Braised peas with jamón image

Need a quick and easy side dish for your next dinner party? This Spanish-style pea and serrano ham dish is lifted with a dash of sherry vinegar

Number Of Ingredients 7

6 tbsp extra-virgin olive oil
2 onions, finely diced
4 cloves garlic, chopped
500g fresh or frozen peas, defrosted
100ml chicken stock
100g serrano ham, shredded
1 tbsp sherry vinegar

Steps:

  • Heat the olive oil in a frying pan and add the onion with a large pinch of salt. Cook for 5-10 minutes or until softened and starting to caramelise. Add the garlic and cook for a minute before tipping in the peas, chicken stock and serrano ham. Simmer gently for 5 minutes until the peas are tender and serve dressed with the sherry vinegar and plenty of cracked black pepper.

Number Of Ingredients 9

1 tablespoon butter
1 1/2 tablespoons flour
1/2 pint chicken stock or 1/2 pint vegetable stock
6 spring onions, trimmed, outer leaves discarded, and finely chopped
14 ounces fresh peas
1 head romaine lettuce, green part only, sliced into strips
sea salt & fresh ground pepper
1 lemon, juice of
1 tablespoon olive oil

Steps:

  • Slowly heat the butter(he says a nob of butter not a TB) and a good glug of olive oil in a pan.
  • Add the flour and stir around.
  • Slowly add the stock.
  • Turn up the heat and add the spring onions, peas and lettuce with a pinch of salt and pepper.
  • Put the lid on and simmer for five minutes or until tender.
  • Salt and pepper to taste, squeeze in a bit of lemon juice, and drizzle with oil. Serve!
