2 tablespoons butter
4 plum tomatoes, seeded and finely chopped
2 tablespoons minced dill fronds

Steps:

  • Heat butter until golden, saute tomatoes just to warm; add dill off heat, season with salt and pepper. To assemble hot meal: Place a bed of rice on a plate; top with salmon steak and spoon any steaming juices over salmon. Garnish with warm tomato sauce.

Number Of Ingredients 5

2 medium heads garlic, separated into cloves, unpeeled
1/4 cup olive oil
4 pounds plum tomatoes, halved lengthwise
1 tablespoon red wine vinegar
2 teaspoons honey

Steps:

  • Preheat oven to 350°F. Combine garlic and oil in small glass baking dish. Cover with foil and bake until garlic is very tender, about 40 minutes. Using slotted spoon, transfer garlic to work surface; reserve garlic oil. Peel garlic cloves.
  • Preheat broiler. Line 2 rimmed baking sheets with foil. Brush foil with some of reserved garlic oil. Arrange tomatoes, cut side down, on prepared sheets. Working in batches, broil tomatoes until skins are slightly charred, watching closely to avoid burning, about 10 minutes. Cool. Remove tomato skins and discard. Place tomatoes and any juices from baking sheets in processor. Add garlic, vinegar, honey and any remaining garlic oil. Puree sauce until smooth. Transfer to bowl. Season to taste with salt and pepper. (Can be prepared 2 days ahead. Cover and refrigerate.)

2 tablespoons olive oil
2 tablespoons balsamic vinegar
4 ripe tomatoes, sliced
3 tablespoons mayonnaise
½ teaspoon dried parsley
¼ teaspoon dried oregano
¼ teaspoon black pepper
3 tablespoons grated Parmesan cheese, divided
4 slices bread, lightly toasted

Steps:

  • Preheat oven to broil.
  • In a shallow bowl, whisk together the olive oil and vinegar. Marinate the tomatoes in the mixture, stirring occasionally.
  • Meanwhile, in a small bowl, combine mayonnaise, parsley, oregano, black pepper and 4 teaspoons Parmesan cheese. Spread mixture on each slice of toasted bread. Place marinated tomatoes on 2 slices and sprinkle with remaining Parmesan cheese.
  • Place on a baking sheet and broil for 5 minutes, or until cheese turns golden brown. Serve immediately, open faced or closed.

I had these once when I was in the hospital and been making my version of them ever since. Best part is they are not fattening.

Number Of Ingredients 6

4 beefsteak tomatoes (or any large)
2 tablespoons extra virgin olive oil
1/2 cup seasoned bread crumbs or 1/2 cup plain breadcrumbs
1/2 cup mixed Italian herbs (such as basil, oregano, thyme, parsley)
8 1/4 teaspoons unsalted butter
salt & freshly ground black pepper

Steps:

  • Turn on your broiler. A toaster oven with broiling ability is great or a George Foreman Grill.
  • Remove the cores of the tomatoes then cut them in half (horizontally).
  • Place cut side up: then rub Olive oil over cut side (use fingertip).
  • Sprinkle bread crumbs on next.
  • Sprinkle Herb seasonings on and salt/pepper.
  • Then place 1/4 teaspoon of unsalted butter on each half.
  • Broil until tomato is hot completely.
  • ^May add cheese or mushrooms when nearly done, but don't get them to close to burners in oven.

1 teaspoon ground black pepper
4 (6 ounce) salmon steaks
2 tablespoons mayonnaise
2 tablespoons lemon juice
1 teaspoon Dijon mustard
¾ teaspoon dried dill weed
4 lemon wedges

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking pan with aluminum foil.
  • Sprinkle pepper on both sides of salmon steaks. Place on the prepared baking pan.
  • Broil salmon under the preheated broiler until it flakes easily with a fork, 3 to 5 minutes per side.
  • While salmon is cooking, stir mayonnaise, lemon juice, Dijon, and dill together in a small bowl until a smooth sauce is achieved.
  • Portion salmon steaks on a plate, spoon sauce over top, and garnish with lemon wedges.
