Sticky cinnamon brown sugar breakfast ring image

This sticky cinnamon brown sugar breakfast ring is great for feeding a crowd over the holidays. Served with coffee, it's the perfect start to the day.

1 x Dough ((recipe link below) )
¾ cup butter (softened)
1 cup brown sugar
2 tsp ground cinnamon
1 cup brown sugar
½ cup water
2 tsp ground cinnamon
pinch salt

Steps:

  • Make dough according to recipe.
  • Mix together the butter, brown sugar and cinnamon.
  • Pre-heat the oven to 180ºC and line a baking sheet with baking paper.
  • Once the dough has risen, roll it out to approximately 2cm thick (on a floured surface) then spread over the brown sugar mixture.
  • Roll into a tight coil then cut off the edges. Make a slit, all the way down the dough then braid the two halves together. Bring the edges together and pinch to form a ring.
  • Place the breakfast ring on the prepared baking sheet and place in the oven.
  • Allow to bake for 35-45 minutes or until the ring is golden brown and cooked through.
  • In the meanwhile, combine all the syrup ingredients in a saucepan and allow to cook for 10 minutes.
  • When the ring is baked, remove from the oven and brush with the syrup. Allow to cool for 15 minutes then slice and serve.

1 egg
1/2 cup sour cream
1/2 teaspoon vanilla extract

TOPPING:
1/4 cup all-purpose flour
1/4 cup packed brown sugar

GLAZE:
1/2 cup confectioners' sugar
1 to 2 teaspoons 2% milk

Steps:

  • In a small bowl, cream butter and sugar. Beat in egg. Beat in sour cream and vanilla. Combine the flour, baking powder, baking soda and salt; add to creamed mixture. Stir in chocolate chips. Pour into an 8-in. fluted tube pan coated with cooking spray., For topping, combine the flour, brown sugar and cocoa in a bowl. Cut in butter until mixture resembles coarse crumbs. Stir in pecans; sprinkle over batter. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack to cool completely., In a small bowl, combine glaze ingredients until smooth. Drizzle over cake.

1 recipe Basic Sweet Dough
1 recipe Chocolate Lover's or Cinnamon Nut or Fruity Cream Cheese Filling
GLAZE:
1 cup confectioners' sugar
1 tablespoon butter, softened
1/2 teaspoon vanilla extract
2 to 3 tablespoons milk

Steps:

  • Turn dough onto a lightly floured surface. Roll into a 15x12-in. rectangle. Spread filling to within 1/2 in. of edges. (If using Fruity Cream Cheese Filling, spread with cream cheese mixture; set jam aside.) Roll up, jelly-roll style, starting with a long side; pinch seam to seal. place, seam side down, on a greased 12-in. pizza pan; pinch ends together to form a ring. With scissors, cut from outside edge two-thirds of the way toward center of the ring at 1-1/2-in. intervals (see photos below right). Separate pieces; slightly twist to show filling. Cover and let rise in a warm place until doubled, about 45 minutes. (If using Fruity Cream Cheese Filling, place 1 teaspoon of jam in the center of each slice.) 2 large vidalia onions, peels and cut into 1/2 inch rings (do not separate rings)
3 tablespoons sriracha garlic sauce
1 1/2 cups light brown sugar
16 slices bacon (thinnest cut you can find, which is usually the cheapest)
wooden skewer (optional)

Steps:

  • Preheat oven to 400F, rack in the middle. Line a baking sheet with foil and place a cooling rack on top. Lightly spray the cooling rack.
  • Place the brown sugar in a pie tin.
  • Place the Sriracha in a bowl.
  • Gently separate the onion rings leaving 2 rings together (you want to double up on the onions when you wrap them). For this dish you want the larger rings. The smaller, inner rings you can set aside and use in another dish.
  • Take 2 strips of bacon and coat each side with brown sugar (doesn't have to be caked on but coated evenly).
  • If your hands are sensitive, put on plastic gloves and using a pastry brush or rubber tipped brush, baste the Sriracha on all sides of the onion rings (leaving the 2 together).
  • Starting at one end of the bacon, snuggly but gently wrap the bacon around the onion ring slightly overlapping itself. You should be able to get half way around (again, depends on how big your rings are).
  • Take the second piece of bacon and place one end over top of the previous piece of bacon (where you left off) and continue wrapping until you have completely wrapped the onion ring in bacon. If you wish at this point you can skewer the bacon in place.
  • Place end side down on the rack and continue wrapping the rest of the rings. For the smaller rings use 1 1/2 slices of bacon. You really don't want to overload this with bacon as you want the bacon to cook evenly.
  • Once all the rings are wrapped, place in the oven and bake for 20 minutes. Using tongs GENTLY flip over.
  • Cook for another 15-20 minutes. The last 3 minutes the rings may be broiled for a charred appearance.
  • Remove from the oven and immediately plate. They will be soft so be careful but the bacon will crisp up and they will become crispy and crunchy.
  • Side note: To help with cleanup, have a sink of hot soapy water ready that you can immediately put your cooling rack inches Don't let this stuff dry on the rack as it's a pain to get off. Soaking it for 15 minutes will take it off really easily.

Based on the classic "Ham with red-eye gravy". The glaze may seem pasty and messy when you are putting it on but don't worry it lends a lovely color and flavor to the exterior of the ham. Don't let the title fool you, the majority of the cooking for this delicious ham is poaching on top of the stove. This keeps the ham very moist and the water method draws out the salt in the ham rather than concentrating it. Dean and Deluca recipe.

12 -14 lbs ready-to-eat smoked ham
1/2 cup brown sugar
1/2 cup cider vinegar
1 tablespoon Dijon mustard
1 cup strong black brewed coffee
1 cup breadcrumbs

Steps:

  • Place the ham in a very large stockpot and place water in the pot until it just covers the ham. Put the pot on the stove and turn the heat on high. When the water begins to boil, reduce heat to low and let the ham poach for 1 1/2 hours.
  • While the ham is cooking prepare the glaze. Combine the brown sugar, vinegar, mustard, and black coffee in a bowl, and stir with a fork until the sugar is dissolved. Add the breadcrumbs and blend in (The glaze will become somewhat pasty as the breadcrumbs absorb the liquid.).
  • Preheat oven to 400 degrees.
  • Remove the ham from the pot of water and place in a large baking pan. Carve away the excess fat, if desired, and some of the rind.
  • Spread the glaze evenly over the surface of the ham.
  • Reduce the oven heat to 375 degrees, and bake the ham in the oven for 20-30 minute, or until the crust is hot and dark brown.
  • Remove the ham from the pan and place on a cutting board.
  • Allow to rest for at least 15 minutes before carving.
