1/4 cup canola oil
3 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
Kosher salt and freshly ground black pepper

Steps:

  • Stir together the bourbon, oil, mustard, Worcestershire, sugar, 1 teaspoon salt and 1/2 teaspoon pepper in a medium bowl. Use in place of your favorite chicken marinade.

2 tablespoons unsalted butter
2 tablespoons extra virgin olive oil
1 medium onion, finely minced
5 garlic cloves, roughly chopped
1 pinch ground cumin
kosher salt
fresh ground black pepper
1 cup chopped of fresh mint
1 cup chopped fresh cilantro
1 orange, juice and zest of
2 limes, zest and juice , plus 1 lime for serving
3 tablespoons dark rum
olive oil flavored cooking spray
1 large onion, sliced into wheels
8 organic chicken pieces

Steps:

  • Melt 1 tablespoon of the butter with 1 tablespoon of the oil in a skillet over medium heat. Add the minced onion, garlic, cumin, salt, and pepper; reduce the heat to low, and sauté about 10 minutes, until the onion softens. Transfer mixture to a blender; add the mint and cilantro, zests, juices, and rum; and purée. Reserve 1/2 cup of the purée; use the rest to marinate the chicken for a few hours in the refrigerator.
  • Preheat oven to 400°F Melt the remaining butter with the remaining oil in a large ovenproof skillet over medium heat. Add the chicken pieces, working in batches if necessary, and brown both sides, about 10 minutes.
  • When nicely browned, transfer chicken pieces with tongs to a plate. In the same skillet, cook the sliced onion gently for a few minutes, until slightly softened. Return chicken to skillet, skin side down, salt and pepper liberally, and pour marinade over. Transfer skillet to oven; bake 30 minutes.
  • Using tongs, flip each piece over, return to oven, bake 30 minutes more, or until chicken-especially thighs, if you're using them-is fully cooked. Remove chicken; transfer to a serving platter. Pour reserved 1/2 cup purée into pan and mix it with a spatula. Pour this sauce over chicken. Serve with lime wedges and a small bowl of salt to pass around.

4 chicken breasts
1 teaspoon ground ginger
4 ounces soy sauce
2 tablespoons minced dried onion
1/2 cup packed brown sugar
3/8 cup Bourbon
1/2 teaspoon garlic powder

Steps:

  • Place chicken breasts in a 9x13 inch baking dish.
  • In a small bowl combine the ginger, soy sauce, onion flakes, sugar, bourbon and garlic powder.
  • Mix together and pour mixture over chicken.
  • Cover dish and place in refrigerator.
  • Marinate overnight.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Remove dish from refrigerator and remove cover.
  • Bake in the preheated oven, basting frequently, for 1 1/2 hours or until chicken is well browned and juices run clear.

1 ½ cups ketchup
½ cup vinegar
½ cup bourbon whiskey
2 tablespoons dry mustard
1 tablespoon Worcestershire Sauce
2 teaspoons salt
1 teaspoon smoked paprika
½ teaspoon freshly ground black pepper
¼ teaspoon liquid smoke

Steps:

  • Combine brown sugar, ketchup, vinegar, whiskey, mustard, Worcestershire sauce, salt, paprika, pepper, and liquid smoke in a saucepan. Simmer for 15 minutes, stirring occasionally. Place in jars and refrigerate until use.

2 tablespoons olive oil
1/2 g red onion (minced)
2 cloves garlic (peeled and minced)
1 cup Ketchup
3/4 cup red wine
2 tablespoons dark brown sugar
2 tablespoons hot sauce
2 tablespoons dijon mustard
1 teaspoon worcestershire sauce
1 bag Kosher salt and freshly ground black pepper (to taste)
8 kg chicken thighs (bone-in, skin-on)

Steps:

  • In a medium sauce pan, over medium-high heat, add olive oil, garlic, red onion and cook until softened, about 4 minutes. Whisk in ketchup, wine, sugar, hot sauce, mustard and worcestershire. Bring sauce to a boil, then simmer, stirring frequently, until thickened, about 15 minutes.
  • Line a baking sheet with aluminum foil and place a baking rack on top of the sheet tray. Season the chicken with salt and pepper, place on the rack and roast until the skin is lightly browned, about 20 minutes. Remove from the oven and using a pastry brush, coat the chicken on both sides with some boozy bbq sauce and put back into the oven for another 20 minutes. Baste once more halfway through cooking. Remove the chicken when cooked through or a meat thermometer reads 165ºF and until chicken is slightly charred and caramelized. Remove to cool.
