Steps:
- Preheat the oven to 360 degrees F/180 degrees C.
- Melt the butter in a cast-iron skillet.
- Add the bread cubes in the skillet and toast them, stirring often.
- Crack the eggs in a bowl, add salt, pepper, the grated parmesan, smoked ham, and heavy cream.
- Whisk all the ingredients together.
- Add 2 tablespoons of mixed seeds in the skillet, then pour the egg mixture over the seeds and the bread.
- Add some red bell pepper slices.
- Transfer the cast-iron skillet to the oven and bake for 20 minutes.
- Meanwhile, take another skillet and add the remaining mixed seeds and the pine nuts in it. Stir and roast them.
- Take the skillet out of the oven and sprinkle the toasted seeds over the frittata.

BREAD PUDDING FRITTATA
At El Rey Coffee Bar and Luncheonette, you can get this rich, silky egg terrine all day long, but it's particularly wonderful at breakfast or brunch. Although it does take time to put together, you can do all of it well ahead - up to 24 hours. And the last minute work is minimal (slice an avocado, chop up some fresh herbs). Don't be tempted to skip the frequent stirring while the dish bakes. It may seem fussy, but in fact is the key to the luscious texture, which is somewhere between custard and bread pudding.

- Heat oven to 325 degrees. Toss bread with oil and spread on a large rimmed baking sheet. Toast bread until golden and dry to touch, about 25 minutes. Cool and place in a large container with a lid.
- Strain eggs through a fine mesh sieve into a large bowl (straining gives you the smoothest texture). Whisk in milk, salt and sugar. Pour egg mixture over bread in container and cover tightly. Refrigerate overnight.
- When ready to bake, let bread-egg mixture come to room temperature for 30 minutes. Heat oven to 300 degrees. Grease an 8- or 9-inch loaf pan, preferably nonstick. Using a slotted spoon or your hands, lift bread and place into loaf pan. Pour egg mixture over it. Place pan inside a larger roasting pan.
- Transfer to oven and fill roasting pan with enough boiling water to come 3/4 up the sides of the loaf pan. Cover both pans with one large sheet of aluminum foil. Cook, gently stirring frittata every 10 to 15 minutes for even cooking, until just set, about 1 hour 15 minutes.
- Run a knife along the sides of the loaf pan to loosen the frittata, then unmold it and flip onto a plate to cool to room temperature. Slice into eight pieces. Top each serving with avocado and herbs. Sprinkle with lemon juice and sea salt.

VANILLA BRIOCHE BREAD PUDDING

- Preheat the oven to 350 degrees F. Space two racks evenly in the oven.
- Cut five 3/4-inch-thick slices of brioche and place them in one layer on a sheet pan. Trim some of the crusts from the remaining brioche and cut in 1-inch dice. Spread out on a second sheet pan. Put both pans in the oven for 5 minutes to lightly toast the bread.
- Meanwhile, for the custard, whisk together the whole eggs, yolks, half-and-half, milk, granulated sugar, vanilla and vanilla seeds in a large bowl and set aside. Line a 3-quart baking dish with the whole slices of brioche, cutting them to fit in one layer. Distribute the diced brioche on top. Pour on the custard and press lightly so all the bread is soaked with custard. Set aside for 10 minutes.
- Place the dish in a roasting pan large enough to allow the baking dish to sit flat. Pour about 1 inch of the hottest tap water into the roasting pan, being sure not to get any water into the custard. Cover the roasting pan tightly with aluminum foil, tenting the foil so it doesn't touch the pudding. Cut a few holes in the foil to allow steam to escape. Bake for 45 minutes. Uncover and bake for 45 to 50 minutes, until the custard is set and a knife inserted in the middle comes out clean. Dust with confectioners' sugar and serve warm with the melted ice cream.
OLD-FASHIONED BREAD PUDDING
Bread pudding is a delicious treat and an even better way to reduce food waste! For this bread pudding recipe, collect the heels and any extra slices of bread you have and freeze them. When you have enough to measure six cups (this is about six slices of bread), thaw the slices and start baking this warm and comforting bread pudding.

- Tear 500g white or wholemeal bread into a large mixing bowl and add 500g mixed dried fruit, 85g mixed peel and 1 ½ tbsp mixed spice.
- Pour in 600ml milk, then stir or scrunch through your fingers to mix everything well and completely break up the bread.
- Add 2 beaten large eggs, 140g light muscovado sugar and zest of 1 lemon, if using. Stir well, then set aside for 15 mins to soak.
- Heat oven to 180C/160C fan/gas 4. Butter and line the base of a 20cm non-stick square cake tin (not one with a loose base).
- Stir the melted butter into the pudding mixture, tip into the tin, then scatter with demerara.
- Bake for 1½ hrs until firm and golden, covering with foil if it starts to brown too much. Turn out of the tin and strip off the paper. Cut into squares and serve warm.

FRITTATA WITH BREAD AND BOTTARGA
Going out on New Year's Eve has always been, according to my parents, for amateurs. Their long-standing alternative: stay home and eat well. The ritual starts with caviar and Champagne. Then Dad might prepare steak tartare and Mom, a chocolate soufflé. Good stuff. Now, all grown up (and then some), I realize they're on to something. A low-key, intimate gathering starring good food is my preferred way to ring in the new. But in these lean times - and in my significantly smaller kitchen - putting out a succulent spread and entertaining the troops chez moi calls for some creativity. This frittata can be cut in half and served as a meal for two with a bitter chicory salad, or sliced into strips and put into a salad of its own.

- Preheat the oven to 400 degrees.
- Crack eggs into a mixing bowl. Add sea salt and chives. Whisk with a fork until whites and yolks are fully incorporated.
- Tear bread into large, bite-sized croutons and drop into the egg mixture; use enough bread to cover the surface area of the frittata to achieve something halfway between a bread pudding and an omelet.
- Heat an ovenproof, 10-to-12-inch omelet pan over low-medium flame. Pour olive oil into pan, enough to coat and then some. You want sizzle, not smoke.
- Pour frittata mixture into the pan. Gently jiggle the pan to get a "pizza effect" (i.e., the chives and bread pieces are evenly distributed). Increase the flame to high to let the bottom of the frittata set (this takes 1 to 3 minutes). While it's setting, use a spatula to loosen the eggy batter from the sides of the pan. As you do this, you are raising the frittata from above to cool it off so it stays loose. The bottom should set like a pie crust: even and golden, but not brown. The top should still be liquid.
- Move the pan into the oven to cook the top. This should take less than 5 minutes.
- To garnish, shave bottarga over the top (about 1 tsp. per serving); drop a large dollop of sour cream or crème fraîche in the center; drizzle with olive oil and add cracked pepper to taste.
MUSHROOM, CHEDDAR, AND TOAST FRITTATA
Thick cubes of bread make this dish feel like an inside-out egg sandwich.

- Preheat oven to 425 degrees. In a large bowl, whisk together eggs and milk and season with salt and pepper. In a 10-inch oven-safe, nonstick skillet, melt 1 tablespoon butter over medium-high. Add bread and cook, turning, until golden on all sides, about 4 minutes. Transfer to a plate.
- Add remaining tablespoon butter and the mushrooms, and cook until softened, about 4 minutes. Lower heat to medium, add scallion whites, and cook until soft, 3 minutes more. Season. CHALLAH BREAD PUDDING FRITTATA
Steps:
- In a medium bowl whisk together the eggs and half and half until frothy. Add the tarragon, some salt and pepper, and whisk together. Add the cubed challah and let it soak in the egg mixture for about 5 minutes.
- Meanwhile, melt 2 tablespoons butter in a small oven-proof skillet over medium-high heat. Add the ham, peppers and spring onions. Cook, stirring occasionally, until the ham is a bit browned, about 5 minutes. Stir in the remaining butter and spread the ham and vegetables out evenly in the pan. Pour in the challah-egg mixture and let cook for 2 to 3 minutes. Turn the heat to medium-low, cover, and cook until the frittata becomes light and fluffy, about 3 more minutes. Place the pan under the broiler until the top is browned, about 1 minute. Transfer the frittata to a plate and cut into wedges.
- Note: If you don't have a broiler, use a heat proof rubber spatula and carefully flip the frittata over, and cook for 1 minute. Or, melt a tablespoon of butter in a separate skillet until it sizzles. Pour the melted butter over the frittata and place the empty skillet over the frittata pan. Holding both handles, carefully flip the pans over, and cook the frittata on the other side for a minute.
