OLD-FASHIONED BREAD PUDDING
Bread pudding is a delicious treat and an even better way to reduce food waste! For this bread pudding recipe, collect the heels and any extra slices of bread you have and freeze them. When you have enough to measure six cups (this is about six slices of bread), thaw the slices and start baking this warm and comforting bread pudding.

Steps:
- Heat oven to 350°F. In 2-quart saucepan, heat milk and butter over medium heat until butter is melted and milk is hot.
- In large bowl, mix eggs, sugar, cinnamon and salt. Stir in bread cubes and raisins. Stir in milk mixture. Pour into ungreased deep round pan.
- Bake uncovered 40 to 45 minutes or until knife inserted 1 inch from edge comes out clean. Serve warm with whipping cream.

BEST BREAD PUDDING WITH VANILLA SAUCE
We found this recipe tucked inside my mom's Bible when going through her things. It has become a family tradition on the first snow day of the year and if that doesn't happen, which can be the case here in central Virginia, we know it'll be the featured dessert at Easter and anytime a comfort food is in order.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease a 2-quart baking dish.
- In a mixing bowl, whisk 3 eggs, white sugar, 2 tablespoons of light brown sugar, 1/2 teaspoon of cinnamon, 1/4 cup of butter, and 3 cups of whole milk together, and gently stir in the bread cubes and raisins. Lightly spoon the mixture into the prepared baking dish.
- Bake in the preheated oven until browned and set in the middle, 50 to 55 minutes; cover the dish with foil after 30 minutes to prevent excessive browning. Let the pudding stand for 10 minutes before serving.
- For vanilla sauce, whisk 1/2 cup of light brown sugar, the flour, a pinch of cinnamon, 1 egg, 2 tablespoons of melted butter, 1 1/4 cups of whole milk,and salt together in a heavy saucepan until smooth. Heat over medium heat, whisking constantly, until thickened and the sauce coats the back of a spoon, 10 to 12 minutes. Stir in the vanilla extract. Pour sauce over warm bread pudding, or serve on the side in a bowl.

BREAD PUDDING DELUXE
This humble dessert has been modified to be presentable for dinner parties! Best served warm and tastes even better the day after.

Steps:
- Heat oven to 180°C.
- Cut bread into cubes.
- Place in large shallow ovenproof dish.
- Sprinkle with sugar.
- Heat milk and margarine to lukewarm.
- Beat eggs and vanilla extract and add to milk.
- Pour over bread and leave to soak inches.
- Bake for 40 mins til set.
- TOPPING:.
- Beat topping ingredients together and spread evenly over bread pudding as soon as it comes out the oven.
- Place pudding back into oven and bake for a further 20- 25 mins till well set and golden brown.
- Serve plain or with icecream.

- The Greenbrier Bread Pudding with Vanilla Sauce Bread Pudding Ingredients 1/2 loaf - plain white bread 4 ounces - melted butter 6 each - whole eggs 24 ounces - milk 8 ounces - heavy cream 1/2 pound - sugar 1 cup - raisins to taste - vanilla extract Vanilla Sauce Ingredients 2 cups - heavy cream 1/2 cup - sugar 4 each - egg yolks 1 Tbsp - flour 1 Tbsp - vanilla extract 1/4 tsp - salt 2 scoops - vanilla ice cream Bread Pudding Recipe Cut bread slices into one-inch squares and toast in a hot oven. Place in the bottom of a casserole dish and drizzle with melted butter. Combine remaining ingredients and pour over bread. Bake at 350 degrees until custard is firm, approximately 45 minutes. Vanilla Sauce Recipe Combine cream and sugar in a two-quart saucepan and bring to a boil. Remove from heat. Beat egg yolks, flour, vanilla and salt; stir in a little of the hot cream. Add this mixture to the rest of the hot cream. Cook, stirring constantly until just thickened (do not overcook). Remove from heat and add ice cream, stirring until melted. Strain. This recipe is taken from a local Trinidadian cookbook. Trinidad is an island in the caribbean. It's very tasty...hope you all enjoy it too.

Steps:
- Cut crust from bread; brush both sides of bread with melted butter and cut into 1 inch cubes.
- In a greased 9x9 square baking dish, place a layer of bread, a layer of coconut, raisins and cherries; repeat layers until all ingredients are used.
- Beat eggs until fluffy; add milk, sugar, salt, nutmeg, cinnamon and wine or rum (if using). Stir until combined and sugar has dissolved.
- Pour mixture over bread and allow to stand for 1/2 hour.
- Bake in a preheated 350 degree oven for 35-45 minutes or until firm.
- Allow to cook completely and serve alone or with ice cream, yogurt or whipped cream.
