In just 20 minutes, you can offer guests three quick-and-easy cream cheese spreads to put on top of baguette slices.

2 containers (8 oz each) chives-and-onion cream cheese spread
1/4 cup diced drained roasted red bell peppers (from 7-oz jar)
1/4 cup chopped pimiento-stuffed green olives
2 tablespoons refrigerated basil pesto (from 7-oz container)
Leaf lettuce leaves
1 loaf (20 inch) baguette French bread (12 oz), cut into 1/4-inch slices

Steps:

  • Among 3 small bowls, divide cream cheese. Stir red peppers into cream cheese in 1 bowl. Stir olives into cream cheese in another bowl. Stir pesto into cream cheese in third bowl.
  • Line serving platter with lettuce leaves. Mound 3 spreads on lettuce leaves. Surround with bread slices.

2 pounds sliced deli turkey
2 pounds sliced deli roast beef
1 pound sliced deli ham
1 pound thinly sliced hard salami
2 cartons (7 ounces each) roasted red pepper hummus
2 cartons (6-1/2 ounces each) garden vegetable cheese spread
Assorted breads and mini bagels

Steps:

  • Arrange lettuce leaves on a serving platter; top with deli meats, rolled up if desired. Serve with hummus, cheese spread, breads and bagels.

1/2 pound cremini mushrooms, coarsely chopped
1 tablespoon extra-virgin olive oil
1 tablespoon butter
1 large shallot, finely chopped
1/2 teaspoon ground thyme
Salt and pepper
1/2 cup dry Sherry
1 loaf baguette, sliced at bread counter of market
8 ounces pate, available in specialty foods case of market, choose country or mousse-style, any flavor, ask for tastings, to choose
Cornichons, for garnish
Capers, for garnish
Chopped fresh parsley, for garnish

Steps:

  • Heat a skillet over moderate heat. Finely chop mushrooms in a food processor. Add the oil and butter to the skillet, then add the shallots and mushroom bits. Season mushroom with ground thyme, salt, and pepper.
  • Saute shallots and chopped mushrooms until mushrooms are deep brown and tender, about 6 minutes. Deglaze pan with Sherry. Transfer mushroom spread to a small bowl or other serving dish. Place mushroom dish on a platter alongside the store bought pate.
  • Garnish tray with sliced baguette, cornichons, capers, and a sprinkle of chopped parsley. Enjoy bread rounds with a slather of pate topped with mushrooms.
