Steps:
- For the Cupcakes: Preheat the oven to 350 degrees F.
- In a small mixing bowl add the baking soda, salt, baking powder and flour. Mix thoroughly with a fork and set aside. In a large mixing bowl add the eggs, honey, both sugars and butter. Mix until smooth using a hand mixer. Add the cinnamon and baby food. Mix until smooth. Using a rubber spatula fold in the pecans. Slowly add the flour mixture using a sifter and fold in until ingredients are evenly mixed.
- Place 24 mini baking cups (2-inch, nonfoil) into each hole of the mini muffin pan. Place a 1-gallon resealable freezer bag into a bowl (for support) and pour the cupcake batter into the bag. Seal the bag and cut the tip off 1 of the bottom corners of the bag. Squeeze the batter into each baking cup, filling them only 3/4 of the way full. Place the mini muffin pan in the oven on the center rack. Bake for 12 minutes.
- For the Frosting: In a small mixing bowl add the extracts, milk, cream cheese, butter and powdered sugar. Mix until smooth and creamy using a hand mixer. When the cupcakes are done baking remove each cupcake from the pan and place on a cooling rack. Place the cooling rack in the refrigerator for 5 to 7 minutes.
- Once the cupcakes are cooled remove them from the refrigerator. Frost each cupcake by putting a generous dollop of frosting on the top with a spoon. Garnish top with ground pecans and they are ready to serve.
BURNT BUTTER POUND CAKE
This pound cake is delicious. It is made with burnt butter. Can I get an AMEN to how amazing burnt butter is? This pound cake also contains no grains (just almond flour), and just a little bit of honey.

- Preheat the oven to 325 degrees F
- Lightly butter and flour (with almond flour) a loaf pan
- Heat butter in a saucepan on medium heat until the butter starts to boil and turn brown. The key with burnt butter is to continually stir it with a whisk. You don't want to actually scald and burn your butter so much it's ruined. There's a time where it keeps bubbling (and you keep stirring). You will think it will never get to the burnt stage. But very quickly the bubbles go away and the color changes darker. That's the moment it's burnt but not scalded. Take off of the heat then, no more heat for that butter!
- Immediately transfer the butter to a glass pie pan or a shallow glass dish and put in the freezer for 15 minutes until it starts to harden around the edges
- In a medium bowl mix together almond flour, baking powder and salt
- In a large mixing bowl, beat brown butter with honey and stevia and at the end add the arrowroot powder. The mixture should start to thicken
- Add one egg at a time and mix together
- Once mixed, add the vanilla extract
- Slowly mix in the dry flour ingredients to complete the batter
- Transfer batter to the loaf pan and tap on the counter to allow it to settle in and get any air bubbles out. Bake for 1 hour- 1 hour and 15 minutes or until the toothpick comes out clean
- Cool in pan for 30 minutes and then transfer out of the pan onto a metal rack and cool completely, the cooling process in the pan is very important
- Serve sliced or use in my mixed berry trifle recipe
BURNT CHEESECAKE WITH BLACKBERRIES

- Preheat the oven to 400 degrees F. Grease a 9-inch springform pan with some butter and line with parchment paper.
- For the cheesecake: In a large bowl, combine the cream cheese, cream, sugar, flour, eggs, vanilla and salt. Beat with an electric hand mixer until combined. Pour into the prepared pan and bake until set and well browned, 50 to 55 minutes.
- For the macerated blackberries: While the cheesecake bakes, toss together the blackberries, sugar and lemon zest and juice. Cover and place in the fridge until you are ready to serve.
- Remove the cheesecake from the oven and allow it cool, about 45 minutes.
- Release the cheesecake from the pan and slice. Grab the blackberries and give them a final toss. Slice and serve the cheesecake topped with the macerated blackberries.
BURNT SUGAR CAKE I
Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease three 9 inch round cake pans.
- In a small saucepan bring 1 cup of the water to a boil, slowly add 1/2 cup of the sugar and cook to a thick syrup.
- Sift together the flour with the baking powder and salt.
- In a large bowl, cream the butter or margarine with 1 1/2 cups of the sugar. Add the eggs one at a time, beating well after each addition.
- In another bowl, combine milk and sugar/water mixture. Add the vanilla and mix well.
- Add the sifted dry ingredients alternately with the milk mixture to the creamed butter or margarine mixture. Stir until just combined. Pour batter equally into three greased 9 inch round cake pans.
- Bake for about 30 minutes at 375 degrees F (190 degrees C). When cool, glaze with burnt sugar syrup.
- To Make Glaze: In a small saucepan bring 1 cup water to a boil, slowly add 1/2 cup of the sugar and cook to a thick syrup. Pour over top of cooled cake layers.

BURNT SUGAR CAKE II
Steps:
- Prepare burnt sugar by placing 1/2 white sugar into a heavy skillet over medium high heat, stirring constantly with a wooden spoon as sugar melts. When it becomes very dark brown, remove from heat, add hot water very slowly and stir until dissolved. Set aside to cool.
- Preheat oven to 350 degrees F (175 degrees F). Line two 9 inch round baking pans with parchment paper.
- Sift the flour, baking powder and salt together three times.
- Cream the butter or margarine with the remaining 1 1/4 cups white sugar until light and fluffy. Add the eggs 1 at a time, beating thoroughly after each. Stir in the vanilla and the burnt sugar syrup mixture.
- Add the dry ingredients and milk alternately to the creamed mixture. Beat until smooth. Pour batter into the prepared pans.
- Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes.

This is another old recipe I had from Family Circle Magazine, February 1982. This is a delicious cake with a wonderful burnt sugar flavor. The color of the cake is a beautiful deep golden color. The frosting recipe follows the cake recipe.

- Burnt Sugar Syrup:.
- Heat 1 cup sugar in a large skillet over low heat.
- until melted and amber colored;.
- remove from heat.
- Carefully stir in 1 cup boiling water until sugar is disolved; cool.

- Measure 1/2 for cake.
- Reserve 3 tablespoons or more for frosting.

- Peel off paper.

- Fill and frost with Burnt Sugar Frosting.
- Garnish with pecan halves and chopped pecans.

- Mix cream cheese and butter together until well blended.
- Gradually add confectioners sugar, burnt sugar syrup and vanilla.
- Frost layers, top and sides with frostin.
- Garnish top with pecan halves around the rim of cake.
- Press chopped pecans arounds sides of cake.

- this recipe sounds a little confusing.but read it all the way through before attempting --
- in heavy pot, burn 1/2 cup sugar till dark -- put 1/2 cup boiling water in burnt sugar and let boil to a syrup -- this will take about 7 minutes -- cool, but keep warm --
- cream sugar and butter, add eggs and beat till creamy --
- then add water, salt, vanilla and burnt syrup leaving 2 tbls in the skillet for filling --
- add flour and baking powder, beat 2 minutes.
- bake in 2 greased and floured cake pans in a 350* oven for 25-30 minutes.
- to prepare FILLING:.
- put 2 cups sugar in skillet with burnt syrup.add butter the size of an small egg -- milk ( or light cream) and 2 tbls white corn syrup.

- spread on cake.if icing gets too thick to spread -- add a little cream or milk --

- Put the butter and honey in a small saucepan and cook over a medium-high heat for 2-3 mins until the butter foams and the mixture turns a mahogany colour.
- Whisk the egg, sugar and the honey and butter mixture together in a large bowl. Stir in the flour, almonds, baking powder and a pinch of sea salt to make a batter. Can be used straightaway or kept in the fridge overnight.
- Heat the oven to 200C/180C fan/gas 6 and butter four holes of a muffin tin. Divide the mixture between the holes and bake for 12-14 mins until golden and cooked through. Turn out onto a cooling rack and leave to cool for a few minutes. Dust with icing sugar, if you like, and serve with hot chocolate espresso sauce (see 'goes well with', below).

- In a small heavy skillet, heat sugar until golden brown. Gradually add water; cook and stir until sugar is dissolved. Set aside. Let egg whites stand at room temperature for 30 minutes. , Position oven rack to lowest position. Preheat oven to 325°., In a large bowl, combine flour, sugar, baking powder and salt. In another bowl, whisk egg yolks, oil, water, vanilla and 6 tablespoons reserved syrup. Add to dry ingredients; beat until well blended. Cool to room temperature., In a large bowl, beat remaining butter until fluffy, about 5 minutes. Gradually beat in confectioners' sugar mixture. Spread frosting over top and sides of cake.
