.

Steps:
- Combine 1 teaspoon poultry seasoning, garlic salt, and 1/4 teaspoon black pepper. Sprinkle over the meaty side of the ribs, and rub into the meat. Let stand while making the dressing.
- Preheat the oven to 325 degrees F (165 degrees C).
- In a large bowl, combine bread cubes, celery, onion, garlic powder, salt, 1/4 teaspoon black pepper, and 2 teaspoons poultry seasoning. Mix well with your hands. Pour the broth evenly over the mixture to dampen all of the stuffing. Lay one rack of the ribs on the counter, meaty side down. Top with the stuffing; pile it up! Top with the second rack of ribs, meaty side up. Wrap and tie with thread or string in about 3 places to keep them together. Transfer to a rack in a roasting pan.
- Cover, and bake for 1 hour in preheated oven. Remove the cover, and bake an additional 45 minutes to 1 hour.

Steps:
- Preheat your oven to 350°F (175°C) and trim any excess fat cap (an even layer of thick fat) from your boneless country style pork ribs as needed.
- Season both sides of the country style ribs with salt and pepper, then arrange them on a couple of sheets of aluminum foil (large enough sheets to wrap around your pork ribs and seal securely). Place the foil with the ribs into a baking dish or onto a rimmed baking sheet.
- Create the 'pouch' around your seasoned country style ribs, pulling up the sides so it will hold in the liquid, then pour the apple cider vinegar over the ribs. Seal the aluminum foil securely.
- Bake at 350°F (175°C) for 2 hours or until your pork ribs are fork tender (small 4 ounce ribs may cook quickly, and large 10 ounce ribs may take a bit longer).
- Remove from the oven and open the aluminum foil carefully (vent the steam away from your body!). Transfer the pork ribs to a clean sheet of aluminum foil and drain the fat from your baking dish or sheet pan, then discard the used aluminum foil.
- Move the ribs back into your baking dish and coat all sides of the pork ribs generously with the BBQ sauce. Return to the oven and bake uncovered for an additional 20 minutes.
- Remove from the oven when done and allow the pork ribs to rest for 10 minutes before serving. Slather with more BBQ sauce if desired.

- Preheat oven to 300°F. Coat bottom of a sheet pan with olive oil. Stir together paprika, chile powder, garlic powder, onion powder, 3/4 teaspoon of the salt, and 1/2 teaspoon of the pepper in a small bowl until blended. Sprinkle all sides of ribs with spice mixture, and place ribs in a single layer in prepared sheet pan. Cover tightly with aluminum foil, and bake in preheated oven until ribs are tender and can be pulled apart with a fork, about 1 1/2 to 2 1/2 hours.
- Meanwhile, whisk together ketchup, molasses, vinegar, Worcestershire, chopped chiles, and remaining 1 teaspoon salt and 1/2 teaspoon pepper in a medium bowl. Pour half of sauce into a small bowl, and reserve for serving.
- Remove ribs from oven, and increase oven temperature to 450°F. Uncover ribs, and drain any accumulated juices from sheet pan. Baste ribs with remaining sauce. (Discard any unused basting sauce.) Bake ribs at 450°F, uncovered, until ribs are very tender and sauce has become sticky and slightly glazed on ribs, about 20 minutes. Serve ribs with reserved sauce.

- Rinse ribs, pat dry and season, rubbing spices in by hand. I use equal parts of the onion and garlic powder and pepper, and a little less seasoning salt.
- Mix together barbecue sauce, jam and tabasco and brush over ribs (unless cooking on the stove). Choose a cooking style, but cooking time will depend on size of ribs. Check doneness periodically.
- Grill: Barbecue on grill, turning and basting often until done. Cooking time will depend on your grill.

- In a medium size, bowl mix together the onion powder, salt, pepper, and paprika. Pat the pork ribs dry and rub the seasoning into the ribs. (I just rolled them and shook any excess) I had a total of 6 ribs and the amount of seasoning was about right.
- In a large skillet using 2 tablespoons of oil over medium high heat brown the ribs on both sides. Remove the ribs to a plate and set aside.
- Using the same skills and the other 2 tablespoons of cooking oil cook the onions until lightly browned and softened. Add the garlic powder, thyme, and cook until fragrant; about 1 minute.
