ANGEL YEAST BISCUITS

These versatile yeast biscuits are so light, they almost melt in your mouth. They can be served with a sweet topping like jelly or a savory scoop of sausage gravy.

Yield 1 dozen.

Number Of Ingredients 9

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1 tablespoon sugar
3/4 cup warm buttermilk (110° to 115°)
3 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup cold butter

Steps:

  • In a large bowl, dissolve yeast in warm water. Add sugar; let stand for 5 minutes. Stir in buttermilk; set aside. In a bowl, combine the flour, baking powder, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. Stir in yeast mixture; mix well., Turn onto a floured surface; gently knead for 1 minute. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 30 minutes., Punch dough down. Turn onto a lightly floured surface; roll to 3/4-in. thickness. Cut with a floured 2-1/2-in. round biscuit cutter. Place 2 in. apart on a greased baking sheet. Prick tops with a fork. Cover and let rise until doubled, about 45 minutes., Bake at 375° for 15-18 minutes or until golden brown. Remove from pan to cool on a wire rack. Serve warm.

Light and airy, these are the best biscuits I've ever eaten. I am posting because I never want to lose it. Prep times includes rise time.

2 tablespoons granulated sugar
1/4 cup warm water
1 1/3 tablespoons active dry yeast
4 cups flour, sift, then measure
2 teaspoons baking powder
2 teaspoons salt
1/4 cup shortening
1 1/3 cups buttermilk
1/4 cup butter, melted

Steps:

  • In small warm bowl, mix sugar with the water, add yeast and stir to dissolve.
  • Sift flour again with baking powder and salt in a large bowl. Cut in shortening to fine crumb stage with pastry blender.
  • Add butter milk and yeast mixture, mix to a moderately stiff dough. Knead lightly for a few seconds.
  • Roll to 1/2-inch thickness cut into biscuits using 2 1/4-inch biscuit cutter.
  • Arrange on greased baking pans so biscuits barely touch each other, prick tops with fork and brush with melted butter.
  • Let rise in warm place until almost double in size, about 30-40 minutes.
  • Bake in 425° oven 10-15 minutes.

This deceptively simple recipe can come out a million different ways with some very minor variations on the ingredients and amounts. This one's my favorite - flaky, but not dry; chewy, but not tough; crisp in just the right spots.

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
¼ teaspoon baking soda
7 tablespoons unsalted butter, chilled in freezer and cut into thin slices
¾ cup cold buttermilk
2 tablespoons buttermilk for brushing

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Line a baking sheet with a silicone baking mat or parchment paper.
  • Whisk flour, baking powder, salt, and baking soda together in a large bowl.
  • Cut butter into flour mixture with a pastry blender until the mixture resembles coarse crumbs, about 5 minutes.
  • Make a well in the center of butter and flour mixture. Pour in 3/4 cup buttermilk; stir until just combined.
  • Turn dough onto a floured work surface, pat together into a rectangle.
  • Fold the rectangle in thirds. Turn dough a half turn, gather any crumbs, and flatten back into a rectangle. Repeat twice more, folding and pressing dough a total of three times.
  • Roll dough on a floured surface to about 1/2 inch thick.
  • Cut out 12 biscuits using a 2 1/2-inch round biscuit cutter.
  • Transfer biscuits to the prepared baking sheet. Press an indent into the top of each biscuit with your thumb.
  • Brush the tops of biscuits with 2 tablespoons buttermilk.
  • Bake in the preheated oven until browned, about 15 minutes.

1/4 cup water
2 1/2 cups flour
1 teaspoon baking powder

A high-rising yeast biscuit that still tastes like a baking powder one. If I want biscuits for breakfast, I make up the batter the night before and let it rest in the bowl, covered, on the counter overnight. In the morning, I just flop it out on a floured surface, fold it a few times, pat it out, cut and bake.

2 1/4 teaspoons instant yeast
1/4 cup water
2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda

1/2 cup shortening
1 cup buttermilk (or milk with 1 Tbs. vinegar added)

Steps:

  • Dissolve yeast in water, set aside.
  • Mix dry ingredients in order given, then cut in shortening until it's the size of small beans.
  • Stir in the buttermilk and yeast mixture. Dough will be very sticky.
  • Cover bowl with towel and let sit until ready to use. (At least 1 hour, but it is fine if it sits for a couple hours.)

  • Roll out about 1/2" thickness and cut with sharp biscuit cutter. (Cutting with a dull cutter or water glass "seals" the dough and won't let the biscuit rise as they should.)

  • Bake at 400º F until light brown, 10-12 minutes.
