2 (8-ounce) boneless, skinless chicken breasts
1 cup buttermilk
1 cup toasted pecans
1/2 cup panko bread crumbs
1/3 cup vegetable oil
Kosher salt and freshly ground black pepper

Steps:

  • Place each chicken breast between 2 pieces of plastic wrap and gently flatten with a meat mallet or heavy flat object to an even 1/3-inch thick.
  • In a shallow bowl add the chicken and the buttermilk. Cover and marinate for 1 hour in the refrigerator.
  • In a food processor, pulse pecans until finely ground. Transfer the pecans to a large rimmed dish and add the panko bread crumbs. Mix to combine well.
  • Remove marinated chicken breasts from buttermilk and shake off excess. Dip chicken in breading mixture, evenly coating both sides.
  • In a large nonstick skillet, heat oil. Add breaded breasts and shallow fry about 4 to 5 minutes on each side until golden in color. Remove from oil to and drain on paper towels. Immediately season with salt and pepper and place on a serving platter of individual dishes.
  • Serve it with a yummy salad for a super tasty meal. Enjoy!

2 pounds chicken tenderloins
1 cup buttermilk
1 1/2 teaspoons salt
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1/4 teaspoon paprika
BREADING:
1 1/2 cups all purpose flour
1 heaping teaspoon salt
3/4 teaspoon black pepper
3/4 teaspoon garlic powder
3/4 teaspoon paprika
1 1/2 teaspoons baking powder
3 tablespoons buttermilk
3 cups oil

Steps:

  • In a medium bowl, mix buttermilk, salt, cayenne pepper, garlic powder, and paprika to make the marinade. Place chicken in a large bowl or a large Ziploc bag. Pour marinade over chicken and seal tightly. Keep in the refrigerator for 2 to 4 hours. In a shallow dish used for dredging, mix the flour, salt, pepper, paprika, garlic powder, and baking powder. Parmesan cheese and bread crumbs also make good additions if you like. Then add buttermilk and combine until mixture is evenly clumpy. Remove chicken from refrigerator and shake off buttermilk mixture. Dredge chicken in flour mixture and prepare to fry. Heat oil in a large, deep and heavy skillet. When oil is hot and shimmering, carefully place coated chicken in hot oil and fry until golden brown and juices run clear. Drain on paper towels

1 tablespoon paprika
2 teaspoons salt
1/8 teaspoon pepper
1 cup all-purpose flour

6 boneless skinless chicken breast halves (4 ounces each)
2 tablespoons butter, melted
18 pecan halves

Steps:

  • In a shallow bowl, combine the pecans, sesame seeds if desired, paprika, salt and pepper. Place flour and buttermilk in separate bowls. Coat chicken with flour, dip in buttermilk, then coat with pecan mixture., Place in a greased 13x9-in. baking dish. Drizzle with butter. Top each with three pecan halves. Bake, uncovered, at 375° for 30-35 minutes or until a thermometer reads 170°.

2 pounds chicken tenderloins
1/2 cup buttermilk
2 dashes hot sauce
1 1/4 cups all-purpose flour
1/2 cup finely chopped pecans
2 teaspoons seasoning salt
Vegetable oil, for frying
3/4 cup honey
3 tablespoons salted butter
1 tablespoon chopped fresh parsley

Steps:

  • Place the chicken in a large bowl. Add the buttermilk and hot sauce, then toss to combine. Allow to marinate 15 to 30 minutes.
  • In a separate bowl, combine the flour, pecans and seasoning salt. Mix well and set aside.
  • Heat about 1 inch of vegetable oil in a large skillet over a medium heat until it reaches 375 degrees F.
  • Place a small pan over a low heat and add the honey and butter. Allow the honey to warm and the butter to melt.
  • Meanwhile, remove the chicken from the buttermilk a few pieces at a time, then add to the flour/pecan mixture, turning to coat thoroughly. Place on a plate. Continue with the remaining chicken until it is all coated.
  • Cook the chicken in the skillet in batches, flipping halfway through, until they are golden and crisp, about 4 minutes. Remove to a paper towel-lined plate.
  • Add the chicken to a platter and drizzle over half of the honey butter. Garnish with the parsley. Serve with the remaining honey butter on the side for dipping.

1 ½ cups all-purpose flour
1 tablespoon salt

2 teaspoons mustard powder
1 teaspoon ground paprika
1 teaspoon ground black pepper
2 cups peanut oil, or as needed
salt and ground black pepper to taste

Steps:

  • Soak chicken tenders in buttermilk for 20 to 30 minutes in the refrigerator.
  • While chicken is soaking, combine flour, salt, garlic salt, mustard powder, paprika, and pepper in a large brown bag.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Drain chicken and shake lightly to remove excess buttermilk. Chicken should still be damp. Drop chicken into the bag of seasoned flour and shake until well coated.
  • Drop chicken into hot oil, about 6 pieces at a time, depending on the size of your pot. Cook until golden brown, crispy, and no longer pink in the centers, 6 to 8 minutes. Remove from oil and drain on paper towels. Sprinkle with salt and pepper while still warm.

3 cups all-purpose flour
1 tablespoon Italian seasoning
1 teaspoon salt
½ teaspoon freshly ground black pepper
½ teaspoon cayenne pepper, or more to taste
2 cups buttermilk, or more as needed
2 cups vegetable oil for frying, or as needed

Steps:

  • Preheat the oven to 200 degrees F (95 degrees C).
  • Slice each chicken breast into thick strips.
  • Whisk flour, Italian seasoning, salt, pepper, and cayenne together and pour into a gallon-sized resealable plastic bag. Pour buttermilk into a shallow dish.
  • Fill a heavy-bottomed pan at least 4 inches deep with oil and heat it to 350 degrees (175 degrees C).
  • Place several chicken strips in the plastic bag. Seal the bag and shake a couple of times until strips are coated. Repeat to coat remaining strips. Dip each strip into buttermilk, then back into the flour mixture.

2 tablespoons coarsely chopped pecans

Steps:

  • Melt butter in baking dish; set aside.

1 lb boneless skinless chicken breast, cut into 2 inch chunks
4 eggs
1 -2 teaspoon cayenne pepper, divided

1 teaspoon salt, divided
1/2 cup cracker, crushed
1/2 cup all-purpose flour
1/4 cup peanut oil

Steps:

  • Soak chicken in buttermilk several hours or over night.
  • Drain off buttermilk into a dipping container and whisk in eggs.
  • Coat chicken with half of each of the seasonings: salt, pepper, garlic, and cayenne.
  • In another dipping container mix crackers and flour along with remaining seasonings.
  • Next, dip the breast into dry then wet, then back into dry again.
  • Shallow fry in batches of peanut oil heated to 350 in a cast iron skillet until golden brown, about 8-10 min per side.
