BUCKEYES
These no-bake treats feature an easy to make peanut butter filling that is rolled into small balls then partially dipped in chocolate. They're bite size and perfect for holidays or any time of year!

Steps:
- Line a baking sheet with parchment paper.
- In a large bowl beat the peanut butter, butter, vanilla, powdered sugar, and salt together until fully combined.
- Scoop the mixture into 2 tsp sized balls and place on the baking sheet. Freeze for 15 minutes or until cold and firm, or chill in the fridge for 30-45 minutes.
- In a microwave safe bowl melt the chocolate and vegetable shortening, stirring every 20 seconds until melted.
- Stick a toothpick in the center of the peanut butter ball. Lift it into the melted chocolate and cover the peanut butter ball, leaving a circle of peanut butter visible on the top. Let excess chocolate drip off, then place on the baking sheet and remove the toothpick. Repeat with remaining peanut butter balls. Place in fridge for 20 minutes or until chocolate has set.
- Remove from the fridge and smooth out the toothpick hole using your finger or an offset spatula.
- Serve chilled or at room temperature. Store in an airtight container in the fridge for 1 week.

BEST BUCKEYE RECIPE
This simple recipe for homemade buckeyes is the perfect combination of chocolate and peanut butter. Buckeyes are sure to become a often requested family favorite!

- First, stir together the melted butter and peanut butter.
- Stir in the powdered sugar. Gradually add powdered sugar until mixture is not sticky. Mix until smooth, using your hands.
- Roll the dough into balls. The buckeye balls should be quarter size or smaller. Place the peanut butter balls on a cookie sheet covered with wax paper. Chill in the refrigerator for one hour, or until they are firm enough to hold a toothpick.
- While the buckeyes are in the refrigerator, melt 1 1/2 cups semi-sweet chocolate chips with 1/3 bar paraffin in a double broiler.
- When the chocolate is melted and the buckeyes hardened, it's time to dip the buckeyes. Put a wooden toothpick in the middle of a buckeye. Gentle lower into the chocolate and rotate so the buckeye is covered with a small hole remaining around the toothpick.
- Lift the buckeye carefully out of the chocolate. Allow the excess chocolate to drip into the pan. Place the buckeye on a plate covered with wax paper. Remove the toothpick and repeat.
- One batch makes around 80 buckeyes. Store your buckeyes in the refrigerator or freezer.

BUCKEYES I
This recipe is so good that I double it whenever I make it. Since it is peanut butter balls dipped in chocolate it is almost like candy. Real buckeyes are nuts that grow on trees and are related to the horse chestnut.

Steps:
- In a large bowl, mix together the peanut butter, butter, vanilla and confectioners' sugar. The dough will look dry. Roll into 1 inch balls and place on a waxed paper-lined cookie sheet.
- Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.
- Melt chocolate chips in a double boiler or in a bowl set over a pan of barely simmering water. Stir frequently until smooth.
- Dip frozen peanut butter balls in chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Put back on the cookie sheet and refrigerate until serving.

- Combine peanut butter, butter, vanilla and salt in large bowl. Beat with an electric mixer on LOW until blended. Add 2 cups powdered sugar, beating until blended. Beat in additional powdered sugar until mixture, when shaped into a ball, will stay on a toothpick. Shape into 1-inch balls. Refrigerate.
- Place chocolate chips and shortening in microwave-safe bowl. Microwave on MEDIUM for 30 seconds. Stir. Repeat until mixture is smooth. Reheat as needed while coating peanut butter balls.
- Insert toothpick in peanut butter ball. Dip 3/4 of ball into chocolate, leaving top uncovered to resemble a buckeye. Remove excess. Place on wax paper-lined tray. Remove toothpick. Smooth over holes. Refrigerate until firm.

- Melt in top of double boiler paraffin and chocolate chips.
- Cream together butter, powdered sugar and peanut butter.
- Shape into small balls (about 1 inch or less thick).
- Using toothpicks, dip balls into melted chocolate (which is kept over hot water until finished).
- Makes close to 100 "buckeyes".
- Refrigerate and enjoy!
