BROCCOLI, FETA + CHICKEN QUICHE



Broccoli, Feta + Chicken Quiche image

Number Of Ingredients 14

1 1/2 cups all-purpose flour
1 tsp fine salt
1/2 tsp black pepper
1/2 cup unsalted Neilson butter, cold & cubed
75 mL (1/4 cup) ice water
2 tbsp extra virgin olive oil
2 cloves of garlic, minced
1 small onion, chopped
2 cups diced broccoli, blanched
salt & pepper, to taste
125 mL (1/2 cup) 35% Neilson whipping cream
4 large eggs
3/4 cup diced chicken breast
3/4 cup Saputo Feta Cheese, crumbled

Steps:

  • In a large mixing bowl sift together the flour, salt & pepper.
  • Add the butter. Using your hands, work the butter into the flour until a pea sized crumb mixture is formed.
  • Add the water one tablespoon at a time until the dough begins to come together.
  • Shape into a disc & wrap in plastic wrap. refrigerate for 60 minutes, while you prepare the filling.
  • In a skillet over medium heat add the oil, garlic & onions. Cook until the onions begin to turn translucent, about 5 minutes.
  • Add the broccoli. Season with salt & pepper. Cook for an additional 2 minutes. Remove from heat & let cool to room temperature.
  • In a separate large mixing bowl whisk together the cream & eggs until fluffy. Season with salt & pepper.
  • Stir in the chicken, feta cheese & broccoli mixture. Set aside while you roll out the pastry dough.
  • Roll out pastry dough to 1/4 inch thick. Transfer to a 9-inch round pie dish & crimp edges as desired.
  • Pour the filling into the pie shell & smooth the top to evenly distribute filling.
  • Brush crust with egg wash.
  • Bake for 30 minutes, or until the top is golden brown.

This recipe was originally in the "Horn of the Moon Cookbook" - a wonderful Vegetarian cook book - I have modified and changed the recipe adding garlic and using Feta Cheese instead of Sour cream.- Serve this with a green salad and enjoy

2 tablespoons vegetable oil
1 cup chopped onion
1 teaspoon dried thyme (or 2 tsp fresh finely chopped)
1 teaspoon dried basil (or 2 tsp fresh finely chopped)
2 cups finely chopped broccoli, crowns & stems
2 cups sliced mushrooms
5 cloves garlic, chopped
salt
3 eggs, beaten
3/4 cup feta cheese
2 1/2 cups cheddar cheese, grated (I like aged white)
1/2 cup monterey jack cheese, grated
salt & pepper
1 unbaked pie crust

Steps:

  • Preheat oven to 375 degrees F.
  • In the veggie oil, over medium heat, saute the onions, thyme, basil, garlic& Broccoli for apprx 3-5 minutes Add Mushrooms and season with salt.
  • Only saute until the mushrooms are tender, drain liquid.
  • Add the cheeses to the beaten eggs, mix well.
  • Put the broccoli mixture in the unbaked pie shell.
  • Pour in the egg/cheese mixture.
  • Bake 45 minutes or until it is a lovely gold color and all puffy.
  • Let stand for 10 minutes, slice and serve.

1 (9 inch) unbaked pie crust
3 tablespoons butter, divided
1 onion, minced
1 teaspoon minced garlic
2 cups chopped fresh broccoli
1 ½ cups shredded mozzarella cheese
4 eggs, well beaten
1 ½ cups milk
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9-inch deep-dish pie pan with crust.
  • Melt 2 tablespoons butter in a large saucepan over medium-low heat. Add onion, garlic, and broccoli. Cook slowly, stirring occasionally, until vegetables are soft. Spoon vegetables into crust and sprinkle with cheese.
  • Combine eggs and milk. Season with salt and pepper. Stir in remaining 1 tablespoon melted butter. Pour egg mixture over vegetables and cheese.
  • Bake in preheated oven until center has set, 30 to 50 minutes.

1 (9 inch) pie crusts
3 eggs, beaten
2 tablespoons onions, chopped
1 cup milk
1 tablespoon flour
1 teaspoon salt
1 teaspoon pepper
1 cup cheddar cheese, divided
1 1/2 cups fresh broccoli, steamed and chopped
1 cup chopped cooked chicken

Steps:

  • Preheat oven to 375 degrees. Bake crust for 10 minutes or until the bottom is slightly browned. Cool slightly.
  • Cook onions in melted butter until soft. Cool slightly, then whisk together with milk, eggs, flour, seasonings, and 3/4 cup cheddar cheese. Set aside.
  • Sprinkle remaining 1/4 cup cheddar cheese over bottom of crust. Layer chicken and broccoli over the cheese, then pour egg mixture over all.
  • Bake at 375 degrees for 35-45 minutes or until a knife inserted in the center comes out clean. You may want to cover the crust edges with foil for the first 20 minutes.
