This is the best buttermilk bread! I have tinkered a bit and came up with this.I baked it in the oven.

Number Of Ingredients 9

1 1/2 cups water
1 tablespoon olive oil
1 tablespoon honey
1/2 cup dry buttermilk
2 cups whole wheat flour
2 cups white flour
2 tablespoons vital wheat gluten
1 teaspoon salt
1 tablespoon active dry yeast

Steps:

  • All ingredients should be at room temperature before starting.
  • Add all ingredients in the order suggested by your bread machine cycle and process on the basic bread cycle according to the manufacturer's directions. Let loaf cool for 15 minutes before slicing.
  • I made mine with the Dough Cycle.
  • Split in 2 and shape into 2 loaves.
  • Place in 2-8'' loaf pans.
  • Set to rise in a warm place for 45 minutes.
  • Slash the top.
  • Bake in a 350 oven for 30- 35 minutes or until fully baked,.

  • Place all ingredients into a bread machine in the order recommended by the manufacturer. Select the Basic White Bread setting, then press Start. If the ingredients do not form a ball after a few minutes, add a splash more buttermilk, or a handful of flour if it is too loose.

1/4 cup canola oil
1 teaspoon lemon juice
2 tablespoons sugar
1-1/2 teaspoons salt
1/4 teaspoon baking soda
1/2 cup toasted wheat germ
2 cups whole wheat flour
1-1/4 cups bread flour
2 teaspoons active dry yeast
2 tablespoons butter, melted, optional

Steps:

  • In bread machine pan, place the first 10 ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., When cycle is completed, turn dough onto a lightly floured surface and punch down. Divide into 24 pieces; shape each into a ball. Place on two greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes. Brush with butter if desired. , Bake at 350° for 12-14 minutes or until golden brown. Remove from pans to wire racks to cool.
