1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion (fried)
3 cups shredded cheddar cheese
12 scrambled eggs
2 lbs bacon sausage, mixture, cooked and crumbled
3 cups sausage gravy

Steps:

  • 1. I line my slow cooker with a slow cooker bag,.
  • 2. put potatoes in the bottom,.
  • 3. sprinkle with half the cheese,.
  • 4. add the meat mixture,.
  • 5. pour the gravy over the meat mixture,.
  • 6. add the scrambled eggs,.
  • 7. cover with remaining cheese.
  • 8. Cover and cook on high for 2+ hours -- .

1 (8 ounce) package Simply Potatoes Diced Potatoes with Onion
4 ounces cooked bacon, crumbled or 4 ounces bacon bits
8 ounces shredded cheddar cheese
6 eggs, beaten
2 cups milk

Steps:

  • Pour diced potatoes into greased 9"x13" baking pan. Top with crumbled bacon. Sprinkle cheddar cheese evenly over bacon and potatoes. Beat eggs and milk together, then pour over casserole. Place in a preheated oven at 350 degrees. Bake for 30 min or until knife inserted in center come out clean. Remove from oven and let stand 5 min, then serve. Enjoy a quick and easy casserole for breakfast or any time.

1 1/2 cups cooked ham, cubed
8 large eggs, beaten
1 cup sharp cheddar cheese, shredded
1/2 cup pickled jalapeno pepper, sliced

Steps:

  • 1. Evenly spread hash browns in bottom of prepared 9"x 9" pan.
  • 2. layer jalapeno slices over hash browns.
  • 3. spread ham and then cheese over jalapenos.
  • 4. pour beaten eggs evenly over casserole.
  • 5. bake at 350 for 1 hour.

20 ounces Simply Potatoes Diced Potatoes with Onion
2 cups diced ham
1 1/2 cups cheese, of your choice
1 1/2 cups sour cream
1 (8 ounce) can cream of chicken soup

Steps:

  • Mix all ingredients together, add salt and pepper to taste. Bake on 350 degrees for 45 minutes in a covered pan. Serve.

1 (20 ounce) bag Simply Potatoes® Shredded Hash Browns
8 eggs, Slightly Beaten
1 (8 ounce) can diced green chilies
1 (8 ounce) bag shredded three-pepper cheese
1 large tomatoes, Chopped

Steps:

  • Preheat oven to 350 degrees and grease a 9x13 baking pan. Mix together the eggs, diced green chilis and the cheese. Spread the hashbrowns in the bottom of the baking pan and pour the eggs mixture over them. Top with the chopped tomatoes. Bake for 45 minutes or until a knife inserted in the center comes out clean.

2 cups Simply Potatoes Diced Potatoes with Onion
1 (12 ounce) package diced ham or 1 (12 ounce) package cooked & crumbled bacon
3 cups shredded cheddar cheese
9 eggs
1 1/2 cups sour cream

Steps:

  • Preheat the oven to 375 degrees. Grease a 9 x 13 casserole.
  • Pour in the Simply Potatoes for the 1st layer, then top with bacon or ham, then sprinkle on all the cheese.
  • Whisk 9 eggs together in a large bowl, then whisk in the sour cream.
  • Pour the egg mixture over the cheese.
  • Bake for about 35 minutes. or until light brown on top.
  • Let rest 5 minute before cutting into squares.
  • My favorite condiment is salsa to serve with it!
