- Grease a 9x13 inch pan. Add the frozen and shredded potatoes to the bottom of the pan. Sprinkle with salt and pepper.
- In a large bowl, whisk the eggs together. Then add half and half, season salt, cheddar cheese, pepper jack, and chopped ham.
- Pour over the top of the frozen potatoes. Cover with foil and refrigerate for 2 hours or overnight.
- Bake uncovered at 350 degrees for 90 minutes. Let rest for 10 minutes before serving.

- Spray a 9x13-inch pan with cooking spray. Place cubed bread into the bottom of the prepared pan.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Place on top of bread.
- Mix eggs, milk, dry mustard, salt, and pepper together in a bowl and pour over sausage. Top with Cheddar cheese.
- Refrigerate for 8 hours, or overnight.
- Preheat the oven to 350 degrees F (175 degrees C).
- Bake in the preheated oven until set, about 45 minutes. Place foil over top the last 15 minutes to prevent the cheese from hardening.

Steps:
- Place sausage and bacon in two large, deep skillets. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
- Butter one side of six slices of the bread. Placed slices butter side up in the bottom of a 9x13 inch baking pan.
- In a large bowl, stir together cooked sausage and bacon with onion and cheese. Place half of his mixture on top of buttered bread. Then add another six slices of bread (no butter). Add remaining meat/cheese mixture. Beat together milk and eggs; pour over top of casserole. Cover with foil and refrigerate overnight.
- The next morning: preheat oven to 425 degrees F (220 degrees C).
- Bake, covered, in preheated oven for 45 to 60 minutes.

- Cook sausage in a skillet over medium heat, stirring until it crumbles and is no longer pink; drain well.
- Place bread cubes in a lightly greased 9" X 13" baking pan.
- Sprinkle bread evenly with cheese, and top with sausage (or ham).
- Whisk together eggs, milk, salt, pepper, dry mustard and Worcestershire sauce and pour evenly over sausage mixture.
- Cover and chill casserole for 8 hours (may be frozen at this point, and thawed before cooking).
- Let stand at room temperature 30 minutes.

I do not remember where I got this recipe but it did not call for the green onion, and I thought it was too bland so I added that. I have cooked this recipe on TV, a station that covers Southeast, KY and Southwest, VA. I was scared to death but it was fun. All except I had to get up at 3 AM to be at the studio at 7 AM.
