These pickled eggs taste just like the eggs that general stores used to sell! Add 1 cup beet juice if you'd like pink pickled eggs.

Steps:
- Put the peeled hardboiled eggs in the large jar.
- Boil the remaining ingredients together for 5 minutes.
- Pour over the eggs in the jar.
- Cover; leave on counter overnight.
- Keeps in refrigerator for weeks, in theory.
- In reality, if you love pickled eggs, these will disappear.

Steps:
- Combine vinegar, water, onion, sriracha hot sauce, and sea salt in a saucepan; bring to a simmer. Remove saucepan from heat and cool liquid slightly.
- Place eggs in a 1-quart jar. Pour vinegar mixture over eggs. Seal jar and refrigerate, occasionally shaking jar, for at least 2 days.

PERFECT PICKLED EGGS
Prior to the days of refrigeration, pickling eggs in vinegar was used as a preservation method. Pickled eggs are delicious served with deli meats for a light dinner, as an appetizer, or on a picnic. Try making your own pickling spice mixture!

Steps:
- Combine vinegar, water, sugar, pickling spices and salt in small saucepan.
- Bring to boil, stirring frequently, until sugar dissolves. Reduce heat to low, cover and simmer for 10 minutes. Strain liquid through sieve or cheesecloth, if desired.
- Place eggs in 4-cup (1 L) jar with lid. Pour hot liquid over eggs into each jar; Cover jar with lid.
- Refrigerate for at least two days before using.

- Use a cookie cutter or glass to cut out a 2 inch circle in the center of the slice of bread.
- Heat a small nonstick skillet over medium heat. Add 2 teaspoons butter. When butter has melted and is foamy, place the slice of bread in the pan. Cook for 1 minute until golden. Flip the piece of bread over, drop the remaining 1 teaspoon butter in the hole, and when the butter has completely melted, crack the egg into the hole. The white will run under and the yolk will sit in the hole. Cook over medium heat 1 to 3 minutes until as set as desired. If you wish a drier egg, you can flip the toast back over to lightly cook the top of the yolk. Serve hot.
- You can make more than one portion at a time on the flat surface of a griddle.
BOURBON BASALMIC PICKLED EGGS
I'd been doing a lot of travelling in my camper van, and wanted to figure out a way to have soft boiled eggs easily accessible. Pickled eggs was the solution. I played with several recipes, and then came up with this on a whim. All I had was basalmic vinegar on hand, and a bottle of bourbon. It worked out beautifully.

- 1. Remove eggs from refrigerator and bring to room temperature.
- 2. Boil together the bourbon, basalmic vinegar, and salt until reduced by about 1/4. Taste to adjust salt level. Should be a little salty, like potato chip salty, to the taste, because the eggs will take some of that salt in the pickling process. Refrigerate to cool completely.
- 3. Bring a large pot of water to a rolling boil.
- 4. Use tongs to place eggs in a single layer in the boiling water, then set a timer for 6 minutes and 45 seconds.
- 5. When the timer is up, remove eggs to a cold water bath, and repeat step 4 until all eggs are boiled.
- 6. Using a large spoon, carefully peel the eggs while they're still warm inside. They will be very fragile because the yolk is still quite soft at this point.
- 7. Gently place the peeled eggs in a sterilized container, then pour over the bourbon basalmic brine. Depending upon your container, and how many eggs don't make it due to breakage, you may need to make more brine, or you may have leftover brine. I use a flat lock-tite container. You simply want to make sure the eggs are completely immersed in the brine.
- 8. Refrigerate for two days, and enjoy.
