CINNABON COPYCAT CINNAMON ROLLS

You can recreate these well-known cinnamon rolls at home with this copycat recipe.

2 packages active dry yeast
1 cup milk ( warm (105-115 degree))
1 cup water ( warm (105-115 degree))
2/3 cup sugar
2/3 cup butter
2 teaspoon salt
2 eggs (slightly beaten)
7-8 cups all-purpose flour (or more if needed)
8 ounces butter (melted, divided use)
1 3/4 cups sugar (divided use)
3 tablespoons ground cinnamon
1 1/2 cups chopped walnuts (optional)
1 1/2 cups raisins (optional)
2/3 cup butter
4 cup powdered sugar
2 teaspoon vanilla extract
4 tablespoon water (hot, this may need up to 4 more tablespoons)

Steps:

  • Mix together warm water, yeast, and 1 teaspoon sugar in a small bowl. Set the mixture aside for 5 minutes for the yeast to activate. It should get foamy.
  • In a large bowl, mix milk, remaining 2/3 cup sugar, melted butter, salt, and eggs. Stir well to combine.
  • Add yeast mixture and half the flour. Beat until smooth.
  • Stir in enough of the remaining flour until the dough is slightly stiff (dough will be sticky).
  • Turn the dough out onto a well-floured board and knead for 5 to 10 minutes.
  • Place the dough in a well-buttered glass or plastic bowl. Cover and let rise in a warm place, free from drafts, until doubled in bulk, about 1 to 1 1/2 hours.
  • When doubled, punch down the dough and let it rest for 5 minutes.
  • Roll out the dough on a floured surface into a 15 x 20-inch rectangle.
  • Spread ½ cup melted butter on the dough.
  • Mix together 1 1/2 cups sugar and cinnamon and sprinkle it over the buttered dough.
  • Sprinkle walnuts and raisins on the dough, if desired.
  • From the long edge, roll up the dough and pinch the edge to seal.
  • Cut the dough into 12 to 15 slices.
  • Coat the bottom of a 13-by-9-inch baking pan and an 8-inch square pan with the remaining 1/2 cup melted butter.
  • Sprinkle the remaining 1/4 cup sugar in the pans.
  • Place the cinnamon roll slices cut-side down close together in pans.
  • Let rise in a warm place until dough is doubled in bulk, about 45 minutes.
  • Preheat oven to 350 degrees while the dough is rising.
  • Bake for 25 to 30 minutes, or until rolls are nicely browned.
  • Cool rolls slightly.
  • In a medium bowl, mix melted butter, powdered sugar, and vanilla.
  • Add hot water 1 tablespoon at a time until the icing reaches a spreadable consistency.
  • Spread icing over slightly cooled rolls.

Excellent yeast buns that can be used for hamburgers or just plain dinner rolls. They don't take long to make and have never failed for me!

5 cups all-purpose flour
2 (.25 ounce) packages dry yeast
1 cup milk
¾ cup water
½ cup vegetable oil
¼ cup white sugar
1 teaspoon salt

Steps:

  • Stir together 2 cups flour and the yeast. In a separate bowl, heat milk, water, oil, sugar and salt to lukewarm in microwave. Add all at once to the flour mixture, and beat until smooth, about 3 minutes.
  • Mix in enough flour to make a soft dough, 2 to 3 cups. Mix well. Dust a flat surface with flour, turn dough out onto floured surface, and let rest under bowl for about 10 minutes.
  • Shape dough into 12 slightly flat balls, and place on greased baking sheet to rise until doubled in size.
  • Bake in a preheated 400 degrees F (200 degrees C) oven for 12 to 15 minutes.

I've gotten a thousand request for these. We're going to make our own, and not only are these going to be the perfect shape, they're going to taste way better than anything that comes out of a plastic bag. The total time takes almost 4 hours, but the actual amount of work involved is maybe 10 minutes.

1 (.25 ounce) package active dry yeast (such as Fleischmann's ActiveDry Yeast®)
1 pound all-purpose flour, or as needed - divided
1 cup warm water (105 degrees F/41 degrees C)
1 large egg
3 tablespoons butter, melted
3 tablespoons white sugar
1 ¼ teaspoons salt
1 teaspoon olive oil
1 egg, beaten
1 tablespoon milk
1 teaspoon sesame seeds, or as needed

Steps:

  • Line a baking sheet with a silicone mat or parchment paper.
  • Place yeast into bowl of a large stand mixer; whisk in 1/2 cup flour and warm water until smooth. Let stand until mixture is foamy, 10 to 15 minutes.
  • Whisk 1 egg, melted butter, sugar, and salt thoroughly into yeast mixture. Add remaining flour (about 3 cups).
  • Fit a dough hook onto stand mixer and knead the dough on low speed until soft and sticky, 5 to 6 minutes. Scrape sides if needed. Poke and prod the dough with a silicone spatula; if large amounts of dough stick to the spatula, add a little more flour.
  • Transfer dough onto a floured work surface; dough will be sticky and elastic but not stick to your fingers. Form the dough lightly into a smooth, round shape, gently tucking loose ends underneath.
  • Wipe out stand mixer bowl, drizzle olive oil into the bowl, and turn dough over in the bowl several times to coat surface thinly with oil. Cover bowl with aluminum foil. Let dough rise in a warm place until doubled, about 2 hours.
  • Transfer dough to a floured work surface and pat to flatten bubbles and form into a slightly rounded rectangle of dough about 5x10 inches and about 1/2 inch thick. Dust dough lightly with flour if needed. Cut dough into 8 equal pieces. Form each piece into a round shape, gently tucking ends underneath as before.
  • Use your hands to gently pat and stretch the dough rounds into flat disc shapes about 1/2 inch thick. Arrange buns about 1/2 inch apart on prepared baking sheet. Dust buns very lightly with flour. Drape a piece of plastic wrap over the baking sheet (do not seal tightly). Let buns rise until doubled, about 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat 1 egg with milk in a small bowl, using a fork, until mixture is thoroughly combined. Very gently and lightly brush tops of buns with egg wash without deflating the risen dough. Sprinkle each bun with sesame seeds.
  • Bake in the preheated oven until lightly browned on top, 15 to 17 minutes. Buns will stick together slightly where they touch. Let cool completely, tear the buns apart, and slice in half crosswise to serve.

4 cups powdered sugar
2 teaspoons vanilla
4 -8 tablespoons hot water

Steps:

  • To prepare dough: In a cup, combine yeast, warm water and 1 tsp sugar, stir and set aside.
  • In a large bowl, mix milk, remaining 2/3 cup sugar, melted butter, salt and eggs; stir well and add yeast mixture.
  • Add half the flour and beat until smooth.
  • Stir in enough of the remaining flour until dough is slightly stiff (dough will be sticky).
  • Turn out onto a well-floured board; knead 5-10 minutes.

  • Place cinnamon roll slices close together in pans.
  • Let rise in warm place until dough is doubled in bulk,about 45 minutes.
  • Preheat oven to 350 degrees.
  • Bake 25 to 30 minutes, or until rolls are nicely browned.
  • Cool rolls slightly.
  • To prepare glaze: Meanwhile, in medium bowl, mix melted butter, powdered sugar and vanilla; add hot water 1 Tbsp at a time until glaze reaches desired spreading consistency.
  • Spread over slightly cooled rolls.
  • These will taste most like the originals if you use Makara Cinnamon (available at the Cinnabon Stands) instead of conventional powdered cinnamon from the supermarket.

From THE 150 BEST AMERICAN RECIPES. When I made these, I left out half the butter and sugar in the filling, and all of the butter in the topping and they were still absolutely amazing. I used skim milk because that's all I had, and light butter in the filling. They were well worth making!! Add 1 1/2 cups chopped walnuts and 1 1/2 cups raisins in the filling stage if desired.

1 teaspoon sugar
2/3 cup sugar
1 cup milk, heated to lukewarm
10 1/2 tablespoons butter, softened
2 large eggs, lightly beaten
2 teaspoons salt
7 -8 cups all-purpose flour (or more)
16 tablespoons butter, melted and cooled
1 3/4 cups sugar
3 tablespoons ground cinnamon
10 1/2 tablespoons butter, melted and cooled
4 cups confectioners' sugar
2 teaspoons vanilla extract
1/4-1/2 cup hot water

Steps:

  • To make the dough, combine water, yeast, and 1 tsp sugar in a cup and set aside. In a large bowl, combine the milk, remaining 2/3 cup sugar, butter, eggs, and salt. Stir well and add the yeast mixture. Add 3 1/2 cups flour and beat until smooth. Stir in enough of the remaining flour until the dough is slightly stiff -- it will be sticky.
  • Turn out the dough onto a well-floured surface and knead for 5-10 minutes, adding just enough flour to keep the dough from sticking. Place in a well-buttered bowl, cover, and let rise in a warm place free from drafts until doubled in volume, 1- 1/4 hours. Punch down and let rest for 5 minute Roll out on a lightly floured surface into a 15x20-inch rectangle.
  • To make the filling, spread half of the melted butter on the dough. In a small bowl, combine 1 1/2 cups of the sugar and cinnamon. Sprinkle over the dough, then sprinkle with walnuts and raisins if using. Roll up like a jelly roll and pinch the edges together to seal. Cut the roll into 12 or 18 slices.
  • If making 12 buns, use the remaining butter to coat the bottoms of a 9x13-inch baking pan and an 8-inch baking pan. If making 18 buns, use 2 9x13-inch pans. Sprinkle the pans with the remaining 1/4 cup sugar. Place the cinnamon bun slices close together in the pans. Cover and let rise until doubled, about 45 minutes.
  • Bake at 350 degrees for 25-30 minutes, or until the buns are nicely browned. Let cool slightly before glazing.
  • To make the glaze, combine the melted butter, sugar, and vanilla. Add the water 1 T at a time until you have a spreadable glaze. Spread over buns and serve.
