BROWN BUTTER PEACH CRUMBLE BARS



Brown Butter Peach Crumble Bars image

These delicious peach crumble cookie bars are even better topped with a scoop of ice cream.

1/2 cup butter
1 roll (16.5 oz) refrigerated Pillsbury™ Sugar Cookie Dough
1/3 cup plus 3 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
3 cups frozen sliced peaches, thawed and drained, from two 10-oz bags, coarsely chopped
1/4 cup packed brown sugar
2 teaspoons lemon juice
1/2 cup powdered sugar
2 teaspoons water

Steps:

  • Heat oven to 350°F. Line 9-inch square pan with foil, allowing some to hang off edge; spray with cooking spray.
  • In 2-quart saucepan, heat butter over medium heat 2 1/2 to 3 minutes, stirring constantly, until butter begins to brown and smells nutty. Remove from heat; cool 5 minutes. Transfer to small microwavable bowl.
  • In large bowl, break up cookie dough. Stir in 1/3 cup of the flour, 1/4 teaspoon of the cinnamon and 1/4 cup of the browned butter. (DO NOT EAT RAW COOKIE DOUGH AFTER COMBINING WITH FLOUR.) Press 1 1/4 cups of the dough mixture evenly in bottom of pan to make crust. Bake about 20 minutes or until golden brown and center is set; cool 10 minutes.
  • Meanwhile, in same 2-quart saucepan, add peaches, remaining 3 tablespoons flour, remaining 1/4 teaspoon cinnamon, the brown sugar, lemon juice and 2 tablespoons of the browned butter. Stir until peaches are thoroughly coated. Cook over medium heat 1 to 2 minutes, stirring constantly, until thickened. Spread cooked peach mixture on top of baked cookie base.
  • Crumble remaining dough mixture on top of peach layer. Bake 32 to 35 minutes or until dough is set and light golden brown. Cool completely, about 2 hours.
  • In small microwavable bowl, heat remaining 1 tablespoon browned butter uncovered on High 10 to 15 seconds or until melted. Stir in powdered sugar and water. If necessary, microwave uncovered on High 5 to 10 seconds or until thin enough to drizzle. Drizzle on top of bars. Cut into 4 rows by 3 rows.

1 ½ cups all-purpose flour
½ cup white sugar
½ teaspoon baking powder
1 pinch salt
10 tablespoons cold unsalted butter, cut into cubes
1 large egg yolk
1 tablespoon cold water
2 cups fresh peach slices, or more to taste
½ cup white sugar
2 tablespoons all-purpose flour
1 tablespoon lemon juice
1 teaspoon vanilla extract
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat an 8x8-inch baking pan with cooking spray.
  • Whisk flour, sugar, baking powder, and salt together in a bowl. Next, cut in the cold butter using 2 forks or a pastry cutter then slowly mix in the egg yolk and cold water. Don't worry if the dough seems really crumbly; it should be!
  • Press 1/2 of the crumble mixture into the prepared pan to make the crust. Save the rest for the top of the bars.
  • Stir together peach slices, sugar, flour, lemon juice, vanilla extract, cinnamon, and nutmeg until combined. Evenly add peach filling to the top of the crust.
  • Sprinkle the remaining crumble over the peach filling.
  • Bake in the preheated oven until golden brown and set, 30 to 38 minutes. Cool bars to room temperature, then cut and serve.

3/4 cup packed brown sugar
Dash salt
1-1/3 cups all-purpose flour
FILLING:
2 tablespoons all-purpose flour
1 tablespoon brown sugar
1 teaspoon ground cinnamon
4-1/2 cups fresh or frozen sliced peeled peaches (about 20 ounces), thawed and drained
1/2 cup chopped pecans, toasted

Steps:

  • Preheat oven to 350°. Beat butter, brown sugar and salt until blended; beat in flour until crumbly. Reserve 1 cup mixture for topping. Press remaining mixture onto bottom of a greased 8-in. square baking pan. Bake until lightly browned, 12-15 minutes. Cool on a wire rack., For filling, mix flour, brown sugar and cinnamon; toss with peaches. Spread over crust; sprinkle with pecans. Top with reserved topping., Bake until topping is golden brown, 35-40 minutes. Cool on a wire rack. Cut into bars.

  • Make the peach butter: Combine all ingredients in a large pot over medium-high heat on the stovetop. Stir occasionally, until the peaches have cooked down and are very tender (20-25 minutes). Use a hand blender or carefully transfer to a regular blender and blend until smooth. Return the mixture to the pot, and continue to cook over medium/low heat, stirring occasionally, until thickened (40-45 mins). Let cool slightly, and pour into a jar or tupperware container. Store in the fridge for up to 2 weeks. Yield - 2 cups peach butter.
  • Make the bars: Preheat the oven to 350 degrees. Line an 8x8 pan with parchment paper and set aside. Mix together the flour, oats, brown sugar, baking soda, salt, cinnamon, and nutmeg. Add the melted butter, and stir until you have a crumbly mixture. Reserve 1 cup of the mixture for the top of the bars. Press the rest of the mixture into the bottom of prepared pan. Bake for 12 minutes. Let cool for 10 minutes (This is a good time to pour your peach butter into jars!). Evenly spread one cup of the peach butter over the baked crust. Sprinkle the reserved 1 cup of crumble mixture over the top of the peach butter. Return to the oven and bake for 24-27 minutes - the topping will look cooked and lightly browned.
  • Serve + Store: Let cool completely before cutting into bars, if you want nice neat squares. If not, dig in! Store leftover bars at room temperature for up to 3 days.
