BRIAN'S GERMAN POTATO SALAD
This is the best German Potato Salad recipe. I made a few changes on a recipe originally given to me by my next door neighbor, when I was planning an Octoberfest party. It is a hit every time I serve it!

Steps:
- Place the potatoes into a large pot and cover with salted water. Bring to a boil; reduce heat to medium-low, cover, and simmer until just tender, about 10 minutes. Drain and allow to steam dry for a minute or two; cut into 1/2-inch pieces and place into a large mixing bowl.
- Meanwhile, stir the bacon and onion together in a large skillet over medium heat until the fat has rendered from the bacon and the onion is very tender but not brown, about 15 minutes. Stir in the flour, sugar, and salt; cook for 1 minute. Pour in the vinegar; bring to a simmer and cook until slightly thickened, about 5 minutes.
- Pour the dressing over the potatoes and sprinkle with celery seed and parsley. Stir gently to combine. Serve hot.

- Begin by preparing your vegetables. Peel the potatoes and dice them. Next, dice the onion and chop the parsley. Put the potatoes in a pot with enough water to cover them completely. Cook for about 10 minutes or until tender. Drain them and set them aside to cool down. Next you want to fry the bacon in a deep skilled. Allow to cook until brown and crispy on both sides and remove them from the pan. Set them aside with the potatoes. Next, you want to add the onions to the bacon grease and cook them until they are browned. Add the water, salt, pepper, vinegar, and sugar to the pan and bring to a boil. Now you can add the potatoes and the parsley. Crumble half of the bacon in the pan and continue heating for about 5 minutes. Take your salad and put it in a serving dish. Crumble the remaining bacon over the top and serve hot.
BOB'S PERFECT GERMAN POTATO SALAD
Steps:
- 1. Bring large pot of water to a boil. Add potatoes unpeeled. Cook until tender but still firm, 15 min max. Drain and cool about 15 min and peel with a knife while still pretty warm. Set aside to cool completely and chop.
- 2. Fry bacon in a large skillet until crispy. Set bacon aside on a paper towel and leave grease in pan.
- 3. Add sugar, vinegar, and salt to bacon fat over medium heat. Mix flour and water together in a small bowl and slowly add to skillet. Heat until it thickens.
- 4. Add potatoes, bacon (broken up), scallions and celery salt to skillet and stir until coated and heat until warm. Serve warm from the skillet or bowl. Enjoy!
