2 cups shredded carrots
1/4 cup raisins
1 cup water
1 pkg. (3 oz.) JELL-O Orange Flavor Gelatin
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/4 cup butter, softened
1/2 tsp. pumpkin pie spice
2 cups powdered sugar

Steps:

  • Heat oven to 350°F.
  • Prepare cake batter as directed on package; stir in carrots and raisins. Pour into 13x9-inch pan sprayed with cooking spray.
  • Bake 35 to 40 min. or until toothpick inserted in center comes out clean. About 5 min. before cake is done, bring water to boil.
  • Pierce cake with large fork or skewer at 1/2-inch intervals. Add boiling water to gelatin mix in small bowl; stir 2 min. until completely dissolved. Pour evenly over cake. Refrigerate 3 hours.
  • Beat cream cheese, butter and spice in large bowl with mixer until blended. Gradually add sugar, beating well after each addition. Spread onto cake.

Calling all carrot cake lovers looking for an easy upgrade to the classic dessert! With the addition of fresh carrot and a salted caramel sauce, this dessert takes carrot cake to a whole new level.

1 box Betty Crocker™ Super Moist™ yellow cake mix
1/2 cup water
1/2 cup vegetable oil
4 eggs
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
2 cups finely shredded peeled carrots (5 medium)
3/4 cup Smucker's® Simple Delight™ Salted Caramel Topping
1 package (8 oz) cream cheese, softened
1/4 cup butter, softened
1 teaspoon vanilla
1 1/2 cups powdered sugar
2 tablespoons Smucker's® Simple Delight™ Salted Caramel Topping
Coarse sea salt, if desired

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
  • In large bowl, beat cake mix, water, oil, eggs, cinnamon and nutmeg with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Stir in carrots. Pour into pan.
  • Bake 26 to 33 minutes or until toothpick inserted in center comes out clean. Remove cake from oven to cooling rack. Immediately poke holes using fork over top of cake, wiping fork tines occasionally with paper towel to reduce sticking.
  • While cake is still warm, evenly pour and gently spread 3/4 cup caramel sauce over cake, working back and forth to fill holes. Rap pan on counter several times to help caramel sauce flow down holes. Refrigerate 2 hours.
  • When ready to serve, in large bowl, beat cream cheese and softened butter with electric mixer on medium-high speed until smooth. On low speed, beat in vanilla and powdered sugar until frosting is smooth and creamy. Drop frosting by spoonfuls; spread evenly on top of cake. Drizzle 2 tablespoons caramel sauce over top.
  • Cut into 4 rows by 3 rows. Sprinkle with sea salt, if desired. Cover and store remaining cake in refrigerator.

1 cup raisins
⅓ cup shredded carrots
2 cups water
1 cup all-purpose flour
1 cup quick cooking oats
1 ½ teaspoons artificial sweetener
½ teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ cup margarine, softened
¼ cup egg substitute
1 teaspoon vanilla extract
⅓ cup pecans, coarsely chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 7x11 inch baking dish. Set aside.
  • Combine raisins, carrots, and water in a medium saucepan. Bring to a boil, reduce heat and simmer for 10 minutes. Remove from heat and allow to cool.
  • In a mixing bowl, combine flour, oatmeal, sugar substitute, salt, baking soda and cinnamon.
  • In a separate bowl, mix together the margarine, egg substitute, and vanilla. Add to the flour mixture and mix well.
  • Add the raisin mixture and nuts, mix well and pour into baking pan.
  • Bake for 35 minutes or until toothpick inserted in middle comes out clean.

1 cup packed brown sugar
3/4 cup fat-free plain yogurt
1/4 cup canola oil

FROSTING:
1/2 cup heavy whipping cream

  • Preheat oven to 350°. Line bottoms of 2 greased 9-in. round baking pans with parchment paper; grease paper., Beat first 5 ingredients until well blended. 9 x13-inch carrot cake recipe of your choice, baked and cooled (I used a box mix)
1 (14-ounce) can sweetened condensed milk
1 cup Cool Whip
1 cup Cool Whip Vanilla Frosting or Cream Cheese flavor
1/2 (12-ounce) tub whipped cream cheese
1/2 cup caramel sundae sauce to taste
1 cup pecans, chopped, to garnish

Steps:

  • Leave the cake in the dish it was baked in, this is not a free standing cake. Poke approximately 20 to 25 holes, spread evenly, over the top of the cake with the bottom of a wooden spoon. Pour the sweetened condensed milk over top, trying to fill the holes as much as possible. In a large bowl, use a hand mixer to beat together the cool whip, the cool whip frosting, and the whipped cream cheese until smooth. Spread over top of the cake. Pour the caramel sauce over top of the cake, and sprinkle with chopped pecans. Refrigerate for at least 4 hours, really overnight is best. Cut into 12 squares to serve (you can cut more, 1/12 is a pretty large piece!). NOTES: Cool Whip Frosting is not the same as cool whip. But you can find it right beside the cool whip in the freezer section of your grocery store. You will not be able to stop eating this. Just a fact.

  • Prepare cake batter and bake as directed on package for 2 (9-inch) round cake layers. Cool completely in pans.

3 cups carrots (grated)
2 2/3 cups sugar
2 2/3 cups water
2 cups raisins
1/2 cup butter (or margarine)
2 teaspoons cinnamon
2 teaspoons cloves
2 teaspoons nutmeg
3 1/2 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup nuts (chopped)

Steps:

  • A well greased and floured bunt pan ready for cake batter.
  • First 8 ingredients into a pot bring to boil then simmer for 5 minutes.
  • Cool mixture and set aside.
  • Next 5 ingredients sift and dump into the cooled mixture blend together.
  • Pour ingredients into bunt pan.
  • Into the oven @ 375 degree's for 50 minutes.
  • Make an icing of icing sugar and fresh lemon to taste and drizzle over cake while warm.
