Not sure where this cake recipe came from, my mom passed it to me many years ago. We use it as a great holiday favorite but I usually sneak it in a couple times a year. It's a great treat to bring to a party or work. The brown sugar and almond extract give it a distinctive taste.

2 sticks butter, at room temperature
3 eggs
2 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan.
  • Combine brown sugar and butter in a large bowl; beat with an electric mixer until creamy. Beat in eggs one at a time until well blended.
  • Whisk flour, baking soda, and salt together in a separate bowl. Stir vanilla extract and almond extract into buttermilk. Add flour and buttermilk mixtures alternately to the creamed butter mixture, beating well between additions.

I drank bubble tea every day when I visited Taiwan, and decided to bring back some tapioca pearls (boba) to make my own at home. This is a versatile recipe: you can vary the type of tea and milk you use, and sweeten it to taste. Brew tea to your preferred strength, though it's a good idea to use strong tea because you're going to dilute it with milk and ice. You'll need a wide straw to drink up the boba, or use a long spoon to fish them out!

4 ¼ cups water, divided
¼ cup white tapioca pearls (boba)
2 tablespoons black tea leaves
¼ cup brown sugar
1 cup ice cubes
¼ cup milk
2 tablespoons sweetened condensed milk, or to taste

Steps:

  • Bring 2 cups water to a boil in a small saucepan. Add tapioca pearls and stir gently until they begin floating to the top of the water. Reduce heat to medium and simmer until softened and dark, about 25 minutes. Remove from heat, cover, and let sit for 15 minutes.
  • Meanwhile, bring 2 cups water to a boil. Remove from heat and add tea leaves. Let steep for 15 minutes. Strain out tea leaves and refrigerate the tea.
  • Drain pearls. Bring 1/4 cup of water to a boil in the empty saucepan. Stir in brown sugar until dissolved. Immerse the pearls in the syrup and let sit until room temperature, about 15 minutes.
  • Divide the pearls and desired amount of syrup between 2 tall glasses. Pour in tea. Add ice, milk, and sweetened condensed milk to both glasses. Stir before drinking.

4 cups all-purpose flour (plus 1 cup extra for rolling the dough (I used all-purpose flour, but you could also use cake flour))
4 teaspoons baking powder
½ cup butter (unsalted & softened)
1 cup sugar (granulated )
1 cup light brown sugar
¼ teaspoon salt
¼ teaspoon ground nutmeg
1 teaspoon lemon zest
1 egg
¼ cup sour cream
1 tablespoon mayonnaise
½ cup evaporated milk
½ tablespoon vanilla extract
2 ½ cups powdered sugar
4 tablespoons lemon juice

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium-size bowl, use an electric mixer to combine the butter, granulated sugar, and brown sugar for about 2 minutes until creamy.
  • Add the egg, lemon zest, sour cream, mayonnaise, evaporated milk, and vanilla extract.
  • Mix until well blended to make the tea cake batter.
  • Sift together the remaining dry ingredients: flour, baking powder, salt, and nutmeg over a sheet of parchment paper large enough to fit your baking sheet.
  • Fold the parchment paper to pour the sifted flour mixture into the tea cake batter and then mix again.
  • Add the batter to a lightly floured surface and roll the dough to approx ¼ inch thickness. This is where the extra cup of flour will come in handy to help with rolling because the dough is sticky!

  • Place the rounds onto a parchment paper-lined baking sheet about one inch apart. (You may need to bake more than 1 batch if all your rounds don't fit on your baking sheet.)
  • Bake until light brown (but don't let them get too brown!). 5-6 minutes in the conventional oven and 3-4 minutes in the Instant Pot Omni Plus oven. (Tea cakes don't take long to bake, so keep a close eye on them to avoid burning! Like a biscuit, you want them firm on the outside and fluffy on the inside.)
  • Optional: When the tea cakes are finished baking and cooling, optionally make the lemon glaze frosting by combining the powdered sugar and lemon juice.
  • Mix well with a whisk to remove any lumps from the powdered sugar.
  • Use a small spatula or spoon to drop a dollop of icing onto each cooled tea cake. The icing will harden in about 5 minutes.
  • Optionally, garnish this Southern Black folk tea cake recipe with a sprinkle of lemon zest, then serve and enjoy!

12 graham crackers, broken in half
5 tablespoons unsalted butter, melted
Two 8-ounce packages cream cheese, at room temperature
1 cup plus 1 tablespoon lightly packed light brown sugar
3/4 cup sour cream
2 teaspoons pure vanilla extract
Pinch fine salt
3 large eggs, at room temperature
3 small ripe peaches, pitted and cut in to 1/4-inch wedges

Steps:

  • Loosely roll a large piece of aluminum foil (about 20-inches long) into a 1-inch cylinder. Form a ring with the foil, about 7 inches in diameter. Fill a 6-quart slow cooker with 1/2 inch of water and place the foil ring in the bottom.
  • Place the graham crackers in the bowl of a food processor and process until finely ground. Add 4 tablespoons of the melted butter and pulse to combine; the mixture should look like wet sand. Brush the inside of an 8-inch springform pan with the remaining 1 tablespoon melted butter. Press the crumb mixture into the bottom of the pan, and one-third of the way up the sides. Use the bottom of a round drinking glass to help press the crumb mixture into the pan.
  • Wipe out the food processor, then add the cream cheese, 1 cup of the brown sugar, the sour cream, vanilla and salt, and blend until very smooth, scraping down the sides of the bowl as needed. Add the eggs, pulsing until smooth and uniform. Pour the filling into the crust.
  • Gently place the cheesecake on the foil ring in the slow cooker. Drape a double layer of paper towels over the opening of the slow cooker and place the lid over the paper towels (the ends of the paper towels should come out from under the lid). Cook on low heat until the cheesecake is just set, but still jiggles slightly when the pan is moved, 4 hours.
  • Turn off the heat and remove the lid. Wipe out the inside of the lid and replace the paper towels with new paper towels, and cover the slow cooker again. Cool the cake in the slow cooker, 2 to 3 hours.
  • Remove the cheesecake, cover with plastic wrap and refrigerate until chilled, at least 3 hours and up to 3 days.
  • One hour before serving, place the peaches in a mixing bowl with the remaining 1 tablespoon brown sugar. Toss to combine and macerate for at least 1 hour, stirring occasionally.
  • Run a small knife around the edge of the cheesecake and remove the outer ring of the pan. Spoon the peaches, along with any of the juices, over the cheesecake to serve.

One 16-ounce frozen pound cake, thawed
One 29-ounce can sliced peaches, drained and juice reserved
1/4 cup peach preserves
Pinch kosher salt
6 tablespoons brown sugar
1 1/2 cups heavy cream
Fresh basil, to garnish

Steps:

  • Remove the pound cake from its pan and line the pan with plastic wrap, leaving plenty of overhang.
  • Slice the cake horizontally into 3 equal slices.
  • Mix the peaches, preserves, salt and 3 tablespoons brown sugar in a bowl, then set aside.
  • Add the heavy cream, remaining 3 tablespoons brown sugar and 2 tablespoons of the reserved peach juices to a bowl. Whip until firm peaks form.
  • Place one slice of cake in the bottom of the lined pan and press to slightly flatten. Top with a third of the whipped cream and a thin layer of the peach mixture. Repeat the process 2 more times, saving the rest of the peaches to serve with the cake.
  • Loosely cover with the overhanging plastic wrap and chill in the refrigerator for 3 to 4 hours. Cover and reserve any extra peach mixture for serving.
  • To serve, carefully lift the cake from the pan using the plastic wrap, then discard the wrap. Place a few basil leaves over the top. Slice and serve with the reserved peaches spooned over the top.

My grandmother would always have a plastic tub of these cookies waiting for us when we would come to visit. This is a very old Southern recipe--my grandmother cooked for many years with a wood-burning stove, so the baking temperature is approximate. You may need to adjust the temperature up or down, depending upon your oven. Of all the wonderful things that she made, these were the best! They are great with milk or coffee, and they are a much-loved family favorite.

2 1/2 cups sugar
2 eggs
1 cup buttermilk
3/4 cup shortening
1 teaspoon baking soda
1 teaspoon baking powder

Steps:

  • Mix shortening and sugar together with pastry blender or two forks.
  • Combine eggs, buttermilk, and vanilla. Stir wet ingredients into shortening/sugar mixture.
  • Sift flour, baking soda, and baking powder together.
  • Sift dry ingredients in with wet ingredients and mix thoroughly. Dough should be the correct consistancy to roll, so you may need to add or decrease the dry ingredients as necessary.
  • Place dough on lightly floured board or pastry cloth and roll out to approximately 1/4 inch thick.
  • Cut cookies with round cookie cutter (my grandmother used a 2-inch biscuit cutter) and place onto an ungreased cookie sheet.
