BREADED BEEF
Our all-time favorite meat item! Everybody who has ever had this has flipped out! It's so easy and make extra and freeze it for a meal in 5 minutes!! Give it a try--I promise you won't be disappointed!

Steps:
- Have your butcher slice the rump roast on the lunch meat slicer (tell him a little thicker than see-through).
- This recipe is nice because it's sliced thin, it's always tender so you can get away with using a little cheaper piece of meat.
- If you can't get it sliced this way, freezer meat for a few hours (about 1/2 frozen) and slice thin slices.
- Mix the eggs and water in a large bowl.
- On a LARGE sheet of foil--mix bread crumbs, garlic powder, salt and grated cheese (garlic and grated cheese-add however much to your taste--these are general measurements). Dip RAW sliced beef in egg and than bread crumbs (I put them on another large sheet of foil-2 pieces side by side and than I separate them with wax paper because I always make double this recipe and freeze some and this makes it easier to get them apart).
- If you run out of egg or bread crumb mixture just make a little more.
- Heat oil in large frying pan, put 2-3 slices in pan and fry until just browned (about 2 minutes the 1 st side and 1 minute the 2nd side).
- Drain on paper towels.
- Add more oil to the pan as needed.
- Serve with a squeeze of sliced lemon. Fantastic hot or room temperature.

- Flatten steaks to 1/2-in. thickness. Cut into serving-sized pieces; set aside. Place flour in a shallow bowl. In another shallow bowl, combine eggs, milk, salt and pepper. Place bread crumbs in a third shallow bowl. Coat steaks with flour, then dip into egg mixture and coat with crumbs. , In a large skillet over medium-high heat, cook steaks in oil until meat reaches desired doneness (for medium-rare, a thermometer should read 135°, medium, 140°, medium-well, 145°), 2-3 minutes on each side.

FRY BREAD TACOS II
A yummy twist to an old favorite. The fry bread makes the difference. It's a popular request at my house. I do up everything but the fry bread in advance, and just heat up before serving. You can also top with other of your favorite taco toppings, such as onion, sour cream, or guacamole. Leftover fry bread can be used as dessert - coat it with cinnamon and sugar, and drizzle with honey.

- Combine beans and 2 tablespoons of picante sauce in a small saucepan over low heat. Cook until heated through, about 5 minutes.
- Combine ground beef and taco seasoning mix in a large skillet over medium-high heat; cook until browned, 5 to 8 minutes. Cover, and keep warm while you prepare the fry bread.
- In a medium bowl, stir together the flour, baking powder, and salt. Stir in milk and mix until the dough comes together. Add more flour if necessary to be able to handle the dough.
- On a floured surface, knead the dough until smooth, at least 5 minutes. Let the dough rest for 5 minutes. Break off 3/4 cup sized pieces of dough, and shape into round discs 1/4 inch in thickness, making a thinner depressed area in the center.
- Heat 1 1/2 inches oil in a large, deep heavy skillet to 365 degrees F (180 degrees C). Fry dough in the hot oil until golden on both sides, about 3 minutes per side. Drain on paper towels.
- Top fry bread with beans, ground beef, lettuce, and Cheddar cheese. Spoon picante sauce on top.

- Note: You may use any thinly sliced steaks for this quick and easy recipe. They should be about 1/8" thick, so that they cook quickly. Sometimes in supermarkets you may see these.
- Rinse fillets and pat dry with a paper towel.
- Pour flour onto a dinner plate and spread over the entire plate.
- Pour olive oil about ¼ inch deep into a large frying pan and heat over medium high heat.
- Sprinkle garlic and salt over fillet and press inches
- Carefully drag fillet through the flour. Turn over and repeat on the other side of the fillet.
- Quickly and carefully place fillet in the hot frying pan.

BREADED FRIED STEAK - MILANESA
Popular throughout Latin America (especially in Uruguay), milanesas are thin cut steaks that have been breaded and fried. They're easy to make and perfect for a quick supper. Start with thinly sliced top round, dip slices in egg and bread crumbs, and fry for a few minutes on each side. You can make milanesas with chicken breasts too (pollo a la milanesa) - just be sure to pound them to a thin, even thickness. Steak milanesas are delicious served with chimichurri sauce.

- Mix the flour, salt, and pepper together in a shallow bowl.
- Mix the breadcrumbs with the oregano and spread onto a plate.
- Whisk the eggs lightly.
- Dredge each steak into the flour, coating both sides.
- Dip each piece into the egg, then place into the breadcrumbs, coating both sides thoroughly.
- Heat 1/2 inch of oil in a large skillet on medium-high heat.
- Fry each steak for about 3-4 minutes on each side, or until breading is crispy and steak is cooked to desired doneness.
- Serve warm, with chimichurri sauce.
