Brussels sprouts get crispy and flavorful in the oven when they're "smashed" and seasoned with Parmesan cheese and everything bagel spice.

1 ½ pounds medium to large Brussels sprouts, trimmed (16-18)
2 tablespoons extra-virgin olive oil
2 tablespoons grated Parmesan cheese
2 teaspoons everything bagel seasoning
Zest from 1 large lemon

Steps:

  • Preheat oven to 425°F. Fill a large bowl with ice water.
  • Bring a large saucepan of lightly salted water to a boil. Add Brussels sprouts, reduce heat to maintain a lively simmer and cook until just tender when pierced with a skewer, 8 to 10 minutes.
  • Drain the sprouts and plunge them into the ice bath. Let stand until cool enough to handle.
  • Transfer the sprouts to a clean dish towel and pat dry.
  • Spread the sprouts on a large rimmed baking sheet. Drizzle with oil; toss to coat.
  • Space the sprouts evenly on the pan then flatten them with the bottom of a mason jar or sturdy glass.
  • Roast for 10 minutes. Gently flip the flattened sprouts and sprinkle with Parmesan, seasoning and lemon zest.
  • Return to the oven and bake until the cheese has melted, about 5 minutes more.

3 3/4 cups brussels sprouts, halved, cored, leaves separated
Kosher salt
1/2 cup walnut halves, divided
2 1/2 tablespoons unsalted butter
1 tablespoon walnut oil plus more for drizzling
1 medium shallot, minced
3 tablespoons plus 2 teaspoons Champagne vinegar
1 1/4 teaspoons Dijon mustard
Pinch of sugar
Freshly ground black pepper
1/2 medium head of radicchio (about 5 ounces), cored and thinly sliced
Parmesan (for shaving)
3/4 teaspoons finely grated lemon zest

Steps:

  • Blanch brussels sprouts in boiling salted water for 30 seconds; drain and immediately transfer to a large bowl of ice water to cool. Spin in a salad spinner to dry leaves (or pat dry with kitchen towels). DO AHEAD: Can be made 2 days ahead. Wrap in a kitchen towel, transfer to a resealable plastic bag, and chill.
  • Crush 2 1/2 tablespoons walnuts with a rolling pin or the side of a knife; set aside. Melt butter with 1 tablespoon oil in a small saucepan over low heat. Add shallot and crushed walnuts; cook, stirring frequently, until shallot softens, about 2 minutes. Whisk in vinegar, mustard, and sugar. Remove vinaigrette from heat; season to taste with salt and pepper. DO AHEAD: Can be made 2 days ahead. Transfer to a container, cover, and chill. Let vinaigrette come to room temperature before serving.
  • Place brussels sprouts and radicchio in a large bowl. Pour walnut vinaigrette over brussels sprouts mixture and toss to coat well. Transfer to a serving dish. Using a vegetable peeler, shave cheese over. Sprinkle with lemon zest and remaining walnuts. Drizzle with walnut oil.

2 tablespoons olive oil, plus more for drizzling
20 ounces brussels sprouts, trimmed, outside leaves removed and quartered (about 5 cups)
1 teaspoon coarse salt
Pinch freshly ground pepper
2 small shallots, peeled and sliced
1/2 cup water
2 tablespoons freshly squeezed lemon juice (about a half lemon)
Zest of half a lemon

Steps:

  • Heat 2 tablespoons oil in a large nonstick skillet pan over high heat. Add Brussels sprouts to skillet. Cook, stirring occasionally, until dark golden brown in places, about 4 minutes. Add salt, pepper, and shallots, and cook for 30 seconds more. Add water, and cover. Reduce heat to medium-high, and cook until tender, about 4 minutes. Remove lid.
  • Add lemon juice, and drizzle with oil. Stir to combine well. Transfer to a serving platter, and garnish with lemon zest.

Steps:

  • Place Brussels sprouts in a steamer basket and steam in a large saucepan over 1 inch of boiling water until tender, 7 to 8 minutes.

1/2 cup coarsely chopped walnuts (can substitute almonds, hazelnuts, etc.)
1/2 lb Brussels sprout
2 tablespoons extra-virgin olive oil
1 lemon, juice and zest of
kosher salt & fresh ground pepper

Steps:

  • Toast the walnuts in a dry pan (I always use cast iron to toast nuts) until lightly browned and fragrant. Set aside.
  • Trim the Brussels sprouts and discard any damaged outside leaves. Use a food processor fitted with the thin slicing blade to shred the sprouts.
  • In a large skillet over medium, heat the oil.
  • Add the sprouts to the pan.
  • Cook, stirring, until crisp tender, about 5 minutes. The pan will seem very crowded in the beginning, but the Brussels sprouts will shrink down quickly.
  • Transfer the brussels sprouts to a serving platter and season with salt and pepper, 1 to 2 tablespoons of the lemon juice, the lemon zest and the walnuts.
  • Serve immediately.
