BUSH'S® MARINATED BLACKEYE PEAS
This colorful concoction is perfect served as a relish with meats. Or, garnish with lettuce and a spoonful of mayonnaise and serve as a salad.

Steps:
- Drain BUSH'S® Best Blackeye Peas. Add chopped celery and onion. Combine oil, vinegar, mayonnaise, salt and cayenne. Mix well. Pour over peas. Stir gently. Allow to chill in refrigerator several hours or overnight.
- At serving time, add the diced tomato. Mix carefully. Serve as a relish with meats, or garnish with lettuce and a spoonful of mayonnaise and serve as a salad.

BLACK-EYED PEA SUPPER DISH
This is one of our favorite cool weather dishes - it's so good with cornbread! The recipe came from Bush's. It's one I never really tinker with, and that's unusual for me. The ingredients are just right in the original.

Steps:
- Brown sausage in large skillet, crumbling with fork as it browns. Drain any accumulated fat.
- Add green pepper & onion to skillet with sausage and cook for 5 minutes.
- Add tomatoes & seasonings, stir well.
- Pour in blackeyed peas with the liquid in the can. Cover & simmer for 15 minutes.
- Serve hot with grated cheese on top.
ATHEN'S MARINATED BLACK-EYED PEAS
I got this recipe from "The Genuine Official Texas Cookbook". It's a great salad especially for get togethers.

Steps:
- Drain the peas and rinse.
- Combine onion, bell pepper and peas.
- Mix remaining ingredients together and pour over pea mixture.
- Cover and refrigerate for a time to blend.
- I have never timed how long it takes, so I'm guessing on the time.
- Note: I did not use the clove; I used 1 teaspoon from a jar of minced cloves.
- I also have added 1/4 cup sliced black olives.

- In a large saucepan, cover the black-eyed peas with 2 inches of water. Bring to a boil, cover partially and cook over moderately low heat until tender, about 20 minutes. Drain and let cool slightly.
- In a large bowl, whisk the olive oil with the lemon juice and garlic. Add the peas and onion and season with salt and pepper, then toss to coat. Refrigerate for at least 4 hours to let the flavors blend. Bring the salad to room temperature, stir in the parsley and serve.
