Categories     Bread

Time 3h45m

Number Of Ingredients 2

2 pounds frozen bread dough (thawed but still cold (I like using Rhodes))
1 large egg (beaten)

Steps:

  • Line baking sheet with parchment paper or silicone baking mat.
  • Slice the thawed dough into 6 equal pieces, and roll each piece into a tight ball.
  • Place dough balls 4-inches apart on a prepared baking sheet, and brush with egg. Spray a large piece of plastic wrap with nonstick cooking spray, and lightly cover plastic wrap over dough. Let dough rise in a warm place until double in size, about 2-3 hours.
  • Carefully remove plastic wrap. Bake at 350 degrees F for 25 minutes, or until golden brown. Cool bread on a wire rack until just warm.
  • With a knife at an angle, slice the top off of the bread. Compress sides and bottom of the bread to form a well. Fill with your favorite soup, stew, chili, or dip. Serve.

BREAD BOWLS FROM FROZEN ROLLS

Bread Bowls from Frozen Rolls image

Provided by Katie Clark

Time 3h5m

Number Of Ingredients 2

18 frozen rolls
1 whole egg

Steps:

  • Place frozen rolls on a greased cookie sheet - you will need three per bowl. You don't need to place them super far apart because you'll be combining them anyways!
  • Cover with greased plastic wrap, and let rise for about five hours. I let them rise overnight and that worked well.
  • Once they have risen, combine three of the rolls together and roll into a big, round ball.
  • Place each ball back on the cookie sheet, brush with egg wash, cover with greased plastic wrap, and let rise 2-3 hours in a warm spot.
  • Bake at 350 for about 25 minutes or until golden brown.
  • Remove from oven. When cool enough to handle, cut off the top of each bread bowl, and remove the inside of the bowl.
  • Let cool and then serve immediately or store for another time.

  • Combine the water, yeast, and 1/2 teaspoon of the sugar in a small bowl. Stir just until the yeast is dissolved. Cover with a towel and let stand until the mixture is foamy, about 5 minutes.
  • In a large bowl, add the salt, remaining sugar, butter, yeast mixture, and 3 1/2 cups of the flour, and mix. Slowly keep adding more flour (about 1 cup at a time) until the dough starts to pull away from the sides of the bowl.
  • Knead the dough (with your stand mixer, or using your hands) for about 5 minutes. Stop and touch the dough with a clean, dry finger. The dough shouldn't be "sticky", but may barely stick to your finger. Add a little more flour, as needed, until you reach that consistency. Knead for 2-3 more minutes.
  • Lightly spray another large bowl with nonstick spray and transfer the dough to that bowl. (Flip the dough over once so both sides are coated with spray). Cover the bowl with a dish towel and let it rise until doubled, about 30-45 minutes.

  • Pour the warm water over yeast in the bowl of a stand mixer fitted with a dough hook attachment. Or, if you don’t have a stand mixer, a regular large mixing bowl. Whisk together and allow to sit for 5 minutes. Cover the bowl with a towel. The mixture should be frothy and foamy after 5 minutes.
  • With the stand mixer running on low speed, add the sugar, salt, olive oil, 4 cups of bread flour, and seasonings (if using, see recipe note). Beat on low speed for 1 minute, then add remaining 2 cups of flour. Beat on low speed for 5-6 minutes. The dough should be thick, yet soft. And only slightly sticky. It should pull away from the sides of the bowl as it mixes. If it’s too sticky, add more flour, 1 Tablespoon at a time, until it pulls away from the sides of the bowl.
  • Turn it out onto a lightly floured surface and form into a ball. Then place into a large greased bowl, turning once to grease the top. (I just use the same mixing bowl– remove the dough, grease it with nonstick spray or olive oil, put the dough back in.) Cover the bowl with plastic wrap and place it in a warm environment to rise until doubled, about 90 minutes. Tip: For the warm environment on a particularly cold day, heat your oven to 150°F (66°C). Turn the oven off, place the dough inside, and keep the door slightly ajar. This will be a warm environment for your dough to rise. After about 30 minutes, close the oven door to trap the air inside with the rising dough. When it’s doubled in size, remove from the oven.
  • Once doubled in size, punch down the dough to release any air bubbles. Remove dough from the bowl and turn it out onto a lightly floured surface. Punch down again to release any more air bubbles if needed.
