- Toast waffles according to package directions; separate into mini waffles and cool completely., In a large skillet, melt butter over low heat; stir in pecans, brown sugar, chili powder and vanilla. Cook and stir 4-6 minutes or until nuts are toasted. Transfer to a shallow bowl; cool completely., To assemble, spread 1 teaspoon caramel syrup over a mini waffle; top with 2 tablespoons ice cream. Top with a second waffle, pressing to spread ice cream to edges. Roll sides into spiced pecans; place on a plate. Freeze, covered, until firm.

PBJ CRUNCH BARS
If you are a fan of peanut butter and jelly, you will love these bars. I get a lot of requests for the recipe. I use smooth peanut butter, but crunchy can be substituted.

- Preheat an oven to 375 degrees F (190 degrees C).
- Stir the oats, flour, white sugar, brown sugar, graham cracker crumbs, and cinnamon in the bowl of a stand mixer. Using the whisk attachment, cut the butter into the mixture until crumbly. Press about half of the mixture into the bottom of an ungreased 9x13-inch baking dish. Spread the peanut butter over the oat mixture. Stir the jelly to make it spreadable and swirl into the peanut butter. Sprinkle the remaining oat mixture over the peanut butter and jelly layer; gently pat until it sticks together.
- Bake in the preheated oven until golden brown, 25 to 35 minutes. Allow to cool completely before cutting into bars.

GRILLED PBJ SANDWICHES
I was going to make grilled cheese sandwiches one day and had already buttered several slices of bread when I found I was out of cheese. So I pulled out some peanut butter and jelly, and the result was this tasty version of a popular classic.

FRIED PB & J
Hot rhubarb jam and creamy peanut butter join forces inside a fried crescent roll and conspire to be your new favorite party snack. Use another jam or jelly if you like, but tartness really matters here, and this jam comes together quickly. - Combine rhubarb, sugar, lemon juice, honey, and water together in a saucepan over high heat; cook and stir until rhubarb softens to a pulp, 5 to 10 minutes. Add strawberries and cook until strawberries fall apart and most of the liquid is dissolved, about 5 minutes. Remove saucepan from heat and cool jam for 10 minutes.
- Line a baking sheet with parchment paper. Measuring out in 1/2 tablespoons, spoon 14 portions of jam and 14 portions of peanut butter onto the prepared baking sheet. Cover baking sheet with plastic wrap and freeze until fillings are solid, 3 hours to overnight.
- Roll dough onto a lightly floured piece of parchment paper, pressing dough together at the seams. Seal the seams together and slightly flatten dough by rolling a lightly floured rolling pin over it. Cut 28 circles out of dough using a 2-inch cookie cutter. Arrange the circles on the parchment paper.
- Place 1 jam and 1 peanut butter filling onto the center of 14 dough circles. Place a second circle of dough over the filling, rolling up the edges of the bottom circle and crimping together to seal. Arrange crescent pockets on a baking sheet and freeze.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Fry crescent pockets, 3 at a time, in the hot oil using a small wooden spoon to flip them continuously until golden, about 1 minute per side. Transfer pockets to a paper towel-lined plate.

- Preheat a waffle maker on medium-low heat.
- Spread each slice of bread with the horseradish mayonnaise. Place a piece of cheese on top of each slice.
- Add the roast beef and pepperoncini to one side. Close the sandwich and butter the top with 1 tablespoon butter.
- Set the sandwich, butter-side down, in the waffle maker. Spread the remaining butter on top of the sandwich and close the waffle maker.
- Toast until golden and crisp, 2 1/2 to 3 minutes.
- Remove, slice in half and serve with potato chips.

MAPLE-NUT WAFFLEWICHES

- In large bowl, whisk egg white until foamy. Whisk in maple syrup, vanilla and salt. Add pecans and sugar, tossing to coat. Place on a baking sheet lined with parchment.Bake in 225°F (110°C), stirring every 15 minutes, until crisp and coated, about 45 minutes. Let cool. (Tip: Store in airtight container for up to 1 week.)
- Meanwhile, in large bowl, combine flour, cocoa powder, baking powder, sugar, baking soda and salt. In separate bowl, whisk egg, milk, sour cream and butter. Add to flour mixture; stir just until blended. Using food colouring, tint batter red.
- Spray electric waffle iron with cooking spray. Heat iron to medium heat (steps reordered). Spoon amount of batter directed by manufacturer onto grids of waffle iron. Close lid quickly. (Do not open until waffle is done.) Cook according to manufacturer's directions. When done, lift waffle off grid with fork. Repeat with remaining batter. Let cool.
- Meanwhile, whip cream to stiff peaks.
- Place 2 scoops of ice cream onto 6 of the waffles. Top with remaining waffles, pressing to push ice cream to edges.Roll edges in maple-nut crunch. (Tip: Freeze for up to 1 hour.)
- Transfer each sandwich to a dessert plate. Top each sandwich with a dollop of whipped cream and remaining maple-nut crunch. Drizzle with maple syrup.

- 1. Lay the slices of bread on a breadboard. Spread the foie gras mousse on four of the slices. Sprinkle with coarse sea salt. Spread the jam on the other 4 slices of bread. Join the jam slices with the foie gras slices to make 4 sandwiches.
- 2. Using a bread knife, cut off the crusts with gentle sawing motions, then cut the sandwiches diagonally into quarters, so you end up with triangles. Stack on a serving platter and march them out to the party.
PB&J WAFFLEWICHES
One day when my twins were about 4 years old and wanted peanut butter and jelly sandwiches but we were out of bread, I told them I would make them some extra-special pb&j sandwiches. I used frozen waffles for the bread and they thought that was the grandest thing! Even as college students now, they still love the PBJ wafflewiches!
