A perfect mix of potatoes and broccoli. I used cream of mushroom soup to make a slight change in taste, which amazingly worked well for the recipe.

1 (10 ounce) bag frozen broccoli
1 (8 ounce) can condensed mushroom soup
6 cups mashed potatoes
1 cup of grated cheese
salt and pepper
paprika
garlic powder
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Cook potatoes until tender and mash them.
  • Cook broccoli until tender.
  • Dot casserole dish with butter or mushroom.
  • Add broccoli.
  • Top the broccoli with the mushroom soup and grated cheese.
  • Add the mashed potatoes on top.
  • Sprinkle with salt, pepper, paprika, and garlic powder.
  • Bake in a 350° F oven for 30 minutes.

2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
2 cups milk
1 (3 ounce) package cream cheese, diced
⅓ cup shredded Swiss cheese
1 (12 ounce) package frozen hash brown potatoes
1 (12 ounce) package frozen chopped broccoli
½ cup bread crumbs
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large saucepan, melt 2 tablespoons butter. Stir in flour and salt. Add milk and stir until bubbly. Add cheese, and stir until all of the cheese is melted. Stir in potatoes and heat thoroughly.
  • Pour half of the mixture into a 10x6 inch baking dish.
  • Cook broccoli according to package instructions; drain well. Layer broccoli over the potatoes in the baking dish. Pour the remaining potato mixture over the broccoli. Sprinkle the bread crumbs and 1 tablespoon melted butter over the top of the casserole.
  • Bake at 350 degrees F (175 degrees C) for 20 to 35 minutes; or until bubbly and browned lightly.

8 cups broccoli florets
1/4 cup butter, cubed
2 tablespoons all-purpose flour
1 small onion, finely chopped
1-1/4 cups whole milk
4 cups shredded Swiss cheese
2 large eggs, beaten

Steps:

  • In a saucepan, cook broccoli until crisp-tender; drain and set aside. In another saucepan, melt butter; add flour. Cook and stir until thickened and bubbly. Stir in onion. Gradually add milk; bring to a boil and cook for 1 minute. Remove from the heat; stir in cheese, eggs and broccoli. Pour into a greased 2-qt. baking dish. Bake, uncovered, at 325° for 30 minutes.

My family loves this casserole. It always turns out creamy. It is a comfort food for us and we love to have it on a cold winter night. On the WW plan it is core if you omit the cheddar cheese.

1 cup broccoli, chopped
1/4 cup diced onion
1/4 cup fat-free cottage cheese
1/4 teaspoon dill weed
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup fat free sour cream
1 1/2 ounces cheddar cheese, shredded

Steps:

  • Quarter potatoes, cover with water and bring to a boil. Reduce heat; simmer 20 minutes or until tender.
  • Drain potatoes, reserving 3/4 cup of cooking liquid.
  • Return potatoes and reserved liquid to pan; mash with a potato masher until slightly chunky.
  • Add broccoli, onion, cottage cheese, dill weed, salt, pepper and sour cream.
  • Spoon mixture into sprayed casserole dish.
  • Bake at 375 for 35 minutes. Sprinkle with cheese and bake 5 minutes longer.

  • Preheat oven to 375 degrees F (190 degrees C).

2 pounds potatoes, peeled and thinly sliced (about 4 cups)

  • Preheat oven to 350°. In a Dutch oven, heat butter over medium-high heat. Add onion and garlic; cook and stir until tender, 2-3 minutes.
