Buckwheat Salad with Roasted Sweet Potato image

1 medium sweet potato
1/2 tsp chili powder
1 cup of buckwheat
2.5 cups of vegetable broth
4 scallions
1.5 cups of cooked chickpeas
10-12 radishes
2 cups of lamb's lettuce
3 tbsp toasted pine nuts
2 lemons, juice + zest
1 tsp maple syrup
1 tbsp mustard
1 tbsp almond butter
salt, pepper

Steps:

  • Cut sweet potatoes into small cubes, place them on a baking tray in a single layer, then sprinkle with chili, salt, and pepper. Bake for about 30 minutes at 180°C/360°F, or until soft and slightly browned.
  • Meanwhile heat up a saucepan over medium-high heat, add buckwheat, and toast for 2-3 minutes, shaking continually. Add vegetable stock or water, and bring to a boil.
  • Turn heat to low, cover, and simmer for 15-20 minutes. Once cooked, fluff buckwheat with a fork and allow to cool.
  • For the dressing whisk together lemon juice and zest, maple syrup, mustard, and almond butter. Season with salt and pepper.
  • Chop scallions, slice radishes thinly, and add to a salad bowl with chickpeas, lettuce, buckwheat and sweet potato cubes. Add dressing and toss to coat evenly. Serve with toasted pine nuts on top. Enjoy!

3 small sweet potatoes, peeled and cubed
2 tablespoons olive oil
2 teaspoons cumin seeds
salt and ground black pepper to taste
⅓ cup cashews
1 (6 ounce) package feta cheese, cubed
1 cup fresh spinach
1 cup arugula
1 cup watercress
3 tablespoons chopped fresh cilantro
2 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
1 pinch white sugar
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine sweet potatoes, olive oil, and cumin seeds on a roasting tray, season with salt and pepper, and toss to coat. Spread cashews onto a baking sheet.
  • Roast potatoes in the preheated oven until soft and slightly colored at the edges, 30 to 45 minutes, stirring after 20 minutes.
  • At the same time, toast cashews in the oven until they start to turn golden brown and become fragrant, 10 to 15 minutes. Chop when cool enough to handle.
  • Meanwhile, whisk oil, vinegar, sugar, salt, and pepper for dressing in a small bowl.
  • Divide feta cheese, spinach, arugula, watercress, and cilantro among 3 plates. Top with warm sweet potatoes and cashews. Pour dressing over top and serve.

4 cups cubed peeled sweet potatoes
1 tablespoon olive oil
1/2 cup chopped walnuts, toasted
1/3 cup dried cherries, chopped
1/4 cup minced fresh parsley
2 tablespoons reduced-fat mayonnaise
4-1/2 teaspoons white vinegar
1 tablespoon honey
1/2 teaspoon grated lime zest
1/4 teaspoon salt

Steps:

  • Place potatoes in a 15x10x1-in. baking pan coated with cooking spray. Drizzle with oil; toss to coat. Bake at 400° for 30-45 minutes or until tender. Roasted Sweet Potato Salad With Black Beans and Chile Dressing image

Start with sweet potatoes, which are in season, beautiful and cheap, and roast them with red onion and olive oil. Roasting instead of boiling makes a huge difference: not only do you get a rich, smoky flavor, but the peeled exterior is toughened a bit so that the potatoes stay intact when tossed with the other ingredients. You can serve this sweet potato salad warm or at room temperature; it's great both ways.

4 medium sweet potatoes (about 1 1/2 pounds), peeled and cut into 1-inch chunks
1 large onion, preferably red, chopped
1/2 cup extra virgin olive oil
Salt
freshly ground black pepper
1 to 2 tablespoons minced fresh hot chili, like jalapeño
1 clove garlic, peeled
Juice of 2 limes
2 cups cooked black beans, drained (canned are fine)
1 red or yellow bell pepper, seeded and finely diced
1 cup chopped fresh cilantro

Steps:

  • Heat oven to 400 degrees. Put sweet potatoes and onions on a large baking sheet, drizzle with 2 tablespoons oil, toss to coat and spread out in a single layer. Sprinkle with salt and pepper. Roast, turning occasionally, until potatoes begin to brown on corners and are just tender inside, 30 to 40 minutes. Remove from oven; keep on pan until ready to mix with dressing.
  • Put chilies in a blender or mini food processor along with garlic, lime juice, remaining olive oil and a sprinkle of salt and pepper. Process until blended.
  • Put warm vegetables in a large bowl with beans and bell pepper; toss with dressing and cilantro. Taste and adjust seasoning if necessary. Serve warm or at room temperature, or refrigerate for up to a day.

  • Rinse the buckwheat groats and place them in a small sauce pan. Add the water, salt and bring it to a boil. Reduce the heat to low-medium and simmer for a further 10-15 minutes. If you like the buckwheat to be really tender, it might take longer (see note 4). If the buckwheat does not absorb all the water, drain it.
  • Meanwhile: Wash and cut the vegetables into bite–size chunks. Transfer them into a bowl and season with salt and pepper. Pour over a table spoon of olive oil and sprinkle with finely chopped parsley (add as much as you like). Mix well.
  • When the buckwheat is ready, taste it, add more salt (if needed) and mix it with chopped veggies.

  • Pre-heat the oven to 180°C (fan)/200°C/gas mark 6. Peel and dice your four sweet potatoes, drizzle with olive oil and roast for 35-40 minutes until cooked through, stirring half way.
  • Rinse 200g buckwheat well in cold water. Place in a saucepan with 500ml water. Bring to the boil then reduce the heat, cover and simmer for 20 minutes or until all the water has been absorbed.
  • Lightly toast 50g walnut halves on a dry frying pan. If you've got small children break them up into small pieces before adding to the salad.
  • Add the cooked buckwheat to the sweet potatoes along with the toasted walnuts, 150g blueberries and a little freshly chopped thyme. Mix carefully and transfer to a serving dish. Drizzle with maple syrup if desired.
