Banana Bread Recipe for the Bread Machine image

If your bread machine has a cake or quick bread function, you'll love this recipe. The banana bread is moist and delicious. It's also really easy to make because your bread machine does all the stirring and baking.

1 ½ cups bread flour
⅔ cup sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
⅓ cup butter (melted)
2 large eggs (lightly beaten)
1 teaspoon vanilla
⅔ cup mashed banana/milk - see note

Steps:

  • Use the cake or quick bread cycle of your bread machine.
  • This recipe is for a two-pound machine.
  • I used the cake cycle and medium crust settings on my Zojirushi. Follow the instructions that came with your bread machine in terms of which ingredients to put in the machine first.

3 medium bananas (very ripe)
2 cups whole wheat flour
1/2 teaspoon baking soda
1 tablespoon vegetable oil
1 teaspoon baking powder
1/3 cup Splenda sugar substitute
1/3 cup white sugar
2 eggs
4 ounces applesauce
1/2 teaspoon vanilla
1 tablespoon cinnamon (or other spice, I used Chai spice)

Steps:

  • Squish or chop the bananas. I found putting them into a ziploc bag and smooshing them works best.
  • Add rest of ingredients.
  • Set bread machine to quick bread.
  • Watch as it mixes to ensure all flour is mixed inches.
  • If you have the ability to allow it to mix, turn it off and then go to bake only cycle, do that to keep the dough from getting overworked.
  • Bake for 1 hour and test for doneness. Add 10-20 if a toothpick inserted does not come out clean.
  • Obviously this will not come out a large loaf like regular bread, but it is a nice sized banana bread.

½ cup margarine, softened
⅔ cup milk
2 eggs
2 ½ cups all-purpose flour
1 cup white sugar
2 ½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
⅔ cup mashed bananas
½ cup chopped walnuts

Steps:

  • Spray bread machine pan with vegetable oil spray.
  • Premix ingredients in order listed. Place mixture in bread machine pan.
  • Select the Quick Bread/Cake cycle. Press Start. Check after 1 minute to see if mixture is well blended.
  • Cook until cake cycle stops. Remove pan, and cool completely before removing bread from pan.

If you have extra bananas this is a good way to use them. "A quick banana bread for the bread machine. Use the DOUGH setting for mixing, then BAKE with the control set to light."

2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup white sugar
3 tablespoons vegetable oil
2 eggs
2 bananas, peeled and halved lengthwise

Steps:

  • Place ingredients in the pan of the bread machine.
  • Select the Dough setting, and press Start. Mix the bread for 3 to 5 minutes until the bananas are mashed and all ingredients are thoroughly combined.
  • If necessary, use a rubber spatula to push the dough from the sides of the bread pan. When 3 to 5 minutes have passed on the clock display, press Stop. Do not continue mixing.
  • Smooth out the top of the loaf with the rubber spatula.
  • Select the Bake setting, and press Start. The Bake cycle time may vary with machines, but should be about 50 minutes. To test the bread for doneness, insert a toothpick into the center top. Remove the toothpick. If the bread is done, the toothpick will come out clean. If there is dough on the toothpick, reset the machine on Bake and continue to bake an additional 10 to 15 minutes.
  • Test again with the toothpick to assure the bread is completely baked. Remove the pan from the machine, but allow the bread to remain in the pan for 10 minutes.
  • Remove the bread to cool completely on a wire rack.
