BASIC BRINE FOR SMOKING MEAT

Basic Brine for Smoking Meat image

This is a very basic brine recipe for preparing meats and fish for smoking. Add any personal taste preferences to the brine for additional flavor enhancement. I like to add white wine, soy sauce, and various herbs and spices. Anything that you like will work, so experiment at will.

BRINED AND SMOKED SMELTS

Brined and Smoked Smelts image

Provided by Alton Brown

Time 15h30m

Yield 4 to 6 servings

Number Of Ingredients 10

24 smelts, cleaned with head and tails left on and other fins removed
1 cup apple cider vinegar
1/2 cup kosher salt
1/2 cup sugar
1 garlic clove, halved
1 teaspoon juniper berries
1 teaspoon allspice berries
1/2 teaspoon whole black peppercorns
2 to 3 sprigs fresh dill
1 pound ice

Steps:

  • Rinse the smelts in cool running water. Set aside.
  • Place all of the remaining ingredients, except the ice, into the electric kettle. Bring to a boil. Add the ice and stir until the mixture is cooled. Transfer the liquid to a 1-gallon resealable bag along with the smelts. Seal and place in a container so that all of the fish are in the brine. Place in the refrigerator for 30 minutes to 1 hour.
  • Remove the smelts from the brine, rinse and pat dry. Place the smelts onto a paper towel-lined sheet pan, layering with paper towels in between if they won't fit in 1 layer. Allow to dry in the refrigerator overnight.
  • The next day, place the smelts onto racks, belly side down, separating them by at least 1/4-inch and place into a smoker. Turn the smoker on so that it maintains a temperature of 150 to 160 degrees F. Adjust heat, as needed, and cook for approximately 3 hours or until desired level of doneness.

BRINED SMOKED CHICKEN

Brined Smoked Chicken image

Soak your birds in this brine for yummy smoked chicken. Well wrapped and refrigerated leftovers will keep for 3 to 5 days.

Provided by LargePete

Categories     Meat and Poultry Recipes     Chicken     Whole Chicken Recipes

Time 6h20m

Yield 12

Number Of Ingredients 10

1 gallon water
1 ¼ pounds salt
⅔ cup white sugar
¾ cup soy sauce
1 teaspoon dried tarragon
1 teaspoon dried thyme
1 teaspoon ground black pepper
2 (3 1/2) pound whole chickens
kitchen twine
¼ cup olive oil

Steps:

  • Pour water into a large, non-aluminum container; add salt and sugar and stir to dissolve. Add soy sauce, tarragon, thyme, and pepper. Place chickens in the brine and weigh them down with a heavy plate so they stay submerged. Brine at room temperature for 2 hours, or in the refrigerator, 8 hours to overnight.
  • Remove chickens from brine, wash, and pat dry. Reserve brine. Tie the legs together of each chicken using kitchen twine.
  • Prepare a water smoker for cooking by preheating to 200 to 250 degrees F (93 to 120 degrees C). Fill the water pan with hot water and half of the reserved brine. Place chickens, breast side up, on the grill racks. Add wood chips according to manufacturer's directions. Cover.
  • Smoke chickens until no longer pink at the bone and the juices run clear, about 4 hours, brushing chickens with olive oil every 2 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Remove from the smoker and let rest for 10 minutes. Carve and serve.
