BRIX'S MEXICAN EGG PIZZA
My family has been making these for years and while they seem rather simple, they are surprisingly delicious. Serve with salsa and sour cream.

- Heat 1 tablespoon oil in a skillet over medium-high heat. Saute onion in hot oil until golden and soft, 7 to 12 minutes.
- Lightly oil a large skillet and place over medium heat. Place 1 tortilla in the skillet and top tortilla with 1/4 of the refried beans, leaving a space in the center of the tortilla. Crack 1 egg into the center of the tortilla. Sprinkle 1/4 of the onion, 1/4 of the Cheddar cheese, and 1/4 of the chopped green chilies over egg and beans. Place 1 tortilla over the top. Cook, turning once, until egg is set and each tortilla is browned and crispy, 3 to 6 minutes per side.
- Transferred finished "pizza" to a plate and repeat process with remaining tortillas, beans, eggs, onion, cheese, and chilies.

FRIED EGG PIZZA RECIPE BY TASTY
Pizza for breakfast? You bet! This skillet features an egg white, spinach, and mozzarella base encased in a pizza dough crust with dollops of pizza sauce and a sprinkle of oregano and red pepper flakes for that classic pizza flavor. Finished with runny egg yolks and a dusting of Parmesan cheese, it's sure to satisfy any time of day.

- Preheat the oven to 375°F (190°C).
- On a lightly floured surface, roll the pizza dough into a rope 36 inches (1 m) long and ½-inch (13 mm) thick. Arrange the rope around the outer edge of a 12-inch (30.5 cm) nonstick ovenproof skillet and pinch together the ends to form a ring. Cover with a kitchen towel and let stand until the dough is slightly puffed, about 30 minutes.
- Drizzle 1 tablespoon of olive oil into the center of the skillet.
- Lightly beat the egg whites, then pour into the center of the skillet.
- Spoon the pizza sauce over the egg whites, then top with the spinach and mozzarella.
- Sprinkle the oregano, red pepper flakes, salt, and pepper over everything.
- Brush some of the remaining tablespoon olive oil over the dough ring, then drizzle any remaining olive oil over the center.
- Bake the pizza until the dough is golden brown, the cheese has melted, and the egg whites are cooked through, 20-25 minutes. Remove the skillet from the oven and arrange the egg yolks on top of the pizza. Return it to the oven and bake until the yolks are warmed through but still soft, about 5 minutes more (a thin film will develop on top of the yolks).
- Transfer the skillet to a wire rack. Sprinkle evenly with the Parmesan and let cool for 1 minute. Run a spatula around the edges of the skillet to loosen the pizza, then carefully slide it onto a cutting board and slice into 4 large wedges. Serve hot.

EASY MEXICAN PIZZA
These Mexican pizzas are made with Old El Paso™ tortillas, black bean refried beans, salsa, cheese and lots of fresh ingredients.

- Pre-heat the oven to 400°F. Line a baking sheet with foil or use a pizza pan. Place the tortillas on the pan and warm them in the oven for 3 minutes.
- While the tortillas are cooking, heat the beans in a small sauce pan over medium-low heat for 2 to 3 minutes. Stir in 3 Tablespoons of salsa, taco seasoning and salt. Add more salt and pepper to taste.
- Remove tortillas from the oven and spread the beans onto the top side of 5 tortillas. Sprinkle with cheese, add meat if desired and then top with another tortilla. Spread salsa on top of the tortilla and then add cheese. Bake for 5 to 7 minutes, or until the cheese is melted and bubbly.
- Top with fresh ingredients such as tomatoes, sliced olives, diced avocado, sour cream, chopped cilantro and then cut into 4 slices.

- Preheat oven to 425°. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard the drippings, reserving 1 tablespoon in pan., Add onion to drippings; cook and stir over medium-high heat until tender. Remove from pan.
