A Mike Kingston recipe direct from Lake Eden, Minnesota. On a side note if you can't find horseradish sauce where you live, mix 1 Tablespoon of horseradish with 3 Tablespoons of mayonnaise, and it should work just fine.

Number Of Ingredients 2

8 ounces braunschweiger sausage (8 ounce package of liver sausage, I use Farmer John's)
1/4 cup horseradish sauce (4 tablespoons, I use Heinz)

Steps:

  • Cup the braunschweiger into chunks and place it in the bottom of a microwave-safe bowl. Heat it on HIGH for 45 seconds. Stir it around a bit, and if it's still cold, heat it on HIGH for another 10 to 15 seconds, or until it's soft enough to be mashed with a fork.
  • Mash up the braunschweiger and add the horseradish sauce. Mix until it's blended.
  • Transfer the warm pate to a bowl, cover it with plastic wrap, and refrigerate it for at least 3 hours before serving.
  • A half hour before you're ready to serve, take the pate out of the refrigerator and let it warm to spreading consistency.
  • Serve with a basket of assorted fancy crackers.

1 (8 ounce) package cream cheese, softened
1 tablespoon minced onion
2 teaspoons lemon juice
1 teaspoon Worcestershire sauce
salt and pepper to taste

Steps:

  • In a medium bowl, mix braunschweiger liver sausage, cream cheese, onion, lemon juice, Worcestershire sauce, salt and pepper. Form into a ball shape. Wrap with plastic wrap. Chill in the refrigerator at least 1 hour before serving.

QUICK AND EASY MUSHROOM FETTUCINE



Quick and Easy Mushroom Fettucine image

A super easy pasta dinner that can be enjoyed in under 30 minutes!

Number Of Ingredients 12

14 oz. mixed mushrooms (I used Cremini mushrooms)
3 TBSP. extra virgin olive oil
2 green onions, chopped
2 garlic cloves, minced
-- sea salt and freshly ground pepper
-- red pepper flakes
-- fresh thyme (optional)
2 cups, fresh baby spinach, chopped
zest of one lemon
½ cup Parmesan cheese, cut into small chunks
¾ lb. fettuccine pasta (or your favorite pasta)
2-3 TBSP. butter (optional)

Steps:

  • Brush off any dirt from the mushrooms with a pastry brush or a kitchen towel. Cut the ends and slice them thinly. 2. Place a large, heavy-bottomed skillet over high heat. Add the mushrooms and cook for a few minutes, until they release their liquid. (Do not use any fat to sauté the mushrooms at this point - this method of cooking them is called "dry sautéing" and helps release moisture already in the mushrooms so they can cook faster.) 3. Meanwhile, bring a large pot of water to a boil. Salt it generously and add the fettuccine. Cook the pasta until al dente. 4. To the skillet with the mushrooms, add the olive oil and green onions and sauté for a couple of minutes. Next, add the minced garlic and season everything well with salt, pepper and red pepper flakes. Add the thyme and continue to cook tossing every now and then. At the end of the sautéing process, fold in the chopped spinach and cook very briefly until it wilts. Turn off the heat and sprinkle the lemon zest over the mixture.
  • When the pasta is ready, reserve some of the cooking water and put it aside.
  • Drain the pasta and add it to the skillet with the mushrooms. Next, add the Parmesan cheese, the parsley and the butter. Toss gently, until the pasta is evenly coated with the mixture. Taste and adjust the seasoning.
  • Serve straight from the skillet, with an extra sprinkle of Parmesan cheese.

1 cup water
1 cup grated mozzarella cheese
15 ounces spaghetti sauce
1 1/2 cups uncooked macaroni

Steps:

  • Crumble beef into 2 qt or larger microwave-safe casserole dish.
  • Cook on full power for 4 - 5 minutes or until no longer pink.
  • Drain grease.
  • Mix in spaghetti sauce, water, and macaroni (uncooked).
  • Cover and cook on full power for 6 - 7 minutes.
  • Stir and cook on full power for another 6 - 7 minutes (BE CAREFUL! IT'S HOT!).
  • Sprinkle cheese on top and let stand for 5 minutes before serving.
