This fish fillet recipe uses the broiler, an underused part of our ovens. It allows you to easily make a recipe that tastes like grilled fish, without the need for a barbecue or indoor grill.

1/4 cup butter ( or a good quality vegetable oil)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon paprika
1 tablespoon lemon juice (freshly squeezed)
1 1/2 pounds fish fillets (see notes below)
chopped fresh parsley

Steps:

  • Preheat the oven on the broil setting.
  • Heat the butter in a small skillet and stir in the salt, pepper, paprika and lemon juice. Arrange the fish on a greased rack in a broiler pan (thin fillets may be placed in the pan without the rack). Brush the fillets with the seasoned butter.
  • Broil 4-5 inches from the source of heat until the fish flakes with a fork, about 5 to 10 minutes depending on the thickness of the fish fillets. Thick fillets should be turned about halfway through the cooking period.
  • Sprinkle with chopped fresh parsley and serve with lemon or lime wedges.

4 orange roughy, red snapper, catfish or trout fillets (6 ounces each)
6 tablespoons butter, melted, divided
1 tablespoon all-purpose flour
Paprika
Juice of 1 lemon
1 tablespoon minced fresh parsley
2 teaspoons Worcestershire sauce

Steps:

  • Place fish on a broiler rack that has been coated with cooking spray. Drizzle 3 tablespoons butter over fillets; dust with flour and sprinkle with paprika. , Broil 5-6 in. from the heat for 5 minutes or until fish just begins to brown. 1/4 cup orange juice
1 tablespoon butter
3 tablespoons olive oil
salt and pepper
1/2 cup diced fresh tomato (, I peel and seed them)
4 skinless boneless white fish fillets (I like red snapper)

Steps:

  • Preheat broiler.
  • In saucepan, reduce orange juice to 1/2.
  • Add butter, 2 T olive oil, salt and pepper.
  • Blend well, add tomatoes.
  • Brush fish on both sides with remaining olive oil.
  • Salt and pepper.
  • Arrange fish in broiler pan.
  • Broil, 3 inches from heat for 3-4 minutes, until just cooked through.

3/4 cup fresh orange juice
1 tablespoon unseasoned rice vinegar
1 tablespoon olive oil
4 (6- to 7-ounce) white fish fillets, each about 3/4-inch thick
1/4 teaspoon salt, or to taste
1/8 teaspoon freshly ground pepper, or to taste
1 tablespoon tequila
2 tablespoons cold unsalted butter, cut into 4 pieces
2 tablespoons chopped fresh cilantro

Steps:

  • 1. In a small saucepan, boil the orange juice and vinegar until reduced to about 1/3 cup. Reserve off heat. 2. Heat the oil in a large nonstick skillet and cook the fish 3 to 4 minutes per side or until it is golden brown on the outside, opaque but still moist inside, and just barely flakes when tested with a fork. Season with salt and pepper. Remove the fish to a serving platter. 3. Add the tequila to the skillet and bring to a boil, scraping up any browned bits. Add the reserved orange juice reduction to the same skillet and bring to a boil. Immediately reduce the heat to low and add the butter, 1 piece at a time, whisking just until melted. 1 lemon, juiced

1 teaspoon ground black pepper
½ teaspoon dried parsley
3 cloves garlic, minced
6 (4 ounce) fillets cod
2 tablespoons lemon pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a medium saucepan over medium heat. Mix in lemon juice, salt, pepper, parsley flakes, and garlic. Bring to a boil. Cook and stir about 10 minutes, until thickened.

This life-changing method is adopted from a former chef and current fishmonger, Mark Usewicz of Mermaid's Garden in Brooklyn, who also teaches cooking classes in topics like "How to Cook Fish in a New York City Apartment." The cooking time is so short that the smell - which, if your fish is fresh and not funky, should not be overpowering - will dissipate quickly. And in the meantime, you have an easy dinner of tender fish with a toothsome crust, anointed with nutty, lemony brown butter and perfumed with herbs. You can use virtually any fish fillet, skin on or off, as long as it is not too thick. If the butter is browning too fast, reduce the heat and add a nut of cold butter to prevent scorching, or squeeze in the juice of half a lemon.
