Skip the stop at the pancake house and make these easy pancakes at your own house instead. With a bit of orange in the batter and raspberry sauce on top, they're a treat for the eyes and the stomach!

1/2 cup orange juice
1 tablespoon cornstarch
1 package (10 oz) frozen raspberries in syrup, thawed
1 cup Gold Medal™ all-purpose flour
2 tablespoons powdered sugar
1/4 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons grated orange peel
3/4 cup milk
2 tablespoons butter, melted
1 egg
2 tablespoons orange juice
Frozen whipped topping, thawed
Fresh raspberries

Steps:

  • In 1-quart saucepan, stir 1/2 cup orange juice and the cornstarch until smooth. Heat to boiling over medium heat; boil 1 minute. Meanwhile, pour raspberries and syrup in strainer over medium bowl to drain. Stir syrup into juice mixture; cool slightly. Stir in raspberries; set aside.
  • In medium bowl, mix flour, powdered sugar, baking soda, salt and orange peel. Beat in milk, butter, egg and 2 tablespoons orange juice with spoon or wire whisk just until blended.
  • Heat griddle or skillet over medium heat or to 375°F. Grease griddle with butter or vegetable oil if necessary (or spray with cooking spray before heating). For each pancake, pour about 1/4 cup batter onto hot griddle. Cook pancakes until bubbles form on top and edges are dry. Turn and cook other sides until golden brown. Serve with raspberry topping. Garnish with whipped topping and fresh berries.

1 cup self-rising flour
2 tablespoons sugar
1 egg
1/2 cup 2% milk
2 tablespoons orange juice
1 tablespoon canola oil
1/2 teaspoon vanilla extract
ORANGE SYRUP:
1 tablespoon sugar
1-1/2 teaspoons cornstarch
1/2 cup orange juice

Steps:

  • In a bowl, combine the flour and sugar. Whisk the egg, milk, orange juice, oil and vanilla until blended; stir into dry ingredients just until moistened. , Pour batter by 1/3 cupfuls onto a hot griddle coated with cooking spray. Turn when bubbles form on top; cook until second side is golden brown., Meanwhile, for syrup, combine the sugar, cornstarch and orange juice in a saucepan until smooth. Bring to a boil over medium heat; cook and stir for 1-2 minutes or until thickened. Serve warm with pancakes.

3 cups all-purpose flour
3 tablespoons white sugar
3 teaspoons baking powder
1 ½ teaspoons baking soda
¾ teaspoon salt
3 cups buttermilk
½ cup milk
3 eggs
⅓ cup butter, melted

Steps:

  • In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
  • Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
  • Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.

Almond extract in the batter and crunchy chopped salted almonds sprinkled on top give these pancakes a delightful almond flavor. Maple syrup infused with cooked, mashed raspberries makes the perfect topping.

1/2 cup raspberries
1/4 cup pure maple syrup
1 3/4 cups all-purpose flour (See Cook's Note)
3 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon fine salt
1 1/4 cups milk, at room temperature
2 large eggs, at room temperature
1/2 teaspoon pure vanilla extract
1/4 teaspoon pure almond extract
3 tablespoons unsalted butter, melted, plus more for the skillet
Chopped salted almonds, for topping

Steps:

  • Preheat the oven to 200 degrees F. Bring the raspberries and maple syrup to a boil in a small saucepan over medium heat. Reduce the heat to a simmer and cook until the berries soften and the syrup takes on a pinkish color, 7 to 8 minutes. Remove from the heat and mash the berries with a potato masher or fork. Strain the syrup. Keep warm or set aside to cool to room temperature.
  • Whisk the flour, sugar, baking powder and salt together in a large bowl. Whisk the milk, eggs, vanilla and almond extracts together in a medium bowl until combined. Whisk in the melted butter. Add the milk mixture to the flour mixture and stir until it just comes together in a thick lumpy batter.
  • Heat a large nonstick skillet over medium heat and brush lightly with butter. Drop 2 tablespoons batter for each pancake into the skillet. Cook until bubbles appear on the tops of the pancakes, and the undersides are golden brown, 2 to 3 minutes. Flip the pancakes and continue to cook until golden on the underside and cooked through in the center, about 1 minute more.
  • Transfer to the oven to keep warm and continue to make pancakes until all the batter is used. Serve topped with the raspberry syrup and chopped almonds.

2 tablespoons finely grated orange zest
3/4 cup buttermilk
3 large eggs
2 cups all-purpose flour

1/4 cup granulated sugar
5 tablespoons melted butter
1 tablespoon vegetable oil or shortening (for the skillet or griddle, or as needed)

Steps:

  • Gather the ingredients. If you plan to keep batches warm until all of the pancakes are made, heat the oven to 200 F.
  • In a large bowl, whisk the orange juice with the orange zest, buttermilk, and eggs until smooth.

I love buttermilk pancakes with fresh fruit and delicious syrups. Truly, it doesn't get any better than this. These wonderful, light, tender pancakes are studded with tart blackberries and smothered in my delicious orange fig syrup.

1 1/4 cups white flour
1 1/2 tablespoons white sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons baking powder
1 jumbo egg, slightly beaten
1/2 teaspoon vanilla extract, pure
2 tablespoons vegetable oil
1 3/4 cups buttermilk
1 cup blackberry, fresh (you may substitute fresh raspberries)
1 cup orange juice, fresh squeezed
1/4 cup orange fig jam (Dalmatia, may use orange or marmalade)
2 tablespoons liquid honey
1 tablespoon dark brown sugar
2 teaspoons salted butter
2 1/2 teaspoons cornstarch

Steps:

  • Sift the dry ingredients into a medium bowl.
  • Mix the egg, vanilla, oil, and buttermilk together, then add to the dry ingredients.
  • Gently stir until the dry ingredients have been incorporated.
  • Next gently, add the blackberries or raspberries, whichever you are using into the batter.
  • Preheat the lightly, greased skillet, on medium heat.
  • Test the pan by adding a few drops of water, when the drops dance the skillet is ready.
  • To make the pancakes pour a 1/4 cup of the batter onto the hot, lightly, greased griddle.
  • Cook the batter until bubbles form and the batter looks cooked.
  • Then turn over with a spatula and cook until the undersides are a beautiful golden brown. (3 - 4 minutes)
  • Make sure to keep the pancakes warm in a low oven, until you are ready to serve.
  • For the simple orange fig syrup, place all of the ingredients in a small pot.
  • Cook on low heat until the mixture has thickened and is bubbling, about 3 - 5 minutes.
  • Pour the delicious syrup over your pancakes and prepare for a taste experience.
