TOMATO BRUSCHETTA
Make our simple tomato bruschetta as a classic Italian starter. Ideal for a summer gathering with friends, this easy dish is fresh, tasty and full of flavour

Steps:
- In a large bowl, mix the onions, tomatoes, garlic and basil, taking care not to mash or break up the tomatoes too much. Add the balsamic vinegar and extra virgin olive oil. Add salt and pepper to taste. Mix again. Cover and chill for at least an hour. This will allow the flavours to soak and blend together.
- Slice the baguette loaf diagonally into 12 thick slices and lightly toast them until they are light brown on both sides. Serve the mixture on the warm slices of bread. If you prefer the mixture at room temperature, remove from the fridge half an hour before serving.

EASY BRUSCHETTA
I always serve this as a starter at dinner parties. Everyone loves it because it is so light and tasty.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Combine tomato, basil, and red onion in a small mixing bowl; stir well. Season with freshly ground black pepper. Set aside.
- Arrange bread on a baking sheet. Place in oven, and bake until well toasted, approximately 5 minutes.
- Remove bread from oven, and transfer to a large serving platter. Let bread cool 3 to 5 minutes. Rub garlic into the top of each slice of toast; the toast should glisten with the garlic. Spoon the tomato mixture generously onto each slice, and serve.

Steps:
- Preheat the oven to 375 F.
- Quarter the tomatoes and place them into a small bowl.
- Add 2 tablespoons of olive oil, the balsamic vinegar, salt, and pepper to the tomatoes, then stir.
- Chiffonade the basil by stacking the leaves in a pile. Roll the basil leaves vertically like a cigar. Starting at one end, make slices along the rolled basil leaves, making ribbons. Sprinkle the basil into the bowl of tomatoes. Stir well and set aside to marinate.
- Slice the baguette in half horizontally, and slice the halves in half again vertically. Place the baguette on a baking sheet and brush with the 2 remaining tablespoons of olive oil. Place in the oven and bake for 8 minutes.
- Remove the baguette from oven and rub each slice with the clove of garlic.
- Cut the baguette into the desired number of pieces and top with the tomato mixture, then serve.

- Heat a grill or preheat the broiler. Lightly char bread slices on grill or under broiler, turning slices halfway through. Rub bread slices with cut sides of garlic cloves, then drizzle with olive oil, and sprinkle with salt.
CLASSIC BRUSCHETTA
This delicious bruschetta is easy to make and very tasty! Great as a starter for an Italian meal, I like it with lasagna. I havn't yet tried it with sun dried tomatoes but I will try it next time.

- Bake the ciabatta slices in the oven at around 200C/400F, for 10-15 mins turning once halfway until crispy.
- Meanwhile chop the cherry tomatoes in half and toss them with the olive oil, basil, sun dried tomatoes if using and salt and pepper to taste.
- When the Ciabatta is done, chop the garlic cloves in half and rub on both sides of the bread.
- Top with the tomato mix (around 3 cherry tomato halves to each slice. Top with some whole basil leaves if you like.
- Serve immediately.

Steps:
- Combine tomatoes and 1/2 cup fresh basil in a colander, sprinkle with salt and toss to coat; let drain 1 hour.
- Preheat oven to 375°F
- In a large bowl combine the drained tomato/basil mixture with the minced garlic, 1/4 cup olive oil, remaining 1/4 fresh basil, oregano and thyme.
- Let stand at room temperature 15 to 20 minutes to allow flavors to blend.
- During this time brush French bread slices lightly with the remaining olive oil.
- Toast "lightly" in the oven (just a few minutes).
- Pull out and place a small amount of tomato mixture on top of the lightly toasted French bread slices.
- Top each piece with a small amount of Mozzarella.
- Toast in the oven until cheese has melted and its golden brown.
- Serve and enjoy.

- Cut up the tomatoes and basil and add to a bowl. Add the olive oil and salt and pepper, mix gently, then cover and set in the fridge to set.
- Either toast the bread in an oven or on a grill pan. Toast them enough to be crunchy on the outside yet soft inside.
- Optional: if you are someone who does like the flavor of garlic, this would be the time to actually take a whole garlic clove (peeled) and rub it onto the bread. The rough texture will essentially grate the garlic onto the bread for a light flavor since whole chunks of garlic are not traditionally added to this dish.
