"ON A PASTOR'S BUDGET and with seven children, we didn't have steak very often. But we were just as satisfied with this wonderful dish Mom dreamed up-a country-style "steak" with creamy gravy. It was always a hit with our family.

1 cup water
1 cup cracker crumbs
1 teaspoon salt
3 pounds ground beef
All-purpose flour
2 to 3 tablespoons canola oil
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted

Steps:

  • In a large bowl, combine water, cracker crumbs and salt; add beef and mix well. Press into a 15x10x1-in. baking pan lined with waxed paper. Cover and refrigerate overnight. , Cut the meat into 12 squares. Coat each square lightly with flour. In a large skillet, cook over medium heat in oil, a few pieces at a time, until a thermometer reads 160° and juices run clear; drain. , Remove waxed paper from the baking pan; spread the soup in bottom of pan. Place meat squares in a single layer over soup. Bake, uncovered, at 350° for 10-12 minutes or until heated through; Spoon some soup over each meat square.

I found this one on Web MD's site in the "Recipes Men Love: Healthy Comfort Food" section. My dad is on a Weight Watchers kick so I figured I'd post this for future reference for my Mama. I hope you all enjoy!

2 tablespoons canola oil
6 tablespoons concentrated low sodium chicken broth
1/2 cup honey
1/2 cup low sodium soy sauce
4 green onions, thinly sliced (whites and greens)
1 teaspoon ground ginger or 2 teaspoons minced fresh ginger
1 teaspoon garlic powder or 2 teaspoons minced fresh garlic
2 teaspoons Worcestershire sauce
1 1/2 lbs flank steaks

Steps:

  • Combine canola oil, chicken broth, honey, soy sauce, onions, ginger, garlic powder and Worcestershire sauce in a medium bowl with a whisk; set aside.
  • Remove any visible fat from flank steak. Lightly score the meat with a serrated knife, cutting about 1/4" into the meat in a criss-cross pattern (leave about an inch between cuts) on the top and bottom of the flank.
  • Put the flank in a rectangular plastic container, add the marinade and coat the steak well all over. Cover and marinate the steak all day or overnight, turning occasionally.
  • Heat grill. Grill steak 10-15 minutes each side, basting with marinade, until desired doneness.
  • Use a carving knife to cut diagonally across the grain of the meat into slices of your desired thickness.

Flavorful and easy, this steak is tough to beat. I serve this with brown-and-serve sourdough bread or rolls. If you're really hungry, crumble some additional bacon and add a baked potato. Add candles and a bottle of full bodied red wine (like a cabernet from the Alexander Valley) for a romantic evening.

2 (8 ounce) beef rib-eye steaks, cut 3/4 inch thick
1 teaspoon steak seasoning
3 thick slices bacon
2 teaspoons butter
¼ teaspoon Worcestershire sauce
¾ teaspoon Dijon mustard
½ cup thinly sliced red bell pepper
8 ounces small mushrooms, quartered
2 tablespoons crumbled blue cheese

Steps:

  • Prepare an outdoor grill using charcoal briquettes stacked 2 to 3 deep. Season the steaks on both sides with steak seasoning.
  • While the charcoal heats up, fry the bacon in a skillet over medium-high heat until crisp. Remove from the skillet and drain on paper towels. Leave grease in the pan.
  • When the charcoal is covered with gray ashes, put the steaks on the grill. Cook for 12 minutes, turning once, or to your desired degree of doneness.
  • While the steaks are cooking, stir the butter, Worcestershire sauce and mustard into the bacon grease. Cook and stir over medium-high heat until butter has melted. Add the red bell pepper and mushrooms; cook and stir until tender.
  • To serve, place steaks onto plates. Top with bacon, then blue cheese and then the vegetables. Serve immediately.

1/2 cup olive oil
1/2 cup soy sauce
1 1/2 teaspoons ground ginger

Steps:

  • Place flank steak in large shallow dish (or large food storage bag).
  • Combine marinade ingredients, stirring well.
  • Pour over steak; cover and marinade in refrigerator 8 hours, turning bag or steak occasionally.
  • Drain steak, reserving marinade.
