10-ounce jar maraschino cherries, drained and reserve the juice
1 box devil's food cake mix with pudding
1 cup cherry cola
1/2 cup vegetable oil
3 eggs
1 cup marshmallow cream
1 container vanilla whipped ready-to-spread frosting
Optional: additional maraschino cherries and melting chocolate (candy melts, not chocolate chips) for the chocolate covered cherry garnish

Steps:

  • Preheat oven to 350ºF. Grease a 9x13 baking dish or a 10-inch round.
  • Chop maraschino cherries and set aside. In a large mixing bowl, mic together the cake mix, cola, oil, eggs, and the reserved cherry juice until a batter forms. Stir in the chopped cherries.
  • Bake for 35-45 minutes, until a toothpick inserted comes out clean. Let cool completely, about 1 hour.
  • Using a hand mixer or small food processor, mix together the marshmallow cream and canned frosting. Spread over top of the cake.
  • Optional: pat dry maraschino cherries. Melt the chocolate melting candy according to directions on package. Dip each cherry in the chocolate and place on non-stick surface to dry. Place cherries on top of the cake as a garnish.

  • In a small saucepan, bring cola and dried cherries to a boil. Remove from the heat; let stand for 30 minutes. , In a large bowl, combine the flour, sugar, chocolate, baking powder and salt. Combine the chocolate milk, butter and vanilla; stir into dry ingredients just until moistened. Fold in cherry mixture. Pour into a 3-qt. slow cooker coated with cooking spray., For topping, in a small saucepan, combine the cola, sugar and brown sugar. Cook and stir until sugar is dissolved. Remove from the heat; stir in chocolate and rum until smooth. Pour over batter; do not stir., Cover and cook on high until set, 2-2-1/2 hours. Turn off heat; let stand, covered, for 30 minutes. Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour. Chop cherries; set aside.
  • In large bowl, beat cake mix, cola beverage, oil, eggs and 1/4 cup reserved cherry liquid with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Stir in chopped cherries. Pour into pan.

I always let him choose what he's got a hankering for, and it's often this.

  • 1. Make the cake: Preheat the oven to 350°F. Grease a 9 x 13- inch cake pan.
  • 2. Whisk together the cake mix, cherry cola, oil, eggs, vanilla, and the reserved cherry juice in a large bowl until well combined. Stir in the maraschino cherries. Pour the batter into the cake pan and bake until a toothpick inserted in the center comes out clean, 30 to 35 minutes. Cool in the pan for at least 1 hour.

One 15.25-ounce box devil's food cake mix, such as Duncan Hines
One 3.9-ounce package instant chocolate pudding mix
4 large egg whites
3/4 cup cherry cola, such as Cherry Coke ®
1/2 cup vegetable oil
1/2 cups finely chopped maraschino cherries
5 1/4 cups confectioners' sugar
6 sticks (1 1/2 pounds) unsalted butter, at room temperature
1/4 teaspoon kosher salt
5 tablespoons maraschino cherry liquid plus 1 cup finely chopped maraschino cherries
8 ounces semisweet chocolate, chopped
3/4 cup heavy cream
1 1/2 cups whole maraschino cherries with stems

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Coat two 8-inch round cake pans with cooking spray, then line with parchment and spray the parchment.
  • Combine the cake mix and pudding mix in a stand mixer fitted with the paddle attachment and mix on low speed to blend. With the mixer still running, add the egg whites, cherry cola and vegetable oil and mix until combined. Raise the speed to medium and mix until increased in volume, lighter in color and smooth, about 5 minutes. Fold in the maraschino cherries. Divide the batter between the prepared baking pans; smooth into even layers using an offset spatula.
  • Bake until a skewer inserted in the center comes out clean and the edges pull away from the sides of the pan, about 15 minutes. Transfer to a rack and let cool in the pans, about 10 minutes, then turn out onto racks and let cool completely, about 1 hour.??
  • For the frosting: Mix the confectioners' sugar, butter and salt together in a stand mixer fitted with the whisk attachment. Mix on low speed until well blended, then increase the speed to high and whip until light and fluffy, 3 to 5 minutes. Add the maraschino cherry liquid and continue to whip until bright pink and spreadable. Add the chopped cherries and mix on low speed until evenly distributed.
  • Using a serrated knife and sawing in long, even strokes, carefully halve the cake layers horizontally. Place 1 layer, cut-side up, on a platter or cake stand; spread 1 1/2 cups frosting on top. Stack another cake layer on top and spread another 1 1/2 cups frosting on top. Repeat with the remaining 2 cake layers, then cover the top and sides with a thin layer of frosting (this is the crumb coat) and use a bench scraper or large offset spatula to smooth out the sides and top (it's okay if some cake shows through). Refrigerate 15 minutes, then add another 1/2-inch layer of frosting to the top of the cake and smooth out to make a perfectly flat top. Refrigerate until ready to cover with ganache.
  • For the ganache: Meanwhile, place the chocolate in a heatproof bowl and heat the cream in a small saucepan over medium-high heat until beginning to boil. Pour the cream over the chocolate and let sit, stirring occasionally, until the mixture is completely smooth and the chocolate is melted, about 5 minutes. Let cool 30 minutes, then pour over the chilled cake so that the top is completely coated and chocolate drips decoratively down the sides. Let set at room temperature 30 minutes, then top with the whole cherries in the center of the cake and serve.

5 ounces red licorice (about 10 jumbo pieces) (recommended: Red Vines)
2 cups water
1 1/2 cups granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
4 egg yolks, slightly beaten
8 egg whites
2 cups granulated sugar
3/4 teaspoon cream of tartar
1 teaspoon pure vanilla extract
3 to 5 teaspoons cherry cola
3/4 cup powdered sugar

Steps:

  • Preheat the oven to 350 degrees F. Line 2 regular size cupcake pans with cupcake liners.
  • In a large bowl using an electric mixer on low speed, combine the sugar, flour, cocoa, baking powder, baking soda, and salt. Add the eggs, half-and-half, oil, and vanilla and beat on medium speed for 2 minutes. Stir in the warmed cherry cola until fully combined.
  • Fill the cupcake liners three-quarters full with batter and bake until the cupcakes spring back when touched with your finger, 10 to 15 minutes. Let cool in the pans for a few minutes, and then remove to a wire rack to cool completely.
  • Fill each of the cupcakes with Red Licorice Filling. Sprinkle the crushed yogurt covered pretzels on top. Top with Marshmallow Frosting and drizzle with Cherry Cola Glaze.
  • Tear the licorice into 1 inch pieces and place in a saucepan with the water over medium heat until it comes to a boil. Remove from the heat and let cool. Whisk in the sugar, cornstarch, salt, and egg yolks. Cook over medium heat, whisking constantly, until thick and bubbly. Continue to cook for 1 minute, and then remove from the heat. Cool to room temperature.
  • Place the egg whites, sugar, and cream of tartar in a heat-safe bowl over a saucepan with boiling water. Whisk constantly over the heat for 1 to 3 minutes. Once the sugar has dissolved, remove from the heat and beat with an electric mixer on high until stiff peaks have formed, 5 to 7 minutes. Stir in the vanilla extract.
  • Add the cherry cola, 1 teaspoon at a time, to the powdered sugar until it has a good consistency to drizzle on cupcakes.

DH and I enjoy this easy dessert. Warm chocolate cake with chocolate pudding. Notice that it is dark rum which is difficult to find in small bottles. Feel free to sub in semisweet chocolate chips for the chopped chocolate, cherry coke for the regular coke with 1 teaspoon of almond extract, and for the liquor try amaretto-it is good too.

  • Put a sheet of paper toweling between the slow cooker and lid to absorb the condensation. I changed mine once during the 2 hours.
  • Cover and cook on high for 2 to 2 1/2 hours or until set. Mine was set in 2 hours BUT I have an old crock pot.
  • Turn off the heat; let stand for 30 minutes.
  • Serve warm with ice cream and maraschino cherries.

This was the cake we had for my birthday. Mostly chocolate with a subtle cherry flavor.

1 (1 ounce) square unsweetened baking chocolate
¼ cup butter
1 cup white sugar
1 egg
¼ cup plain yogurt
1 (4 ounce) jar maraschino cherries
1 cup sour milk
1 ¾ cups all-purpose flour
1 teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. In the top of a double boiler, heat chocolate, stirring occasionally, until chocolate is melted and smooth. Remove from heat and allow to cool to lukewarm.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the yogurt, melted chocolate and cherries with juice. Stir together the flour and baking soda and beat into the creamed mixture alternately with the sour milk. Pour batter into prepared pan.
  • Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
