Buttery Broiled Salmon with Lemon image

½ cup freshly squeezed lemon juice
¼ cup salted butter, melted
2 tablespoons grated yellow onion
1 tablespoon honey
1 teaspoon minced fresh dill
½ teaspoon garlic powder
½ teaspoon freshly ground black pepper, or more to taste
salt to taste
4 (5 ounce) salmon fillets
1 tablespoon canola oil
4 slices lemon, or to taste

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Whisk lemon juice, melted butter, onion, honey, dill, garlic powder, and 1/2 teaspoon pepper together in a medium bowl.
  • Season both sides of salmon fillets with salt and pepper.
  • Coat a cast iron or oven-safe skillet with oil. Lay each fillet in the cold skillet and heat over high heat for 2 minutes. Turn off the heat and brush or spoon lemon glaze on top of each fillet.
  • Transfer skillet to the preheated broiler and cook, periodically moving the skillet, until fillets flake easily with a fork and are a little caramelized around the edges, 5 to 6 minutes. Serve with lemon slices.

3/4 cup maple syrup
1/4 cup soy sauce
4 (6-ounce) salmon fillets, skin removed
1/4 cup coarsely ground black pepper (Grind it yourself, or purchase "cracked" pepper at your grocery store)
1/2 teaspoon peanut (or other vegetable) oil, or a spritz of oil spray

Steps:

  • In a re-sealable bag or a small deep bowl, mix maple syrup and soy sauce. Arrange fillets so that marinade completely covers fish. Marinate in the refrigerator for as long possible (a minimum of 4 hours, but ideally 24 hours to do it justice).
  • Preheat oven to 500 degrees F.
  • Rub oil on a 10 by 10-inch sheet of aluminum foil.
  • Place pepper on a small plate. Remove salmon from marinade and pat topside only into cracked pepper to coat. Place fillets, pepper side up, on foil.
  • Bake on the top rack of the oven for approximately 7 minutes. (Syrup may cause fish to smoke when cooking, do not be alarmed.) Salmon can also be grilled directly over hot coals for about 3 minutes per side. But do not even think about using a microwave. Avoid overcooking the fillets. Salmon is best when the color has turned to a pale pink, but the fish is still moist throughout. Serve immediately on warmed plates.

1/4 cup chopped onion
1 tablespoon olive oil
1/2 cup dried lentils, rinsed
1/2 cup dried green split peas

2-1/2 cups water

1/2 teaspoon pepper
2 tablespoons lemon juice
SALMON:
4 salmon fillets (4 ounces each)
Butter-flavored cooking spray
1/4 teaspoon salt

Steps:

  • In a small saucepan, saute carrot and onion in oil until tender. Add the lentils, peas, garlic and capers; cook and stir 3 minutes longer., Add the water, salt and pepper. Bring to a boil. 2 pounds salmon, skinned and deboned
2 tablespoons olive oil
1 lemon
½ tablespoon chopped fresh dill, or more to taste
½ tablespoon garlic powder, or more to taste
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Rub salmon down in olive oil. Cut your lemon in half and set 1 half off to the side. Cut the other half into 1/4-inch thick slices. Lay them on a broiler pan and lay the salmon on top of them. You just need enough to cover the bottom of the salmon so it's not touching the pan. Sprinkle with dill, garlic powder, salt, and pepper. Lightly squeeze the remainder of the lemon over the whole salmon; not too much, you don't want your seasoning to run off.
  • Cook in the center of the preheated oven on a low broil until easily flaked with a fork but still juicy, 15 to 20 minutes.

cooking spray
2 teaspoons grated lime rind
1/2 teaspoon kosher salt
1/2 teaspoon cracked black pepper
1 garlic clove, minced
lime wedge (optional)

Steps:

  • Preheat broiler.
  • Place fish, skin sides down, on a broiler pan coated with cooking spray. Combine remaining ingredients except lime wedges; sprinkle over fish. Broil 7 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness. Serve with lime wedges, if desired.
  • Quinoa-vegetable salad: Combine 1 1/4 cups fat-free, less-sodium chicken broth and 3/4 cup uncooked quinoa in a medium saucepan; bring mixture to a boil.
