Buffalo Veggie Quinoa Meatloaf image

Well it's hard to make a healthy meatloaf with 'traditional' ingredients. So this recipe is hearty, healthy, and guilt-free.

½ cup water
¼ cup quinoa
1 tablespoon olive oil, or as needed
1 small sweet yellow onion, chopped
1 sweet potato, chopped
1 cup chopped kale, or more to taste
½ red bell pepper, chopped, or more to taste
1 pound ground buffalo meat
2 eggs
1 tablespoon Worcestershire sauce, or more to taste
1 tablespoon minced garlic, or more to taste
1 tablespoon ketchup, or more to taste
1 ½ teaspoons salt
1 teaspoon ground black pepper
1 pinch dried oregano, or more to taste
1 pinch dried basil, or more to taste
1 pinch dried thyme, or more to taste
1 tablespoon barbeque sauce, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x5-inch loaf pan.
  • Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 10 to 15 minutes.
  • Heat olive oil in a skillet over medium heat; cook and stir onion, sweet potato, kale, and red bell pepper until tender, 10 to 15 minutes.
  • Combine buffalo meat, eggs, Worcestershire sauce, garlic, ketchup, salt, black pepper, oregano, basil, and thyme together in a bowl. Add vegetable mixture and quinoa to buffalo mixture and mix well. Transfer mixture to the prepared loaf pan; top with a thin layer of barbeque sauce.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

15 Ritz crackers, crushed
1/2 medium onion, finely chopped
1/4 cup 2% milk
4 teaspoons brown sugar
1/2 teaspoon garlic powder
1/2 teaspoon ground chipotle pepper
1/4 teaspoon smoked paprika
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 pound ground beef
1/2 pound ground pork
1/2 pound ground veal
SAUCE:
1/2 cup honey
1/4 cup Buffalo wing sauce
1/4 cup packed brown sugar
2 tablespoons orange marmalade
2 tablespoons apricot spreadable fruit
2 tablespoons reduced-sodium soy sauce
1/4 teaspoon crushed red pepper flakes
Hot cooked rice or pasta
Sliced celery, optional

Steps:

  • Preheat oven to 400°. Combine first 10 ingredients. Add meat; mix lightly but thoroughly. Shape meat mixture into 1-1/2-in. balls; bake on a greased rack in a 15x10x1-in. baking pan lined with foil until lightly browned, 12-15 minutes. Meanwhile, in a small saucepan over medium heat, whisk together sauce ingredients until brown sugar is dissolved., Transfer meatballs to a 3-qt. slow cooker; add sauce. Cook, covered, on low until meatballs are cooked through, about 2 hours. Serve with hot cooked rice or pasta and, if desired, sliced celery., Freeze option: Freeze cooled meatballs and sauce in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, stirring gently; add water or broth if necessary. Serve as directed.

Started in the oven and finished up in the slow cooker, these easy Buffalo chicken meatballs have all of your favorite chicken wing flavor but are much easier and less messy to eat. They're moist and tender with a slightly toasted exterior and coated in a tangy, spicy sauce with just a hint of sweetness. Use thin celery sticks as skewers and serve them with ranch dressing. Perfect for parties or tailgating!

2 ¼ cups Buffalo wing sauce, divided
½ cup butter
¼ cup honey
⅔ cup bread crumbs
⅓ cup finely chopped celery
⅓ cup finely chopped green onions
¼ cup crumbled blue cheese
2 large eggs
2 pounds ground chicken
¾ teaspoon kosher salt
½ teaspoon ground black pepper

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with foil and spray lightly with cooking spray.
  • Combine 2 cups Buffalo sauce, butter, and honey in a slow cooker. Cover and set to High while you prepare the meatballs.
  • Combine bread crumbs, celery, green onions, blue cheese, eggs, and remaining 1/4 cup Buffalo sauce in a large bowl; stir until well combined. Add chicken, salt, and pepper; mix well. Wet your hands and form mixture into 1 1/2-inch meatballs; you should get about about 44. Transfer to the prepared baking sheet.
  • Bake meatballs in the preheated oven until they're holding together well and are lightly browned, about 8 minutes; they will not be cooked through at this point.
  • Transfer meatballs to the slow cooker and stir well to combine with the sauce. Reduce heat to Low and cook until an instant-read thermometer inserted into the centers reads at least 160 degrees F (71 degrees C), 1 to 2 hours. Keep warm until ready to eat.

This is a recipe from Kitchen Daily, they recommend freezing 1/2 of the recipe for a second meal. I made these and then simmered them in jarred Tikka Masala sauce, I use Sharwood's. Serve with steamed brown rice and steamed broccoli. You can also finish with the sauce of your choice.

1 lb ground chicken
2 garlic cloves, peeled
1/2 yellow onion
handful cilantro
1 carrot, grated
3/4 cup quinoa, cooked
3/4 cup panko breadcrumbs
1 egg
1 carrot, grated
kosher salt, pinch
ground black pepper, pinch

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Line a cookie sheet with parchment paper (I sprayed mine with olive oil cooking spray).
  • Place chicken in a large mixing bowl.
  • Sprinkle salt and pepper over chicken.
  • Using a food processor mince the garlic, onion and cilantro together.
  • Add to the chicken, the grated carrot, quinoa, panko crumbs and egg.
  • Mix well using your hands.
  • Shape into small meatballs.
  • Bake for 15 minutes and turn over and bake for 20 minutes more.
  • I freeze 1/2 for another meal.
  • In a medium saucepan place meatballs and stir in Tikka Masala Sauce.
  • Cook on low until simmering and meatballs and sauce are hot.
