Steps:
- Bring chicken broth and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and broth is absorbed, 15 to 20 minutes.
- Preheat oven to 425 degrees F (220 degrees C).
- Spread sweet potato and red onion onto a baking sheet. Drizzle 1 tablespoon olive oil over mixture and season with salt and pepper; toss to coat.
- Bake in the preheated oven until sweet potatoes are tender, 20 to 25 minutes.
- Heat 1 tablespoon olive oil in a skillet over medium heat; cook and stir 2 cloves garlic and ginger until fragrant, about 1 minute. Add chicken and cook until no longer pink in the center and the juices run clear, about 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Cut chicken into 1-inch pieces.
- Whisk 1 garlic clove, lime juice, peanut butter, soy sauce, and honey together in a bowl. Whisk 1 tablespoon olive oil and sesame oil into mixture until dressing is smooth.
- Divide quinoa among bowls; top with chicken, sweet potato mixture, spinach, and avocado. Sprinkle cilantro and sesame seeds over the top and drizzle dressing over each bowl.

BUDDHA'S GREEK HARMONY BREAD
It is said that Buddha gave this bread as a gift to Greece during his visit there. Once the Greeks tasted it, they immediately converted to Buddhism.... Ok, not really, but my Buddha did come up with this bread on his own. and it's really good, easy to make, and the aroma is wonderful. :)

Steps:
- To your KitchenAid (or stand mixer), mix water, sugar, and yeast. Let stand 5 minutes.
- Add flour and salt to yeast mixture and knead 2-3 minutes.
- Add Greek Seasoning and knead 1-2 minutes more (dough should be firm, not sticky).
- Place in oiled metal bowl and cover with a clean kitchen towel. Let rise for 1 hours.
- Punch down dough and plaice in an oiled loaf pan. Cover and let rise 30 more minutes.
- Preheat oven to 400°F Cut a slit 1/8" deep across the center of the loaf, sprinkle with sesame seeds, and bake for 35-40 minutes.
- Let cool on a baking rack for 15 minutes. Remove from loaf pan and cool completely on baking rack. This bread stores well wrapped in plastic wrap.

ROUND 2 RECIPE - GREEK FLAT BREAD
Steps:
- Preheat a grill or a large rectangular grill pan over medium heat. Brush the grill grates or grill pan will canola oil before the grilling bread
- Roll out the dough with a rolling pin on a floured work surface into a long rectangle, about 1/4-inch thick. Put the dough onto the grill or gill pan and grill for 3 minutes per side. Remove the bread from the grill and put on a sheet pan.
- Preheat the oven to 475 degrees F
- Brush the grilled flat bread with the Chicken Souvlaki marinade. Top with onion, tomato, chicken, and feta cheese. Bake until flat bread is cooked through and the cheese is melted, about 10 minutes
- Remove from oven and let cool for 2 minutes. Drizzle with Tzatziki Sauce, slice and serve.
BRAIDED GREEK SWEET BREAD (TSOUREKI)
A traditional Greek sweet bread for Easter

- In a large pot over medium low heat add the butter, the sugar and the milk. Cook for a few minutes, until the butter is melted. Add the zests, remove from heat and let the mixture cool slightly. Add the orange juice.
- In a glass measuring cup, mix the warm water, the sugar and the yeast. Allow it to sit for 5 minutes, until it bubbles and the yeast is activated.
- Beat the three eggs and add them to the reserved butter/milk mixture.
- Sift the flour, mahlepi and mastic and place in the bowl of a stand mixer. To the dry ingredients, add the reserved butter/milk mixture and the yeast mixture. Mix to form a soft and pliable dough, adjusting the flour as necessary. Rub the surface with the oil and cover with plastic wrap. Let it rise for two hours.
- Punch the dough down and divide it into four equal portions. Divide each portion into three balls. Cover the rest and work with three balls at a time: Roll each ball into a 10"-12" long log. Pinch the top ends of the logs together and then braid the logs. When you get to the end, pinch the bottom ends together. Tuck the top and bottom ends underneath the dough. Place braided loaf on a parchment lined baking sheet. Repeat steps with the remaining dough. Let the bread rise at room temperature for half an hour.
- Pre-heat oven to 350° F. In a small bowl, whisk together remaining egg and milk. Brush the tops of the loaves with the egg/milk mixture and sprinkle with sesame seeds or sliced almonds. Bake (in batches) for 20-25 minutes. Allow the bread to cool completely before serving.
