BREAKFAST ON THE RUN
I was looking for an easy way to make sure my 15 year old son would eat a good breakfast on the run. I just wrap up one of these and he enjoys a hot breakfast while walking to the bus stop.

Steps:
- cook sausage links as directed.
- make scrambled eggs (beat egg in bowl cook on medium heat with 1 T. of butter until eggs are solid).
- add season salt to eggs.
- use spatula to "chop" egg in smaller pieces.
- place sausage links in bun.
- top sausage with scrambled egg.
- top egg with grated cheese.
- top cheese with some hot sauce (optional).
- microwave on high for 15 seconds.
- eat right away or wrap it up to enjoy later.

Steps:
- Heat oven to 160C/fan 140C/gas 3. Butter a 22cm square baking tin. Melt the butter, syrup and sugar in a pan. Pour in the oats, cinnamon, coconut, seeds and nuts, mix and pour into tin. Bake for 30-35 mins. Leave to cool for 5 mins, then cut into slices. Will keep for 1 week in an airtight container.

- Fresh Fruit and Yogurt Parfait. Fruit and yogurt parfait is a quick and easy breakfast that is packed full of nutritional goodness. Dice up some of your favorite types of fruit, place in bowls, and drench with delicious natural yogurt or any other healthy topping of your choice.
- Leftovers with Egg and Cheese. Do you still have some dinner left over from the night before? Dish it into a microwave safe container or an oven proof dish; crack one or two eggs over the top of the food; sprinkle on a little bit of grated cheese (Parmesan works well), and cook until egg whites are cooked through.
- Toast with Avocado and Egg. This is a favorite in my family! Lightly toast some whole wheat bread or some rye bread; top with mashed and seasoned avocado, some roasted kale or leftover spinach from last nights dinner, and then on top of that place either one or fried eggs or poached eggs, followed by a light sprinkling of salt and pepper.
- Fruit and Milk Soup. This is such a ridiculously easy breakfast idea, but it is packed full of healthy goodness, and it takes just a few minutes to make.
- Peanut Butter and Banana Dream Smoothie. Put a few ice cubes in a blender; add one medium to large banana; two tablespoons of peanut butter and about 1 cup of almond milk.
- Muesli with Fruit and Yogurt. Pour some dry muesli in a bowl; add some fresh milk or plain greek natural yogurt, and then top with some diced fruit; .
- Turbo Egg Muffins. This is one of my favorite healthy breakfast ideas, but only if I have time to make them on the weekend. Beat 10 eggs in a mixing bowl; add one or two finely chopped onions; a handful of chopped spinach; a finely shredded zucchini and about half a finely chopped bell pepper.
- Pumpkin; Granola and Yogurt Parfait. If you’ve never had pumpkin with Greek yogurt you are going to love this breakfast idea. Simply pour a healthy serving of Greek yogurt in a dish or a suitable container; add I small can of pureed pumpkin and then top with a handful of granola.
- Microwave Berry and Oat Muffins. Place a quarter cup of quick oats in a suitable container and mix in one large egg. Stir in a handful of your favorite berries, and microwave on high for one minute.
- Refreshing Fruit Salad. Variety is the key to a great fruit salad, so try to use as many different fruits as possible. Dice up all your chosen fruits, place in a bowl and add one cup of fresh orange juice.

- Breakfast Casserole. If you read “casserole” and your mind went straight to noodles and bread crumbs, it’s time to rethink. Casseroles can be perfectly healthy, and they’re great for baking in advance and then stashing in the fridge for quick meals later.
- Chicken Drumsticks. You won’t see them on the menu at IHOP, but chicken drumsticks are actually perfect for breakfast. They’re good hot or cold, they’re easy to grab and eat, and you can do almost anything with them in terms of flavor.
