BAKED STUFFED VIDALIA ONIONS

Baked Stuffed Vidalia Onions image

Do your best to choose onions that are uniform in size for even cooking. If you don't want to use white wine, you can easily substitute chicken broth. You can also top each onion with a bit of shredded cheese - muenster is a personal favorite.

Categories     Other Appetizers

Number Of Ingredients 9

2 large vidalia (or other sweet variety) onions, about 3/4 lb each
2 Tbsp butter
1/2 tsp salt
1/4 tsp white pepper
1 Tbsp all purpose flour
1/4 c dry white wine
1/4 c half-and-half
1 Tbsp bread crumbs
paprika

Steps:

  • 1. Preheat the oven to 375°F.
  • 2. Trim a slice, about 1/2-inch thick, from the root end of each onion. Peel away the papery skin and place the onions in a covered, microwave-safe dish with about 1/4-inch of water in the bottom. Microwave at 80% power for 4 to 4-1/2 minutes. Remove from the oven, drain off the water and let stand, uncovered, until cool enough to handle.
  • 3. To begin removing the inner layers of the onion, insert a fork into the center through the cut end, about 1-inch deep. Twist to separate the layers, pull upward gently, remove and set aside. Repeat with additional layers until you are left with a hollow shell about 3/8-inch thick. This could be one or two remaining layers, depending on your onion.
  • 4. Chop the reserved onion into 1/2-inch dice. Melt the butter in a large pan over medium heat. Add the onions and cook until softened completely, about 2 minutes. Season with salt and pepper, then sprinkle the flour evenly over the onions, tossing to coat. Continue to cook, stirring constantly, until the flour begins to turn uniformly golden in color, about 3 minutes. Slowly add the white wine and stir to combine thoroughly. Stir in the half-and-half and continue cooking until the mixture is thickened and smooth, about 3 additional minutes. Taste and adjust the seasoning if desired
  • 5. Using a spoon, fill the onion shells with the creamed mixture, pressing down gently with each spoonful. Top with the breadcrumbs, dust with a bit of paprika for color, and place in the oven for 8 to 10 minutes, or until the crumbs have browned.

Honey Roasted Vidalia Onions image

The owner of the company I used to work at sent everyone a 5 lb box of Vidalia onions every year. This was included on a recipe brochure one year from the farm. I was surprised at how much I liked them, and they are healthy too.

Vidalia onions create a lively side dish that everyone will love. From Prevention® Healthy Cooking.

Provided by Betty Crocker Kitchens

Categories     Side Dish

Time 2h5m

Yield 4

Number Of Ingredients 11

4 Vidalia or sweet onions
1/2 teaspoon olive oil
2 medium zucchini, shredded
3 cloves garlic, minced
1 teaspoon dried thyme, crushed
1 teaspoon dried basil, crushed
3 tablespoons Progresso™ plain dry bread crumbs
1 1/2 tablespoons chopped toasted pine nuts
3 tablespoons freshly grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 400°F. Line a small baking pan with foil.
  • Cut 1/2" off the top of each onion; slightly trim the bottoms so that the onions stand upright. Place the onions, cut side up, in the prepared baking pan and coat with cooking spray. Bake for 1 hour, or until soft. Set aside for 15 minutes, or until cool enough to handle.
  • Reduce the oven temperature to 350°F.
  • Remove and discard the onion peels. Using a spoon, scoop out the onion centers, leaving a 1/2" shell. Chop the centers and reserve 1 cup for the stuffing; save the remainder for another use.
  • Heat the oil in a large nonstick skillet over medium heat. Add the zucchini, garlic, thyme, basil, and the 1 cup chopped onions. Cook for 6 minutes, or until the zucchini is softened and most of the liquid has evaporated. Remove from the heat and stir in the bread crumbs, pine nuts, 2 1/2 tablespoons of the cheese, salt, and pepper.
  • Divide the filling among the onion shells. Place the onion shells in the same baking pan and top with the remaining 1/2 tablespoon cheese.
  • Bake for 20 minute, or until golden.

SEAFOOD STUFFED VIDALIA ONIONS

Seafood Stuffed Vidalia Onions image

A great side dish to serve at your next fishfry, this is also elegant enough for a dinner party. You can use pre-cooked flounder or cod if you desire or if you have an allergy to shellfish. Just use a fork to flake, seperating the meat. This is a spin-off variation of our wonderful Recipe #329528. :)

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 12

1/2 tablespoon olive oil
1/2 tablespoon butter
1 garlic clove, minced
1 celery rib, chopped fine
1/2 red bell pepper, chopped fine
2 ounces shrimp, chopped fine
1/4 teaspoon kosher salt (to taste)
1/4 teaspoon Old Bay Seasoning, to taste (or cayenne pepper)
2 ounces lump crabmeat
2 tablespoons seasoned bread crumbs, more if needed
4 medium vidalia onions (or other sweet onions)
1/2 cup chicken broth

Steps:

  • Preheat oven to 350°F Peel the onions and cut off tops. Using a sharp knife, score center of each onion. Using a small spoon, scoop out center leaving the two outer layers intact to create a 'bowl' (similar to gutting a pumpkin. Save the insides for another recipe). Place shells into an 8" baking dish and set aside.
  • MAKE STUFFING: In a sauté pan, heat the olive oil and butter. Add the garlic, celery, and bell pepper. Sauté for 2 minutes, or until the vegetables are softened.
  • Add the shrimp and season with salt and Old Bay (to taste). Sauté for 2 minutes. Remove from the heat and place mixture into a bowl. Gently stir in the crabmeat, then the bread crumbs a little at a time, adding more as needed to gently bind. Set aside to cool.
  • ASSEMBLY: Spoon stuffing evenly into onions (do not pack too tightly, just lightly press down into the onions). Pour broth over and around onions. Cover dish and bake for 45-50 minutes or until onions are tender. Remove cover and continue baking for an additional 5-10 minutes to lightly brown the tops.
