MAPLE CINNAMON ROASTED CHICKPEAS RECIPE BY TASTY
Here's what you need: chickpeas, olive oil, cinnamon, sea salt, maple syrup

Steps:
- Preheat oven to 400°F (200°C).
- Carefully dry the chickpeas. Removing the skins is optional and they will come off easily. The drier you get them, the crunchier they'll be!
- In a medium bowl, add dried chickpeas, olive oil, maple syrup, salt and cinnamon. Toss well to coat evenly.
- Spread chickpeas out on a parchment paper-lined baking sheet.
- Roast for 15-20 minutes.
- Mix around on baking sheet and roast for additional 15-20 minutes, or until browned.
- Cool for 5-10 minutes.
- Enjoy!

BROILED PLUMS WITH MASCARPONE CREAM
A sprinkling of brown sugar is transformed into a sweet, syrupy topping when the plums are heated under the broiler. Choose fruit that is ripe but not too soft (the flesh should yield to gentle pressure). If you prefer the tart taste of red plums, use them instead of black ones.

- Preheat broiler. Place plum halves, cut sides up, in a single layer in an 8-inch square baking dish. Pour brandy evenly over plums, and sprinkle with 1/4 cup sugar. Broil until plums are soft and sugar is caramelized, 8 to 10 minutes.
- Meanwhile, put mascarpone, cream, and remaining 2 tablespoons sugar in the bowl of an electric mixer fitted with the whisk attachment; beat until soft peaks form, about 2 minutes. Top broiled plums with whipped mascarpone cream.
BRANDIED PLUMS
These plums can be eaten right out of the jar, or used to make all sorts of wonderful desserts. The syrup is heaven, a gorgeous red-purple and is lovely to drink as a syrup or to mix with something for a cocktail--it is particularly delicious with champagne.

Steps:
- Boil a stockpot of water, as deep as the shoulder of a 2-quart jar with a hinged lid.
- Wash and stem the plums and prick several holes around the stem ends.
- Pack plums in the jar.
- Quarter and pit and the plums that will not fit in the jar and then re-pack the jar, interspersing the whole plums with the plum quarters.
- Add the cinnamon stick.
- In a two quart saucepan, bring the sugar, salt and 1 cup of water to a boil, then turn to low and simmer for ten minutes, stirring occasionally.
- Let the syrup cool for ten minutes, then stir in the brandy and immediately pour the liquid into the jar of plums, filling the jar up to a half inch from the rim.
- Partly close the jar, leaving a gap for steam to escape and place the jar in the stockpot of boiling water for ten minutes.
- Carefully remove the jar with a jar lifter or two pairs of tongs and close the lid tightly.
- Cool to room temperature.
- Refrigerate up to two weeks.
MAPLE & STAR ANISE ROASTED PLUMS
You can use just one variety of plum for this simple dessert, or choose a mixture of colours and flavours - it's up to you

- Heat oven to 180C/fan 160C/gas 4. Arrange the plums in a single layer in a 1-litre gratin dish. Pour over orange juice, tuck star anise among the plums, drizzle over the maple syrup, then gently stir. Bake for 30-35 mins until the fruit is soft but not collapsed. Serve warm or cold with mascarpone or yogurt on the side.
- The roasted plums can be kept in the fridge for up to 3 days.

Steps:
- Preheat oven to 450°F.
- Brush 1 side of each bread slice with butter and arrange slices, buttered sides up, on a baking sheet. Stir together sugar and cinnamon and sprinkle evenly over bread. Toast bread in middle of oven until crisp and golden brown on top, about 7 minutes. Halve toasts diagonally.
- Preheat broiler.
- Dip cut side of each plum half in maple syrup, then put plums, cut sides up, on a buttered broiler pan. Broil plums 4 to 5 inches from heat until golden, 3 to 5 minutes. Heat remaining syrup over moderate heat until hot.
- Serve plums on cinnamon toasts, drizzled with remaining syrup.
